1/2 lb lean (at least 80%) ground beef
1/4 cup chopped onion (1 small)
2 tablespoons Old El Paso™ taco seasoning mix (from 1-oz package)
1 cup Original Bisquick™ mix
1/4 cup cold water
1/2 cup sour cream
1/3 cup mayonnaise or salad dressing
1/2 cup shredded sharp Cheddar cheese (2 oz)
1 medium tomato, chopped (3/4 cup)
1 can (4.5 oz) Old El Paso™ chopped green chiles

Steps:

  • Heat oven to 375°F. Spray 8-inch square (2-quart) glass baking dish with cooking spray. In 8-inch skillet, cook beef and onion over medium-high heat 5 to 7 minutes, stirring occasionally, until thoroughly cooked; drain. Stir in taco seasoning mix until blended.
  • In medium bowl, stir Bisquick mix and water until soft dough forms. Using fingers dipped in Bisquick mix, pat dough in bottom and 1/2 inch up sides of baking dish.
  • In same bowl, mix sour cream, mayonnaise and cheese until blended. Layer beef mixture, tomato and chiles over dough; spoon sour cream mixture over top.
  • Bake 25 to 30 minutes or until edges of dough are light golden brown.

1 pound lean ground beef (90% lean)
1 cup shredded reduced-fat cheddar cheese
1/3 cup reduced-fat mayonnaise
1/3 cup reduced-fat sour cream
1 tablespoon finely chopped onion
1 cup reduced-fat biscuit/baking mix
1/4 cup cold water
1 small tomato, sliced

Steps:

  • In a nonstick skillet, cook beef over medium heat until no longer pink; drain. Remove from the heat; stir in the cheese, mayonnaise, sour cream and onion. , In a large bowl, combine biscuit mix and water. Spread into an 8-in. square baking dish coated with cooking spray. Top with beef mixture and tomato. Bake, uncovered, at 375° for 20 minutes or until bottom crust is golden brown.

2 cups biscuit mix
1/2 cup cold water
1 lb ground beef
1 green pepper, chopped
1 small onion, chopped (2 T.)
1 (8 ounce) can tomato sauce
1 (8 ounce) carton sour cream
1 cup sharp cheddar cheese, shredded
1/3 cup mayonnaise
paprika

Steps:

  • Combine biscuit mix and water, stirring with a fork until blended.
  • Press mixture in bottom of a lightly greased 12x8x2" baking dish.
  • Bake at 375 degrees for 9 minutes.
  • Cook ground beef, green pepper, and onion in a large skillet until meat is browned, stirring to crumble meat; drain well.
  • Stir in tomato sauce; spoon over crust.
  • Combine sour cream, cheese, and mayonnaise in a medium bowl; spoon over meat mixture.
  • Sprinkle top evenly with paprika.
  • Bake at 375 degrees, uncovered, for 25 minutes or until casserole is lightly browned.
  • Cut into squares to serve.

1/2 lb lean ground meat
8 oz sour cream
1/2 c mayonnaise
1/2 c cheddar cheese, shredded
1/2 small onion, chopped
1 c bisquick
1/4 c cold water
1 or 2 medium tomatoes, sliced (or use 3 or 4 roma tomatoes.)
1/2 c green pepper, chopped

Steps:

  • 1. Preheat oven to 375 degrees. Grease an 8-inch square baking dish. Set aside.
  • 2. Cook ground meat in a skillet, breaking it up as you go. Drain well and set aside.
  • 3. In a bowl, combine sour cream, mayonnaise, cheese, and onions together. Set aside to mellow.
  • 4. In another bowl, blend Bisquick and water with a fork until soft dough forms. Pat dough into prepared baking dish, pressing dough up the sides.
  • 5. Now layer cooked meat, tomatoes, and green pepper over the crust. Top with sour cream mixture, spreading evenly. Sprinkle with paprika if desired.
  • 6. Bake in preheated oven about 25 to 30 minutes or until edges of crust are golden.
