1 1/4 cups all-purpose flour
1/4 cup sugar
1 cup rolled oats
1/2 teaspoon salt
1/2 teaspoon cinnamon
2 teaspoons baking powder
4 tablespoons butter
1 cup low-fat milk
1 egg

Steps:

  • 1. Preheat oven to 180 degrees celsius.
  • 2. Combine flour, sugar, salt, rolled oats, cinnamon and baking powder in a bowl.
  • 3. Melt butter, and mix together with the milk and egg. Stir into the flour mixture until just combined. Do not overmix.
  • 4. Place mixture evenly into 12 muffin cups. Bake for 20-25 minutes or until golden.

These down-home oatmeal muffins are tender on the inside and have a crispy topping of oats, brown sugar and cinnamon. Number Of Ingredients 16

1-1/2 cups quick-cooking oats
1-1/4 cups all-purpose flour
1/2 cup packed brown sugar
1 teaspoon baking powder
3/4 teaspoon baking soda
3/4 teaspoon ground cinnamon
1/2 teaspoon salt
1 cup unsweetened applesauce
1/2 cup fat-free milk
3 tablespoons canola oil
1 egg white
TOPPING:
1/4 cup quick-cooking oats
1 tablespoon brown sugar
1/8 teaspoon ground cinnamon
1 tablespoon butter, melted

Steps:

  • In a large bowl, combine the first seven ingredients. In another bowl, combine the applesauce, milk, oil and egg white. Stir into dry ingredients just until moistened. Fill muffin cups coated with cooking spray three-fourths full., Combine topping ingredients; sprinkle over batter. Bake at 400° for 16-18 minutes or until a toothpick comes out clean. Cool for 10 minutes before removing to a wire rack.

Number Of Ingredients 11

1 cup old-fashioned oats
1 cup whole wheat flour
3/4 cup packed brown sugar
1/2 cup all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
2 large eggs, room temperature
3/4 cup 2% milk
1/4 cup canola oil
1 teaspoon vanilla extract
Peanut butter and honey, optional

Steps:

  • Preheat oven to 400°. Mix first 6 ingredients. In another bowl, whisk together eggs, milk, oil and vanilla. Add to oat mixture; stir just until moistened. , Fill greased or paper-lined muffin cups two-thirds full. Bake until a toothpick inserted in center comes out clean, 15-17 minutes., Cool 5 minutes before removing muffins to a wire rack. Serve warm. If desired, spread with peanut butter and honey.

1 egg, beaten
1/2 cup packed dark brown sugar (dark give them more color)
1/4 cup canola oil
1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon cinnamon

Steps:

  • In large mixing bowl soak oats in buttermilk 15 minutes.
  • Stir in egg, Sugar& oil.
  • Combine flour, baking powder, baking soda& cinnamon.
  • Stir into oat mixture until just moist.
  • Fill greased or paper lined muffin cups 3/4 full.
  • Bake at 400 degrees 16-18 minutes or until done.
  • Cool in pan 5 minutes.
  • Remove to a wire rack.

3 cups rolled oats
1 cup flour
1 cup milk
2 eggs
1 cup brown sugar
1/2 cup butter
1/4 cup vegetable oil
1 tablespoon cinnamon
3/4 teaspoon salt
1 tablespoon baking powder
2 teaspoons vanilla extract
1 cup powdered sugar
2 tablespoons milk

Steps:

  • Preheat oven to 400°F.
  • Combine oats, flour, salt, baking powder, and cinnamon.
  • In a seperate bowl, beat eggs well.
  • Melt the butter and add the brown sugar and vanilla.
  • Then mix the butter, 1 cup of milk, oil, and eggs into the oat mixture.
  • Spoon into greased or sprayed muffin tins and bake 18-20 minutes.
  • In a bowl, mix powdered sugar and 2 tablespoons of milk until it forms a glaze.
  • Add more milk little by little if needed to get best consistency.
  • When the muffins are baked and cooled, drizzle the glaze over top.
