Steps:
- Preheat oven to 350°F. Butter large rimmed baking sheet. Sift first 4 ingredients into medium bowl. Using electric mixer, beat butter in large bowl until fluffy. Add sugar and vanilla; beat until blended. Add flour mixture and beat until moist clumps form. Mix in oats with spatula until evenly distributed (dough will be very firm). Add chocolate chips and knead gently to blend.
- Using moistened palms, shape 1 generous tablespoon dough into ball. Place on prepared sheet; flatten to 2-inch round. Repeat with remaining dough, spacing rounds about 2 inches apart.
- Bake cookies until center is slightly firm and top is cracked, about 14 minutes. Cool on sheet.
DARK CHOCOLATE RAISINET OATMEAL COOKIES
Chocolate chips + oatmeal cookies are good. Raisins + oatmeal cookies are good. So I thought, how about chocolate-covered raisins in oatmeal cookies? Also good, as it turns out. Really good. Especially when you use the dark chocolate Raisinets, but regular Raisinets do just fine.

- Preheat oven to 375 degrees Fahrenheit.
- In the large bowl of a stand mixer afixed with the beater attachment or in a large bowl using a hand mixer, beat the butter, brown sugar and granulated sugar together until fluffy, about two to three minutes.
- Add the eggs one at a time, beating well after each addition.
- Add the vanilla and mix well.
- Place a sifter over the bowl and sift in the flour, baking soda, and salt. Add the oats. Mix until blended.
- Stir in the Raisinets.
- Place in rounded tablespoonfuls on an ungreased cookie sheet.
- Bake for about 8 minutes, until they look set and the edges begin to look golden.
- Remove from oven and let cool for about five minutes, then transfer to a wire rack to cool the rest of the way.

- Preheat oven to 375.
- Combine flour, soda and salt in a large bowl and set aside.
- Cream together butter, coconut oil and sugars in a small bowl.
- Add one egg at a time and mix well.
- Stir hot water and vanilla into flour mixture.
- Stir in oats, chocolate chips and chopped walnuts to flour mixture.
- Add creamed butter and sugar mixture and mix well until well incorporated.
- Using TBS size cookie dough dropper (or drop from large tablespoon) onto non-stick cookie sheet. I use demarle non-stick liner.
- Bake at 375 for 9 minutes. Let cool 5 minutes and remove to cooling rack. Place in sealed cookie jar.

- 1. Heat oven to 350 degrees F (175 degrees C). Lightly grease cookie sheets. 2. In a medium bowl, cream together the butter, brown sugar and white sugar until smooth. 3. Stir in the egg and vanilla. 4. Sift together the flour, baking powder, baking soda and salt, stir into the creamed mixture. 5. Finally, stir in the rolled oats, chocolate chips and cherries. 6. Drop by spoonfuls onto the prepared cookie sheets. It's best to let the clumps of cookie dough have a little height. The cookies stay lighter that way. 7. Bake for 10 to 12 minutes in the preheated oven. Remove from baking sheets to cool on wire racks. 8. Enjoy!

SALTED OATMEAL COOKIES WITH DARK CHOCOLATE

- Heat oven to 375° F with the rack in the upper and lower thirds. Line 2 large baking sheets with parchment. Combine the oats, flour, baking soda, cinnamon, and 1 teaspoon of the salt in a medium bowl; set aside. Beat the butter, shortening, granulated sugar, and brown sugar with an electric mixer on medium-high speed until lightly and fluffy, 2 to 3 minutes. Beat in the egg and vanilla. Reduce the mixer speed to low and gradually add the flour mixture, mixing just until combined (do not overmix). Stir in the chocolate. Drop heaping tablespoonfuls of the dough onto the prepared baking sheets, spacing them 2 inches apart. Sprinkle with the remaining 1 teaspoon of salt. Bake, rotating the pans halfway through, until lightly brown around the edges, about 10 to 12 minutes. Cool slightly on the baking sheets, then transfer to a wire rack to cool completely.
