Beer-Battered Broccoli Bites image

If you're looking for a way to jazz up everyday veggies, try this super-tasty recipe. It's also delicious with green beans, cauliflower, zucchini or yellow squash.

1 cup Gold Medal™ self-rising flour
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon pepper
2 tablespoons grated Parmesan cheese
1 cup regular or nonalcoholic beer
4 cups fresh broccoli florets
Vegetable oil for deep frying
1/2 cup ranch dressing

Steps:

  • In large bowl, mix flour, garlic powder, onion powder, pepper, cheese and beer with whisk until smooth. Add broccoli; toss until well coated with batter.
  • In deep fryer or heavy saucepan, heat 2 to 3 inches oil to 375°F. Fry broccoli in batches 2 to 3 minutes, turning once, until golden brown. Drain on paper towels.
  • Serve warm broccoli bites with ranch dressing for dipping.

This recipe was originally written for cauliflower, but I had just purchased a mixed bag of fresh broccoli, carrots, and cauliflower and decided to try it with the broccoli and cauliflowerl. I liked the cauliflower but fell in love with the broccoli so here it is for safe keeping. Like the saying goes, just about anything fried is good, and this is good!

3 heads fresh broccoli, cleaned and cut bite-size (or cauliflower)
2 large eggs
1/2 cup milk
3 cups all-purpose flour
1/2 teaspoon nutmeg
1 teaspoon granulated garlic
1/2 teaspoon cayenne pepper
1/2 teaspoon black pepper
1/2 teaspoon salt
1 teaspoon creole seasoning
3 -4 cups canola oil, enough to fill deep fryer (or vegetable, canola oil is best)

Steps:

  • Heat oil in deep fryer or large pot on stove to 350° Fahrenheit
  • Beat eggs and milk together in a bowl. Pour milk and egg wash in a ziplock bag.
  • Combine remaining ingredients (except broccoli) in a separate ziplock bag; close the bag and shake thoroughly to mix. (Cajun or Creole seasonings: Zatarain's or Tony Chachere's, to taste or 1 teaspoon).
  • Shake and soak broccoli pieces in egg wash bag for 5 minutes, then place them in flour and seasoning ziplock bag. Shake to coat. Place each coated broccoli piece in hot oil and cook until golden brown. Drain on paper towel.
  • Best served hot out of the fryer. Serve with condiments of your choice, catsup, hot sauce, or cocktail sauce are my favorite choices.

Vegetable oil, for frying
3 tablespoons grated Parmesan
1 teaspoon ground sumac
1/2 teaspoon ground cayenne
Zest of 1 lemon, plus wedges, for serving
6 large cloves garlic, thinly sliced
1 head broccoli (about 1 pound), cut into florets
Kosher salt

Steps:

  • Heat about 2 inches of oil in a large pot to 365 degrees F. Meanwhile, line a baking sheet with paper towels.
  • In a small bowl, stir together the Parmesan, sumac, cayenne and lemon zest.
  • Add the garlic to the oil. Fry until light golden, 30 seconds to 1 minute. Remove to the lined baking sheet to drain. Add half of the broccoli to the oil and fry, turning occasionally, until browned and crispy, about 3 minutes. Remove to the lined baking sheet to drain and season with salt. Repeat with the remaining broccoli.
  • Put the broccoli in a serving bowl and toss with the Parmesan mixture. Sprinkle with the fried garlic. Serve immediately with lemon wedges.

We had deep fried calamari and vegetables at a restaurant and my Wife LOVED it, so when we got home, I experimented for a few hours, and this is what I came up with. It can be used as a base batter recipe for deep fried calamari and vegetables, shrimp alone or with veggies, chicken, broccoli, you name it. It's versatile and delicious! I'm writing it as though it's for just veggies. The ingredients listed is enough for 1-1 1/2 pounds of meat, veggies, or a combination of both. Substitute principle ingredient as you wish.

1 1/2 lbs vegetables
1 cup unsifted white flour
1/2 teaspoon salt
1/8 teaspoon white pepper
1/2 teaspoon garlic powder
1/8 teaspoon paprika (Hungarian is best)
1/2 teaspoon ground rosemary
1 teaspoon sugar
1 beaten egg
1 cup milk (room temperature)
2 cups oil, to deep fry (there will be oil left when you are done)

Steps:

  • Preheat oil in large, thick bottom pot or fryer, on medium-high heat.
  • Mix the dry ingredients together in a bowl, add liquids, and carefully stir together.
  • Dip veggies into batter and drop into hot oil, cooking until golden brown.
  • Remove and allow to drain over paper towel-covered plate, then serve while hot.
  • The Fat content under Nutritional attributes will be falsely high, as most of the oil drains away, and is not consumed.

a 12-ounce bottle of beer (not dark)
6 scallions, chopped fine
2 tablespoons drained bottled capers, chopped fine
1 1/2 teaspoons salt
vegetable oil for deep-frying
1 head of broccoli, cut into 1 1/2-inch flowerets
3 carrots, cut into 1/2-inch-thick sticks

Steps:

  • Preheat the oven to 325°F. In a bowl whisk together the flour, the beer, the scallions, the capers, and the salt. In a heavy kettle heat 1 1/2 inches of the oil to 375°F. on a deep-fat thermometer, working in batches dip the broccoli in the batter, and fry it in the oil for 3 minutes, or until golden, transferring it as it is fried to paper towels to drain. Dip the carrots in the batter and fry them for 2 minutes in the same manner.
