6 pounds boneless skinless chicken breast, cut into 1 1/2 inch cubes
2 cups flour
1 1/2 teaspoons salt
1 1/2 teaspoons black pepper
12 tablespoons unsalted butter
3 tablespoons cider vinegar
12 tablespoons Frank's hot sauce
1 1/2 teaspoons tabasco sauce
6 cups vegetable oil

Steps:

  • In a medium bowl, combine flour, salt, and pepper. Lightly dredge chicken in flour, shaking off any excess. Place chicken pieces on skewers. Place skewers on a plate or baking sheet and set aside. In a small saucepan, melt butter over medium high heat. Add cider vinegar, Frank's, and Tabasco sauce, stirring until well combined. Take off heat and set aside. Put oil in a large stock pot. Oil should come at least three inches up the side of the pot. Heat oil over high heat to 380°F. Place three skewers into pot and fry until just cooked through, about 4 minutes. Transfer to a paper-towel lined baking sheet to get rid of any excess oil. Continue frying remaining skewers in batches. Transfer skewers to a large bowl or casserole dish. Stir sauce until it's well combined then pour over skewers and rotate until well coated. Serve immediately.

This is similar to the hot wings recipe served at a popular restaurant chain. If you have ever had them, you have to love them.

½ cup all-purpose flour
¼ teaspoon paprika
¼ teaspoon cayenne pepper
¼ teaspoon salt
10 chicken wings
oil for deep frying
¼ cup butter
¼ cup hot sauce
1 dash ground black pepper
1 dash garlic powder

Steps:

  • In a small bowl mix together the flour, paprika, cayenne pepper and salt. Place chicken wings in a large nonporous glass dish or bowl and sprinkle flour mixture over them until they are evenly coated. Cover dish or bowl and refrigerate for 60 to 90 minutes.
  • Heat oil in a deep fryer to 375 degrees F (190 degrees C). The oil should be just enough to cover wings entirely, an inch or so deep. Combine the butter, hot sauce, pepper and garlic powder in a small saucepan over low heat. Stir together and heat until butter is melted and mixture is well blended. Remove from heat and reserve for serving.
  • Fry coated wings in hot oil for 10 to 15 minutes, or until parts of wings begin to turn brown. Remove from heat, place wings in serving bowl, add hot sauce mixture and stir together. Serve.

12 wooden skewers
Vegetable oil cooking spray
1 tablespoon cornstarch
1/3 cup hot sauce, divided
1 pound chicken tenders, cut into strips
1/2 cup crumbled blue cheese
1/2 cup fat-free blue cheese dressing
4 carrots, cut into sticks
4 celery stalks, cut into sticks

Steps:

  • Soak skewers in water 15 minutes. Heat broiler; coat a broiler pan with cooking spray. In a bowl, stir cornstarch into 1 tablespoon hot sauce until smooth; stir in remaining hot sauce. Add chicken; toss to coat. Thread chicken lengthwise on skewers; reserve remaining hot sauce mixture. Place chicken in pan so skewers hang off edge; cover exposed sticks with aluminum foil. Broil 4 minutes. Turn chicken; brush with remaining sauce. Broil until chicken is cooked through, 4 to 5 minutes. In another bowl, combine blue cheese and dressing. Serve chicken with vegetable sticks and blue cheese dipping sauce.

Adapted from a recipe found on the internet and made in my vintage sunbeam fryer/cooker. This is awesome! For the chicken pieces, make sure that they are not too big: whole drumstick, whole thigh, but the breast part should be chopped into two. Its also helpful to use the fryer cover-it helps the meat cook through properly.

1/2 teaspoon thyme
1/2 teaspoon salt
1/2 teaspoon oregano
1/2 teaspoon basil
4 tablespoons paprika
1 teaspoon ground ginger
1 tablespoon dry mustard
1 tablespoon black pepper
2 teaspoons garlic salt
1 tablespoon celery salt
8 chicken pieces
2 beaten eggs
1 cup breadcrumbs
peanut oil

Steps:

  • Pre heat oil in deep fryer to 350°F.
  • Mix all the ingredients except the oil, breadcrumbs, eggs, and chicken in a large bowl.
  • Dip the chicken pieces in the egg and then turn them over in the breadcrumbs.
  • Roll them in the spicy flour mixture.
  • Heat the oil to 350 degrees F in a deep fryer and drop the chicken pieces in, one at a time with tongs careful not to splash hot oil.
  • Fry the chicken for 12 to 15 minutes, until it is golden brown and cooked through.
  • Drain on racks for 5 minutes.
