SHRIMP MAC AND CHEESE

Shrimp Mac and Cheese image

This macaroni and cheese takes on a subtle coastal flair with the addition of shrimp. I used cooked salad shrimp as I found the size comparable to the elbow macaroni.

Time 50m

Yield 6

Number Of Ingredients 17

1 box whole wheat elbow pasta
1/2 cup shredded Gouda cheese
1 cup Greek Yogurt
-1/2 cup Cream Cheese
5 Tablespoons Butter ( plus some to saute the shrimp)
1 libra. Shrimp
1 package bacon
2 cups 6 cheese Italian Blend shredded
1/2 cup Monterrey Jack Cheese shredded
1/2 cup crumbled Feta
3/4 cup Swiss cheese shredded
3/4 cup Gruyere cheese shredded
1 cup Cheddar cheese shredded
1/2 cup milk
3/4 cup Parmesan cheese
1/2-3/4 cup Panko bread crumbs
Large baking dish.

Steps:

  • Preheat oven to 350. While preparing the shrimp and bacon, cook the pasta and drain. Make sure you cook the pasta, with mac-n-cheese you do not want al-dente because the pasta will continue to absorb later and will make your mac-n-cheese dry.
  • Peel and rinse shrimp. Drain well. With 2-3 tablespoons of butter, saute in pan over med-high heat until for 5-7 minutes35 or until cooked. Be careful not to overcook- they can become tough. When done drain from butter and cut into small pieces.
  • In another skillet (or on a sheet pan in the oven) cook bacon until slightly crispy. Don't overcook. Cut or break into similar size pieces as the shrimp.
  • Grease the bottom of the baking dish with a good amount of butter. Drain the pasta and return the pot to low heat.
  • Combine the cheeses and pasta starting with the butter, cream cheese and Greek yogurt. When they are well combined add the additional cheeses, stirring well. Add 1/2 cup of milk and let cheeses melt and combine.
  • Add 1/2 cup of the pasta water (the water has the starch in it which will help bind the dish). Make sure to keep an eye that the mixture does not look dry. You want it to be wet, but not over saturated, it will cook off a bit in the oven. Add shrimp and bacon. Stir well and add more milk or pasta water if needed. Add salt and pepper to taste.
  • Transfer the mixture to the baking sheet and cover with small bits of butter, Parmesan cheese and bread crumbs. Bake at 350 for 25 minutes. For the last 3 turn the broiler to low to brown and crisp the top of the dish.

BACON SHRIMP MAC AND CHEESE (BITES)

Bacon Shrimp Mac and Cheese (bites) image

With the upcoming Holidays approaching I decided I would try some new appetizers. We have our family favorites, but I wanted to try a few new things. My boys love mac and cheese (who doesn't?) they are young foodies & really expect more than the blue box -- as delish as it is on occasion. So I stepped it up. Everything, & I hope you agree, is better with bacon. We are lucky to live where we can inexpensively get shrimp so hmm. How can I make these into a bite size appetizer? It is phenomenal on its own but not really party friendly. These tiny bite sized balls are just the tasty fit for a party

Number Of Ingredients 24

1/2 package(s) pepper bacon
1 large shallot
1 - garlic clove
- splash of dry sherry
- flour
- milk
- 1/2 and 1/2
- bay leaf
- dried ground mustard
- paprika
- chipotle powder
- shrimp
- montreal steak seasoning
- olive oil
- unsalted butter
- nutmeg
- breadcrumbs
- cornmeal
- fontina cheese
- cheddar cheese
- parmesan cheese
- small pasta (i used canneroni)
- salt pepper to taste
- parsley

Steps:

  • I begin the recipe by browning the bacon lardons in a large sauce pan. Remove with a slotted spoon and place on a papertowel. Add the shallots and cook until just softened, add some butter and flour and cook until lightly brown, you are making a simple béchamel sauce. Add the milk and ½ and ½, stir until the mixture begins to bubble slightly and thicken, reduce heat and continue to cook add a few pinches of ground mustard, a dash of paprika, toss in a bay leaf or two and a bit of chipotle powder, salt and pepper and taste. Add a dash or pinch more until you say YUMMO....but wait we still have to add the cheese and then a touch of nutmeg. Taste adjust seasoning. Toss in the chopped parsley (optional)
  • Now for the Shrimp I season with montreal seasoning, and olive oil and saute or grill until just pink. Cool and chop
  • Pour the béchamel sauce over the cooked pasta add the shrimp and the bacon. Let cool and form into balls. Set up a breading station. Flour one bowl, I mix the egg in one bowl and then mix the breadcrumbs and the corn meal in another. In a deep fryer or in a deep saute pan add the canola oil and heat. You will know it ready when you toss in a bit of bread crumbs and they don't sink. Put the pasta balls in flour, then egg then bread crumb mixture and place carefully in the hot oil, cook until golden brown. Be very gentle removing them they fall apart easily when they are piping hot. They really are little nuggets of yumminess! Perfect with or without a dipping sauce. I reserved some of the béchamel but it really didn't need it. Hope you love them...

SHRIMP WITH BACON AND CHEESE

Shrimp With Bacon and Cheese image

Delicious combination of flavors. My madre-in-law made this at a party. I made this a romantic meal for the hubby since it can also go well with beer or wine beverages. It is super simple gourmet!

Time 50m

Yield 6-8 serving(s)

Number Of Ingredients 7

2 lbs raw shrimp, headless, peeled, and deveined
1 lb bacon, cut in 1 in. pieces
1/2 lb monterey jack cheese, grated
2 tablespoons margarine
garlic powder
ground black pepper
30 very thin corn tortillas (or thin as you can get)

Steps:

  • Fry bacon on med-hi until crispy (when grease is foaming) because they will rehydrate when other ingredients are added. Trust me, you don't want rawlike bacon in your dish!
  • Drain grease from pan, leave a little for cooking.
  • Add margarine, melt.
  • Add shrimp, sprinkle garlic powder and dash of black pepper. Stir constantly because shrimp cooks fast. Just when all shrimp turn pink, turn off heat so they do not overcook.
  • Top with cheese.
  • Cook corn tortillas on range (when tortilla starts to bubble, it's ready.) If you have an electric stove, you can cook the tortillas on a skillet or nonstick pan.
  • Scoop shrimps into tortillas and enjoy! This goes well with pinto beans that you can re-fry with the bacon grease you just separated.
