7 ounces caster (superfine) sugar
2 eggs, well beaten
3 ounces self-rising flour
4 ounces ground almonds
4 ounces milk
1 teaspoon vanilla extract
1 tablespoon boiling water
1/2 teaspoon baking powder
8 stoned prunes, chopped
4 ounces shelled walnuts, finely chopped and mixed with 2 tablespoons sugar
2 green apples, cored and sliced
3 tablespoons sugar
Ground cinnamon
Butter

Steps:

  • Preheat the oven to 375 degrees F and butter a 10-inch round cake pan.
  • Cream together the butter, sugar, eggs, flour, almonds, milk, vanilla, boiling water and baking powder in a food processor, running it for 10 seconds. Run a spatula round the bowl and process for 5 seconds more. Pour into the prepared pan.
  • Scatter the prunes evenly on the batter. Spoon over walnut and sugar mixture. Arrange the apple slices on top of the walnuts. Bake for 45 minutes.
  • Sprinkle the surface with sugar and cinnamon. Dot with butter and bake for 20 to 25 minutes more, or until a skewer comes out clean. Cool in the tin.

1 1/4 cups dried breadcrumbs
1/2 cup margarine, melted

Steps:

  • Preheat oven to 450 degrees F, then butter a 1 1/2-quart ovenproof dish.
  • In a bowl, combine applesauce, sugar & vanilla extract.
  • In the prepared baking dish, lay down alternate layers of breadcrumbs & applesauce, ending with breadcrumbs.
  • Pour melted margarine over the top & bake 25-30 minutes or until golden brown.
  • Top with dollops of whipped cream & serve hot.

1 kilogram (2 pounds) Granny Smith apples
90 grams (3 ounces) butter
sugar to taste
2 cups (4 ounces) fresh breadcrumbs
3 tablespoons sugar
1/2 cup (4 fluid ounces) cream, whipped
red currant jelly (or jam)

Steps:

  • Peel, core and thinly slice the apples. Put into a stainless steel or enamel pan with a little water. Cover and cook gently until soft, then purée. Stir in 1 tablespoon of butter and enough sugar to taste. Melt remaining butter in a frying pan, add breadcrumbs and sugar and stir until golden. Allow to cool.
  • Just before serving, arrange alternate layers of apple purée and crumbs in a serving dish or individual bowls. Finish with a sprinkling of crumbs, decorate with whipped cream and red currant jelly.

125 g butter
170 g sugar
2 eggs
100 g almonds, ground
80 g self-raising flour
125 ml whole milk
1 teaspoon vanilla essence
1/2 teaspoon baking powder
12 soft dessert prunes
100 g walnuts, chopped
5 tablespoons sugar
2 green apples, cored and peeled
25 g butter, cut into small cubes
1 teaspoon cinnamon

Steps:

  • Preheat oven to 375F / 190°C.
  • Cream together 125g butter and 170g sugar.
  • Add well beaten aggs, almonds, self-raising flour, milk, vanilla and baking powder.
  • Alternatively, place all these ingredients in a food processor for 10 seconds. Run a spatula around the bowl and process for a further 5 seconds.
  • Either way, place the batter into a well greased 23 cm torte tin.
  • Stone prunes and coarsely chop and place on batter.
  • Mix walnuts with 2T sugar and spoon over the batter.
  • Thinly slice apples and place over the top of the walnuts.
  • Bake the cake for 40 minutes.
  • Carefully remove the cake from the oven by pulling out the rack it is sitting on.
  • Quickly sprinkle over the apples 3T sugar, cubed butter and cinnamon.
  • Slide the cake back into the oven and bake for a further 15 to 20 minutes or until a skewer comes out clean from the centre of the cake.
  • Serve the cake with whipped cream.

A former neighbor of mine & I were trying out recipes from some newly acquired military community cookbooks we had "won" together on Ebay. My neighbor found this recipe in one called "Recipes on Parade:Desserts" and since we both had a copy of the cookbook, we both tried it out - and loved the recipe. You would serve this scooped into a bowl, garnished with a little shredded cheddar and whipped cream, or as my neighbor preferred, some vanilla ice cream. This tastes best warm. This is called a "cake" but is not a typical slicing cake.

1 teaspoon baking powder
1/4 teaspoon salt
3/4 cup granulated sugar
3 tablespoons sweet unsalted butter, melted slightly

1-1/4 lb. Granny Smith apples, peeled, chopped
3 Tbsp. water
1/2 tsp. vanilla
6 Tbsp. sugar, divided
1/4 cup butter
3 cups fresh bread crumbs
1/2 tsp. ground cinnamon
1-1/2 cups thawed COOL WHIP Whipped Topping
1/4 cup raspberry jam

Steps:

  • Cook apples and water in covered saucepan on medium heat 10 to 15 min. or until apples are tender, stirring occasionally. Remove from heat.
  • Mash apples to desired consistency. Add vanilla and 3 Tbsp. sugar; mix well. Cool.
  • Meanwhile, melt butter in large skillet on medium heat. Add bread crumbs, cinnamon and remaining sugar; mix well. Cook 5 to 8 min. or until crumbs are golden brown, stirring constantly. Spread onto baking sheet; cool completely, stirring occasionally.
  • Spoon apple mixture and bread crumb mixture alternately into 12 dessert cups; top with COOL WHIP and jam.

This is to be found as the Sunday dinner dessert in almost every Danish home during the apple season. The recipe is from my childhood home. You can use store bought apple sauce, but I prefer and always use homemade.

