3/4 cup vegetable oil
1 large egg
3 teaspoons vanilla extract, divided usage
1 cup firmly packed brown sugar
1/2 cup granulated sugar
2 ounces squares semisweet baking chocolate, melted
2 cups all-purpose flour
1 1/3 cups unsweetened cocoa powder, divided usage
1 tablespoon baking soda
1/2 teaspoon salt
1 cup warm water
1 1/4 cups daisy brand sour cream, divided usage
1/2 cup softened butter
3 cups powdered sugar
1/4 cup 2% low-fat milk

Steps:

  • Heat the oven to 350 degrees.
  • Grease and flour 2 8-inch round baking pans; set aside.
  • In a large mixer bowl add the vegetable oil, egg and 2 teaspoons vanilla extract.
  • Beat at medium speed until well mixed (1 minute).
  • Add the brown sugar and granulated sugar; continue beating until well mixed (1 minute).
  • Add the melted chocolate, 1 cup of the flour, 2/3 cup of the cocoa powder, the baking soda and salt. Beat at low speed until mixed.
  • Add 1/2 cup of the water; beat at low speed until mixed.
  • Add the remaining 1 cup flour and 1/2 cup water; beat at low speed until mixed, scraping the sides of the bowl as necessary.
  • Beat at medium speed for 2 minutes.
  • Beat in 1 cup of the sour cream until mixed.
  • Pour the batter evenly into the pans.
  • Bake for 30 to 35 minutes or until a toothpick inserted in the center comes out clean.
  • Remove the cake pans from the oven and cool in the pans for 10 minutes.
  • Remove the cakes from the pans; cool completely.
  • Meanwhile, in a medium bowl, beat the butter at high speed until creamy (about 1 minute).
  • Add 2/3 cup cocoa powder, 1 teaspoon vanilla and 1 cup powdered sugar.
  • Beat the frosting at low speed until mixed.
  • Add the remaining 2 cups powdered sugar, 1/4 cup sour cream and milk; beat at low speed until mixed, scraping the sides of the bowl as necessary.
  • Beat at medium speed until smooth and creamy.
  • Place one cake, rounded side down, on the serving plate.
  • Spoon and spread 1 cup of the frosting over the cake.
  • Place the second cake, rounded side up, over the frosting.
  • Frost the sides and top of the cake with the remaining frosting.
  • Garnish if desired.

2 large eggs, room temperature
1 cup sugar
1 teaspoon vanilla extract
1 cup cake flour
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup 2% milk
2 tablespoons butter
FROSTING:
3/4 cup packed brown sugar
1/2 cup butter, melted
2 tablespoons half-and-half cream
1 cup sweetened shredded coconut

Steps:

  • Preheat oven to 350°. In a large bowl, beat eggs, sugar and vanilla on high until thick and lemon-colored, about 4 minutes. Combine flour, baking powder and salt; add to egg mixture. Beat on low just until combined. Heat milk and butter in a small saucepan until butter melts. Add to batter; beat thoroughly (the batter will be thin). Pour into a greased 9-in. square baking pan. Bake until cake tests done, 20-25 minutes. Cool slightly. For frosting, blend all ingredients well; spread over warm cake. Broil about 4 in. from the heat for 3-4 minutes or until the top is lightly browned.

Mom made this cake often. Its quick, easy, and so good. We all loved it and it was always gone before it got cool.

CAKE:
1 Tbsp butter
1/2 c milk
1 c flour
1 tsp baking powder
1/2 tsp salt
2 eggs
1 c sugar
1 tsp vanilla
TOPPING:
2 Tbsp softened butter
5 Tbsp brown sugar
2 Tbsp sour cream
1 c flaked coconut
1 c chopped nuts

Steps:

  • 1. CAKE: In a small saucepan bring milk and butter to a boil. Set aside to cool a bit, while mixing the other ingredients. In a large bowl, sift together flour, baking powder and salt. In a separate bowl beat eggs until thick. Add sugar and vanilla. Stir egg mixture into milk and butter mixture. Slowly add these liquid ingredients to the flour mixture - stirring as mixtures are combined. Beat well. Pour batter into shortening greased 9" square cake pan. Bake at 375 degrees for 25-30 minutes.
  • 2. TOPPING: Cream together butter and brown sugar. Stir in sour cream. Mix in nuts and coconut. Spread over cake. Brown Lazy Daisy Cake under broiler until topping is slightly toasted on top.
