Steps:

  • Soak Knox gelatine in cold water.
  • Heat milk, but do not boil.
  • Remove from heat, and add gelatine, sugar, vanilla extract and salt.
  • Cool and add cream.
  • Chill 5 to 6 hours.
  • Pour into a 4 to 6-quart ice cream freezer can.
  • Process as per manufacturer's instructions.

1/2 gallon vanilla ice cream (soft but not melted)
0.5 (12 ounce) container cool whip frozen whipped topping, thawed
20 Oreo cookies, FINELY crushed
1/4 cup melted butter

Steps:

  • Prepare a 13 x 9-inch pan.
  • For the crust; in a bowl combine the crust ingredients until well blended.
  • Press gently into the bottom of the baking dish.
  • Place one 20-ounce bag of sandwich cookies in a food processor, then process until coarsely crushed (do not crush until fine) remove a little less than half of the crumbs to sprinkle on top of cake (or save them for the next time you make the cake!).
  • In a bowl mix 1/2-gallon of the softened ice cream with the coarsely crushed cookies.
  • Fold in half of the container Cool Whip topping until combined.
  • Transfer and spread over the cookie crust.
  • Sprinkle the reserved crushed sandwich cookies over the top.
  • Freeze for a minimum of 5 hours or until completely frozen.
  • If you are planning to freeze longer then this must be covered tightly with foil or it will pick up any freezer odors.

4 cups of canned regular unsweetened coconut milk (use 2 full cans plus the solid part of the 3rd can of coconut milk)
1/4 cup high quality unrefined, organic coconut oil
1/2 cup Stevia Truvia
1 pinch salt
5 large egg yolks
2 teaspoons good vanilla extract

Steps:

  • In a medium saucepan set over medium-low heat, whisk together the coconut milk, coconut oil, truvia, and salt. Bring the mixture just to a boil.
  • While the coconut mixture is heating, whisk the egg yolks until pale and aerated.
  • Once the coconut mixture has come to a slight boil, whisk about 1/3 of the mixture into the yolks.
  • Add another 1/3 of the mixture to the yolks, whisking quickly, then return the combined mixture to the saucepan.
  • Using a wooden spoon, stir the mixture constantly over low heat until it thickens slightly and coats the back of the spoon, about 2-3 minutes. Do not boil or the eggs can coagulate.

When you do serve it, let it sit out for about 20 minute to soften slightly.

I made Horchata De Almendra (Almond Horchata) milk from here on zaar to make this non dairy ice cream! Great for the lactose intolerant! And full of almond flavor. Be sure to use sweetened almond milk as in these 2 recipe #230449 or recipe #229086 because there is no additional sugar in this recipe. Strain it well so it is smooth. or if not it will have a little texture. The term 'coat a spoon' is a technique used mainly as a way to test when an egg-based custard or sauce is done. A spoon, usually wooden, is placed in the custard and, when the spoon is raised, the film of custard on the back of the spoon will stay in place even when you draw a line with your finger through the middle of the custard.

1 teaspoon vanilla extract
1/2 cup Amaretto
5 egg yolks
2 ounces semisweet chocolate, chopped

  • In a food processor or mixer beat the egg yolks until light and fluffy (about two minutes); gradually pour the hot almond milk into whipped egg yolk mixture making sure you keep whisking constantly so the eggs don't curdle. .
  • Place the bowl over a saucepan of simmering water and, stirring constantly with a wooden spoon, cook until the custard thickens enough that it coats the back of a spoon (170 degrees F) (77 degrees C). (Microwaving is fine to as long as you watch it.).
  • Immediately remove the custard from the heat and continue to stir the custard for a few minutes so it does not overcook. At this point stir in the chocolate till melted, vanilla extract and the Amaretto. Cover and let cool to room temperature and then refrigerate the custard until it is completely cold (several hours or overnight).
  • Transfer the cold custard to the container of your ice cream machine and process according to the manufacturer's instructions.
  • Just before removing ice cream add toasted nut to mix inches Then transfer the ice cream to a chilled container and store in the freezer. .
  • If the ice cream becomes too hard place in the refrigerator for about 30 minutes before serving so it can soften.
  • Garnish with chocolate covered almonds.

