KAHLUA® HOMEMADE
This recipe I love to make around Thanksgiving to drink or give as presents at Christmastime. The longer you wait the better it is, try and wait 4 weeks. I got this recipe from one of my own concoctions from trying several different recipes.

Steps:
- Combine water and instant coffee in a pot; bring to a boil. Stir light brown sugar and dark brown sugar into coffee, reduce heat, and simmer, stirring every 15 minutes, for 3 hours. Remove from heat and cool completely.
- Pour coffee mixture into a clean, large glass jar. Add grain alcohol, vanilla extract, and vanilla bean; cover with a tight-fitting lid. Let sit in a dark place, shaking occasionally, for 1 month. Divide into bottles, leaving a piece of vanilla bean in each.

HOMEMADE KAHLUA
This recipe was given to me by a very nice cocktail waitress at a little neighborhood Mexican restaurant called Dave and Dar's in Denver about 25 years ago. The restaurant is long gone, but te recipe still lingers.

Steps:
- Bring sugar and water to a boil.
- Stir until sugar is completely dissolved.
- Add coffee.
- Let cool to room temperature.
- Add vanilla and grain alcohol.
- Bottle and let set for at least one week, and preferably a month or longer, before serving.
- Note: I have also had it after allowing it to age for 15 minutes, and it was still pretty good, but definitely a little rough around the edges.

- Let cool and add vanilla and vodka.

HOMEMADE KAHLUA
This is a recipe that I found a while back for homemade Kahlua. This one is a little more "vanilla-y" than the others that I have tried. It makes A LOT, so it's great for gifts. It does need to sit for 12 hours but then it is totally drinkable (trust me, I've tried it). I use Svedka vodka and it comes out great. I would also use real vanilla, not the extract.

Steps:
- Mix sugar, water and coffee together and bring to a slow boil. (Be sure to watch this as it may boil over).
- Turn heat down and simmer 1 hour.
- Remove from heat and let cool. Cover with plastic wrap.
- Let sit for 12 hours then remove wrap. (It will pick up film from the top).
- Add vodka and vanilla, stir well.
- Bottle it or add it to your favorite drink!

- Dissolve sugar in 4 cups water in a pan over medium heat; boil for 10 minutes; set aside.
- Dissolve coffee granules in 1 cup water in a pan over medium heat; boil for 8 minutes.
- Combine sugar mixture and coffee mixture; cool to room temperature.
- Stir vodka and vanilla into cooled coffee mixture.
- Store in sealed, decorative bottles.

- Add vodka and remove from heat.

- Combine the brown sugar, granulated sugar and water in a small sauce pan. Simmer for 10 to 15 minutes until sugar is dissolved.
- Remove from the heat. Stir in the coffee. Allow to cool completely.
- Pour into a large plastic container with a lid. Add the vodka, vanilla flavoring and vanilla bean.
- Cover and let stand for two to three weeks or until fully aged. Kahlua, when properly stored, can last safely for up to a few years.
