3/4 cup all purpose flour
1/4 cup unsweetened cocoa powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup (1 stick) unsalted butter, room temperature
1/2 cup sugar
1/2 teaspoon vanilla extract
2 tablespoons steel-cut oats
1/4 cup semisweet chocolate chips

Steps:

  • Preheat oven to 350°F. Butter large rimmed baking sheet. Sift first 4 ingredients into medium bowl. Using electric mixer, beat butter in large bowl until fluffy. Add sugar and vanilla; beat until blended. Add flour mixture and beat until moist clumps form. Mix in oats with spatula until evenly distributed (dough will be very firm). Add chocolate chips and knead gently to blend.
  • Using moistened palms, shape 1 generous tablespoon dough into ball. Place on prepared sheet; flatten to 2-inch round. Repeat with remaining dough, spacing rounds about 2 inches apart.
  • Bake cookies until center is slightly firm and top is cracked, about 14 minutes. Cool on sheet.

Chocolate chips + oatmeal cookies are good. Raisins + oatmeal cookies are good. So I thought, how about chocolate-covered raisins in oatmeal cookies? Also good, as it turns out. Really good. Especially when you use the dark chocolate Raisinets, but regular Raisinets do just fine.

1 cup 2 sticks unsalted butter, room temperature
3/4 cup granulated sugar
3/4 cup packed brown sugar
2 large eggs
1 teaspoon vanilla extract
1 1/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
3 cups rolled oats
1 heaping cup dark chocolate Raisinets

Steps:

  • Preheat oven to 375 degrees Fahrenheit.
  • In the large bowl of a stand mixer afixed with the beater attachment or in a large bowl using a hand mixer, beat the butter, brown sugar and granulated sugar together until fluffy, about two to three minutes.
  • Add the eggs one at a time, beating well after each addition.
  • Add the vanilla and mix well.
  • Place a sifter over the bowl and sift in the flour, baking soda, and salt. Add the oats. Mix until blended.
  • Stir in the Raisinets.
  • Place in rounded tablespoonfuls on an ungreased cookie sheet.
  • Bake for about 8 minutes, until they look set and the edges begin to look golden.
  • Remove from oven and let cool for about five minutes, then transfer to a wire rack to cool the rest of the way.

1 1/2 cups flour
1 1/4 teaspoons baking soda
1 teaspoon salt
1/2 cup butter, softened
1/2 cup coconut oil, solid
3/4 brown sugar, packed
3/4 cup sugar
2 large eggs
1 teaspoon hot water
1 1/2 teaspoons vanilla
1 cup chopped walnuts
12 -16 ounces dark chocolate chips
2 cups quick oats

Steps:

  • Preheat oven to 375.
  • Combine flour, soda and salt in a large bowl and set aside.
  • Cream together butter, coconut oil and sugars in a small bowl.
  • Add one egg at a time and mix well.
  • Stir hot water and vanilla into flour mixture.
  • Stir in oats, chocolate chips and chopped walnuts to flour mixture.
  • Add creamed butter and sugar mixture and mix well until well incorporated.
  • Using TBS size cookie dough dropper (or drop from large tablespoon) onto non-stick cookie sheet. I use demarle non-stick liner.
  • Bake at 375 for 9 minutes. Let cool 5 minutes and remove to cooling rack. Place in sealed cookie jar.

1 bag dark chocolate chips
1 1/2 cups dried cherries

Steps:

  • 1. Heat oven to 350 degrees F (175 degrees C). Lightly grease cookie sheets. 2. In a medium bowl, cream together the butter, brown sugar and white sugar until smooth. 3. Stir in the egg and vanilla. 4. Sift together the flour, baking powder, baking soda and salt, stir into the creamed mixture. 5. Finally, stir in the rolled oats, chocolate chips and cherries. 6. 1/2 c (1 stick) plus 6 tbsp. butter, softened
3/4 c firmly packed brown sugar
1/2 c granulated sugar
2 eggs
1 tsp vanilla
1 1/2 c all purpose flower
1 tsp baking soda
1 tsp ground cinnamon
3 c oatmeal
1 c craisins
1 c dark chocolate chips
1/2 tsp salt

Steps:

  • 1. Heat oven to 350`F. In a large bowl, beat butter and sugar on medium speed electric mixer until creamy. Add eggs, vanilla; beat well. Add flour, baking soda, cinnamon and salt MIX WELL. Add Craisins, Dark Chocolate Chip; mix well. Drop dough by rounded table spoon onto ungreased cookie sheet. Bake 8-10 minutes or until golden brown. Store tightly in zip lock container or tin's. Makes about 4 dozen but it always seem less, IM not sure because I eat a few warm ones or I make them to big. Cool completely

1 cup whole wheat pastry or unbleached flour
• 1/2 tsp. baking soda
• 1/2 tsp. salt
• 1 stick butter
• 2/3 cup turbinado (raw) sugar
• 1/2 tsp. vanilla
• 1 lg. egg
• 1 cup granola (food process if it is chunky)
• 3/4 cup semisweet chocolate chips (I used the Sunspire brand)

Steps:

  • Mix flour, soda, salt, butter, sugar and vanilla together. Beat with electric mixer on medium 3 minutes. Add egg, reduce mixer to low, and beat in. Add granola and chocolate chips. Drop by heaping tablespoons on to greased cookie sheet. Pat down slightly with a fork.
  • Bake at 375 degrees F. (preheated) for 8-10 minutes. Cool on cookie sheets 1 minute, then transfer to cooling rack to cool completely.

2 cups old-fashioned rolled oats (not quick-cooking) 1 cup all-purpose flour
spooned and leveled 3/4 teaspoon baking soda 1/4 teaspoon ground cinnamon 2 teaspoons flaky sea salt (such as Maldon) 1/2 cup (1 stick) unsalted butter
at room temperature 4 tablespoons vegetable shortening 1/2 cup granulated sugar 1/2 cup packed light brown sugar 1 large egg 1 teaspoon pure vanilla extract 6 ounces bittersweet chocolate
coarsely chopped

Steps:

  • Heat oven to 375° F with the rack in the upper and lower thirds. Line 2 large baking sheets with parchment. Combine the oats, flour, baking soda, cinnamon, and 1 teaspoon of the salt in a medium bowl; set aside. Beat the butter, shortening, granulated sugar, and brown sugar with an electric mixer on medium-high speed until lightly and fluffy, 2 to 3 minutes. Beat in the egg and vanilla. Reduce the mixer speed to low and gradually add the flour mixture, mixing just until combined (do not overmix). Stir in the chocolate. Drop heaping tablespoonfuls of the dough onto the prepared baking sheets, spacing them 2 inches apart. Sprinkle with the remaining 1 teaspoon of salt.
