2 1/2 cups all-purpose flour
2 cups granulated sugar
1 1/2 cups whole milk
1/4 cup vegetable shortening
1 tablespoon baking powder
2 teaspoons vanilla extract
1 teaspoon kosher salt
2 large eggs
One 20-ounce can sliced pineapple plus 2 tablespoons juice
1 stick (8 tablespoons) unsalted butter, at room temperature
1 1/3 cups packed light brown sugar
Maraschino cherries, as needed, stemmed

Steps:

  • Preheat the oven to 350 degrees F.
  • Make the cake batter: Combine the flour, granulated sugar, milk, shortening, baking powder, vanilla, salt, eggs, pineapple juice and 4 tablespoons of the butter in a large bowl. Beat with a mixer on medium speed until well combined. (There will still be a few small lumps in the batter.) Set aside.
  • Melt the remaining 4 tablespoons butter in a 12-inch cast-iron skillet over medium heat; swirl to thoroughly coat the skillet. Sprinkle the brown sugar over the butter, making sure it's evenly distributed--you want the entire surface of the butter to be covered in brown sugar. Do not stir. As soon as the sugar dissolves, remove from the heat, layer the pineapple slices over the top and add cherries to the middle of the pineapple slices. Pour the batter evenly over the pineapple and gently spread to even out the top. Bake until a toothpick inserted into the center of the cake comes out clean, 30 to 40 minutes.
  • Immediately run a knife around the edge of the cake, then put a plate upside down on top of the skillet. Carefully invert the skillet so the cake is turned onto the plate. It should come out pretty easily; if bits of cake stick to the skillet, use a small knife to patch it together. Let cool slightly before cutting into wedges. It's best served warm, but room temperature is fine too.

1 (15 ounce) can crushed pineapple
¼ cup butter, melted
1 cup packed brown sugar
3 cups all-purpose flour
5 teaspoons baking powder
1 cup shortening
1 ½ cups white sugar
2 eggs
1 tablespoon vanilla extract

Steps:

  • Grease a 9x13 inch pan and preheat oven to 350 degrees F (175 degrees C).
  • Drain crushed pineapple and reserve juice. Combine margarine, brown sugar, pineapple and 2 tablespoons pineapple juice. Spread onto the bottom of a 9x13 inch pan. Add enough water to remaining juice to make 1 1/3 cup of liquid. Set aside.
  • Combine flour and baking powder. Set aside.
  • Cream shortening and white sugar until light and fluffy. Add eggs and vanilla, and beat for 1 minute. Add flour mixture alternately with juice, beginning and ending with the dry ingredients.
  • Pour over pineapple mixture in pan. Bake at 350 degrees F (175 degrees C) for 40 minutes or until toothpick inserted in center comes out clean. Cool in pan 5 minutes and then turn out.

When I was about 3 years old I remembered my mother use to make a pineapple upside down cake in an iron skillet. So one boring afternoon trying to recapture my childhood, I put together this from my own imagination of what a pineapple upside down cake should be. This is NOT your Momma's Pineapple Upside Down Cake!

1 large can of pineapple chunks drained (save the juice)
1 jar(s) maraschino cherries without stems
1 cup(s) baker's coconut
1 cup(s) chopped pecans
3/4 cup(s) brown sugar
1 stick(s) butter ( for cake mix)
3 - eggs (for cake mix)
1 - betty crocker yellow cake mix with butter
- (pineapple juice replaces water in box cake mix)

Steps:

  • Spray a tube pan thoroughly with Pam.
  • Open pineapple and cherries drain juices off and keep for later.
  • In the bottom of tube pan pour about ¾ cup of brown sugar (more or less) Spread it out to cover the whole bottom of the pan.
  • Then on top of the sugar, layer the pineapple evenly, then the cherries, coconut, and pecans.
  • In a separate mixing bowl, mix the cake mix according to the directions . EXCEPT exchange the fruit juice for the water in the mix(Use same measurement), continue to mix according to the directions.
  • Pour the batter on top of the layers in the tube pan, spread it evenly.
  • Bake at 375 for 34 to 44 minutes, until the cake is done by checking with a toothpick.
  • When finished baking run a knife around to loosen and flip upside down onto a plate! Eat warm or wait till cool

½ small fresh pineapple - peeled, cored, and sliced
½ cup butter

1 egg
½ cup cold milk

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Melt 1/4 cup butter in a 12-inch cast iron skillet over medium-low heat. Stir in brown sugar, pineapple juice, and dark rum. Cook over medium-low heat until sugar is dissolved and mixture is bubbling, about 5 minutes.
  • Remove from heat and spread pineapple slices in a layer over the brown sugar mixture, completely covering the mixture. Set skillet aside.
  • Melt 1/2 cup butter in small skillet over low heat until the butter begins to brown and release a nutty fragrance, about 5 minutes. Watch carefully, butter burns easily. Remove from heat and let cool for 10 minutes.
  • Whisk together flour, cardamom, salt, baking powder, and white sugar in a large bowl. Whisk in egg and cold milk until just combined. Pour in melted butter and stir to mix thoroughly.
  • Pour batter over the pineapple slices in the skillet; spread evenly to cover.
  • Bake in preheated oven until the cake begins to bubble around the edges, the top is browned, and a toothpick inserted into the center comes out clean, about 30 to 35 minutes. Let cool in the skillet for 10 minutes.

1/2 cup packed light brown sugar
One 20-ounce can pineapple rings, drained and patted dry (10 rings)
19 brandy-soaked cherries, drained
1 1/2 cups cake flour
2 teaspoons baking powder
1/2 teaspoon kosher salt
1/4 teaspoon cinnamon
3/4 cup packed light brown sugar
1/2 cup (8 tablespoons) unsalted butter, room temperature
2 large eggs, room temperature
1 tablespoon vanilla extract
1 tablespoon orange zest
1 cup sour cream

Steps:

  • Preheat the oven to 350 degrees F. Line a rimmed baking sheet with aluminum foil.
  • For the topping: Pour the melted butter into a 9-inch pie dish. Use a pastry brush to brush the sides of the pie plate with butter. Sprinkle the butter with the brown sugar. Use clean hands to cover the base and sides of the pie plate with the butter sugar mixture. Arrange 7 pineapple rings on the base of the pie plate. Cut the remaining 3 rings in half and place them in the openings on the sides of the pie plate.   • Add the butter and sugar to the bowl of a stand mixer fitted with the paddle attachment. Cream the butter and sugar together on medium-high speed until light and fluffy, about 2 minutes. Next, add the eggs, one at a time, fully incorporating the first egg before adding another. When the eggs are incorporated, add the vanilla and orange zest and mix until combined.
  • Alternate adding the flour mixture and the sour cream to the mixer, starting and ending with the flour mixture. Mix until just combined. Spoon the batter into the chilled pie plate. Place the pie plate on the prepared baking sheet and transfer to the oven to bake until the juices are bubbling and the toothpick inserted in the center of the cake comes out clean, 45 to 50 minutes.
  • Remove the cake from the oven and transfer to a wire rack to cool for 15 minutes. Place a plate over the top of the cake and carefully flip the cake over, inverting it onto the plate. Cool the cake for an additional 10 to 15 minutes before serving.
