This Italian Meatball Pasta is an easy-to-make skillet dinner with Hamburger Helperâ„¢ Beef Pasta, precooked Italian-style meatballs and juicy tomatoes. 1 tablespoon vegetable oil
1/2 cup chopped onion
2 cups hot water
1/2 cup milk
1 can (14.5 oz) petite diced tomatoes, drained
1 box (5.9 oz) Hamburger Helperâ„¢ Beef Pasta
32 frozen cooked Italian-style meatballs (1/2 oz each)
1 cup shredded Italian cheese blend (4 oz)
Chopped fresh parsley leaves, if desired

Steps:

  • In 12-inch nonstick skillet, heat oil over medium heat. Add onion; cook 4 to 6 minutes, stirring occasionally, until onion is softened.
  • Add hot water, milk, tomatoes, and sauce mix (from box); stir to combine. Stir in uncooked pasta (from box) and frozen meatballs. Heat to boiling, stirring occasionally. Reduce heat; cover and simmer 9 to 11 minutes, stirring occasionally, until pasta is tender. Remove from heat.
  • Top with cheese; cover and let stand 2 to 3 minutes or until cheese is melted. Sprinkle with parsley.

One 24-ounce jar arrabbiata pasta sauce
1/2 cup sliced hot cherry peppers
12 store-bought spicy Italian meatballs (from the meat counter)
1 tablespoon crushed red pepper flakes
One 8-ounce log fresh mozzarella, cut into 12 slices
8 to 12 fresh basil leaves, torn
Crusty bread, salad leaves and Italian salad dressing, for serving

Steps:

  • Preheat the oven to 425 degrees F.
  • Add the arrabbiata sauce to a 12-inch cast-iron skillet and top with the peppers. Add the meatballs, then bake until the meatballs are cooked through, 18 to 20 minutes. Remove the meatballs from the oven, then turn the oven to the broiler setting.
  • Sprinkle the crushed red pepper flakes over the meatballs, then lay a slice of mozzarella over the top of each meatball. Place under the broiler for 3 to 4 minutes to melt the cheese, watching closely so that nothing burns. Scatter over the torn basil.
  • Serve with crusty bread and a dressed salad.

MEATBALLS
4 slice bread, i used wheat
milk
1 lb italian sausage, mild
1 lb ground beef
1/2 c italian bread crumbs
1/2 c parmesan cheese
1 Tbsp basil, paste (can use fresh or dried)
2 tsp garlic paste (or 2 cloves of garlic minced)
1 large egg
salt and pepper to taste
2 to 3 Tbsp olive oil, extra virgin
SAUCE
3 Tbsp olive oil, extra virgin
1 large onion, chopped
1 large bell pepper, chopped
4 clove garlic, chopped
1 tsp red pepper flakes
1 tsp fennel seed
3 (14.5-oz) cans diced tomatoes and juice
1 (8-oz) can tomato sauce
1 Tbsp basil paste (can use fresh or dried)
1 tsp italian seasoning
salt and pepper to taste
cooked spaghetti or pasta of choice
parmesan cheese

Steps:

  • 1. Soak bread slices in milk; squeeze excess moisture out of bread. Combine bread and remaining ingredients together except for the olive oil; mix well. Form meatballs. I made 21 large meatballs using a 1/4 cup measuring cup. You can make any size you desire.
  • 2. Heat olive oil in a large skillet over a medium heat; add meatballs and brown. Once browned, cover an reduce heat to low (just to keep warm). Prepare sauce.
  • 3. SAUCE: Heat oil in a large skillet over medium heat. Add onion, bell pepper and garlic; cook until tender.
  • 4. Add red pepper flakes, fennel seeds, tomatoes, tomato sauce, basil, Italian seasoning, salt and pepper; stir. Bring to a slow boil, reduce heat slighly and let simmer for 15 minutes covered. Remove lid and simmer another 15 minutes, stirring occasionally, to thicken.
  • 5. Add meatballs to sauce, cover and simmer for another 30 minutes.
  • 6. Plate up pasta, place 2 or 3 meatballs on top of spaghetti (or pasta of choice) and spoon sauce over top. Sprinkle with a little parmesan. Serve with a side salad and a fresh roll.
