OLD-FASHIONED DATE NUT BREAD



Old-Fashioned Date Nut Bread image

A delicious and easy quick bread recipe made with whole-grain flour, Medjool dates, and pecans.

3/4 cup boiling water
8 oz Medjool dates (pitted and chopped)
1 cup natural cane sugar (*Can also use coconut sugar )
1 egg
2 tbsp extra virgin olive oil
2 tsp real vanilla extract
2 cups whole wheat pastry flour (or use 1 cup wheat pastry flour and 1 cup unbleached white wheat flour)
2 tsp baking soda
1/2 tsp sea salt
1/4 tsp baking powder
1 cup non-fat plain Greek yogurt
3/4 cup chopped pecans (*Can also sub walnuts or almonds)

Steps:

  • Pour boiling water over dates and let sit for 15 minutes.
  • Beat sugar, egg and oil for 3 minutes on high speed of mixer.
  • Blend in date mixture and vanilla.
  • Combine flour, baking soda, salt and baking powder.
  • Add dry mixture, alternately with yogurt, to beaten mixture.
  • Blend well.
  • Stir in nuts.
  • Pour batter into 4 greased mini loaf pans (3 1/4 x 5 3/4")
  • Use about 1 cup batter for each pan.
  • They should look about half full.
  • Bake at 350 degrees for 35 minutes or until cake taster comes out clean.
  • Cool on wire rack.

BAKED ALMOND & DATE TART

A great recipe for using up leftover dates from Christmas to make a delicious fruity pud - by Gary Rhodes.

85g digestive biscuit
175g butter , room temperature, chopped
100g caster sugar
25g plain flour
1 tsp baking powder
100g ground almond
3 eggs
100g date , preferably Medjool, stoned and roughly chopped
25g blanched almond , roughly chopped
icing sugar , for dusting
clotted or pouring cream

Steps:

  • Heat oven to 180C/fan 160C/gas 4. Lightly butter and flour a 23-25cm fluted flan dish or tin (not loose-bottomed). Crush half the digestive biscuits with a rolling pin. Cream the butter and sugar in a food processor until light and fluffy, 2-3 mins, scraping down the sides halfway through. Add the flour, baking powder, ground almonds and crushed digestive biscuits, along with the eggs, then process again just until smooth. Transfer the mix to a bowl.
  • Break the remaining digestive biscuits into chunky crumbs, (see step 1, left). Stir them into the mix (step 2) along with the chopped dates and almonds. Spoon the mix into the flan dish. Bake for 25-30 mins until golden and the tart is just beginning to come away from the sides.
  • Remove the tart from the oven and leave it to cool a little, before dusting over icing sugar. Serve warm with cream.