4 c homemade unsweetened, chunky applesauce
8-10 sweet macro hearts
1 c sweet bread crumbs
1 pt heavy cream for wipping
1/2 c sugar
3 slices of dry toast
1 tsp butter

Steps:

  • 1. First make the sweet bread crumbs. Take 3 slices very dry toast, crush it in a plastic bag. Pour ½ cup sugar in a skillet and 1 teaspoon butter and heat to melt. As soon as the sugar is melted reduce heat and pour the crumbs into the skillet and mix quickly then pour onto a baking sheet to cool.
  • 2. Wip the heavy cream and put in the fridge. in a half gallon bowl cover the bottom with 1 cup applesauce, then crush 4 of the macros and add some of the crumbs, repeat layering and top with cold wipcream...mmmmmmmm
  • 3. Serve cold..

This is the recipe for my mum's apple cake, the best apple cake and maybe the best cake I've ever eaten. It's great to eat as a dessert with vanilla ice cream or whipped cream with chopped hazelnuts, or sprinkled with sherry or dessert wine. Can be frozen baked and reheated in a microwave. My mum translated this for me from her mother's Danish cookbook, Bo Bedre's Bagebog, by Lilian Kaufman 1966. The original recipe is called Reinette-Kage (Reinette Cakes).

3 -4 cooking apples (Reinette or Bramley)
200 g plain white flour
150 g white sugar or 150 g brown sugar
200 g butter or 200 g margarine
2 large eggs
1 1/2 teaspoons baking powder
1 dash vanilla essence
2 tablespoons lemon rind, grated (from half a lemon)

Steps:

  • Whisk the eggs, slowly adding sugar until the mix becomes a light and airy.
  • Melt the butter slowly without burning it (for example in the microwave) and let it cool down, and add it to the mixture, along with the grated lemon peel.
  • Mix the flour, vanilla essence and baking powder and add it to the mixture.
  • Line a large baking tin (lasagna dish) with greaseproof paper: cut the paper to 2" (5cm) larger on each side than the base of the tin, cut into each corner and press down into the tin.
  • Pour the mixture into the tin.
  • Peel and core the apples, cut into wedges (about 4mm thick at outside) and push them down vertically into the cake mix, so that the curved outsides face upwards towards you, and the sharp insides point downwards into the cake, like teeth. The slices should be completely buried in the cake mix, or they will burn.
  • Sprinkle a little sugar on top of the apple slices.
  • Bake at 175'C for 45 minutes. Allow to cool partly in the tin before removing to cool down on a wire rack.

180 g butter (soft at room temperature)
180 g caster sugar
2 large eggs (at room temperature)
180 g self raising flour, sifted
30 g sultanas
3 large firm apples, eg.granny smiths peeled,decored and sliced
30 g blanched almonds, roughly chopped
2 tablespoons caster sugar
2 teaspoons cinnamon
coffee sugar or coarse brown sugar

Steps:

  • Place the butter in a mixing bowl with the caster sugar.
  • Beat them together until they are light and creamy.
  • While mixing slowly add the eggs one at a time until they are well combined.
  • While mixing slowly add the flour and mix it until the batter is smooth and well combined.
  • Stir in the sultanas until they are well combined.
  • Preheat an oven to 180°C.
  • Grease a loose bottomed 20cm cake tin.
  • Spread half of the batter evenly over the base of the cake tin (the batter may seem quite thick).
  • Place a layer of the apples over the cake mix and scatter over the almonds.
  • Mix the remaining caster sugar and cinnamon together and sprinkle it over the apples and almonds.
  • Spread the remaining batter over the apples evenly.
  • Sprinkle over the coffee sugar or brown sugar over the cake mixture.
  • Place the cake on the centre shelf of the preheated oven and leave it to cook for 45 minutes.
  • The cake should be firm and light golden, a skewer when inserted into the centre of the cake should come out clear.
  • Remove the cake from the oven and leave it to cool slightly then remove it carefully from the tin.

The texture is on the muffin-side of things; you'll love it with coffee or tea.
Ingredients:
1/2 cup butter, softened
1 cup brown sugar
2 eggs
1 tsp vanilla extract
1 teaspoon baking powder
1 teaspoon cinnamon
1 1/2 cups flour
1 small apple, halved and sliced thinly
1 small apple, diced
Topping:
1/8-1/4 cup brown sugar
1/8-1/4 cup chopped walnuts
Dots of butter
Use a 6? cake pan

Steps:

  • Method:
  • Preheat the oven to 350F.
  • Meanwhile, cream butter with brown sugar until light and fluffy.
  • Add in the eggs, one a time.
  • Next up, vanilla extract
  • Mix until well incorporated ... be sure to scrape the sides.
  • Ready the apples/ Slice ONE apple thinly and dice the other apple.
  • Mix the diced apples into the stiff batter (this photo doesn't show apples because this version didn't include them in the batter.. but go for it - the cake needs the extra moisture)
  • Top with the other, thinly sliced apple (spread out like a fan).
  • In a small bowl, mix together chopped walnuts and brown sugar. (II'd use 1/2 light brown sugar and 1/2 white sugar). (could us a little more topping)
  • Next, drop in the dry ingredients, starting with flour,cinnamon, and baking powder. Sprinkle over the top of the cake and dot with BUTTER
  • Bake for 40-45 minutes (if you added the second apple, try about an hour) or until an inserted toothpick comes out clean and your whole house smells like heaven. Or a bakery. But I'm not sure there's a difference...