2 quarts chocolate ice cream, freshly churned or 2 quarts softened ice cream
1 recipe hot fudge, prepared and cooled (I used a jar)
24 Oreo cookies, finely chopped
2 quarts vanilla ice cream, freshly churned or 2 quarts softened ice cream
2 cups heavy cream
4 tablespoons granulated sugar
2 teaspoons vanilla extract

Steps:

  • Lightly butter a 9 inch springform pan.
  • Spread the chocolate ice cream into an even layer in the bottom of the springform pan.
  • Place in the freezer for 30 minutes. Spread the hot fudge sauce over the chocolate ice cream (if it had been chilled, you'll need to rewarm briefly), then sprinkle the chopped Oreo cookies, pressing lightly so that they adhere to the hot fudge.
  • Return to the freezer for at least 30 minutes.
  • Lastly dollop the vanilla ice cream over the chopped Oreos and gently spread into an even layer. Freeze for at least 8 hours or overnight.
  • At least 1 hour and no more than 12 hours before serving, unmold the cake. To release the cake from the pan, invert the cake onto a plate or cardboard round the same size and wrap a hot kitchen towel around the cake pan, keeping it there for 30 seconds, or until the cake loosens, and slide the pan off.
  • Remove the bottom of the pan. Top with a serving plate and turn the cake right side up. Return to the freezer for at least 10 minutes.
  • While the cake is in the freezer, make the whipped cream. Combine the heavy cream, sugar, and vanilla extract in the bowl of a stand mixer.
  • Using the whisk attachment, whip on medium high speed until the cream is light and fluffy and holds a medium to firm peak, 2 to 3 minutes.
  • Spread the whipped cream on the cake, working quickly so that the ice cream doesn't melt. If it gets soft, just pop it back into the freezer for 5 minutes. Decorate with sprinkles on top, if desired.
  • Remove the cake from the freezer 5 minutes before serving to soften it gently. A hot, dry knife will yield the cleanest cuts. Dip your knife in a glass of hot water, wipe it clean with a towel and cut a slice. Repeat between every slice.

1 lb blanched almond
8 cups water
2 1/2 cups sugar
2 tablespoons grated lemon zest
1 cinnamon stick

Steps:

  • In a blender or food processor, very finely grind the almonds. Use the pulse function and watch carefully. You do not want the nuts to release too much oil, which will turn them into nut butter.
  • In a heavy saucepan, combine the water, sugar, lemon zest, cinnamon stick, and half of the almonds.
  • Place over high heat and bring to a boil, stirring constantly.
  • Decrease the heat to medium and add the rest of the almonds, continuing to stir.
  • As soon as the mixture boils again, remove from the heat and let cool completely.
  • Transfer the cooled mixture to an ice-cream maker and freeze according to the manufacturer's instructions. If you do not have an ice-cream maker, transfer the mixture to a 4-cup container (a glass, stainless-steel, or plastic bowl will do) and place in the freezer for about 1 hour, or until half frozen.
  • During this hour, remove the ice cream from the freezer every 5 to 10 minutes and beat it with a whisk to prevent ice crystals from forming.
  • After the first hour, return the ice cream to the freezer and leave it there for at least 2 hours, or until fully frozen.

⅓ cup sugar
½ cup fresh baby spinach, loosely packed
½ teaspoon peppermint extract
14 oz coconut cream, chilled
1 tablespoon refined coconut oil, melted
⅓ cup cacao nibs, plus more for garnish

Steps:

  • Line a 12-cup muffin tin with paper liners.
  • In a small pot over medium heat, whisk together the coconut milk and sugar. Cook for 20-25 minutes, until thickened and reduced by nearly half. Remove the pot from the heat and let cool completely, about 20 minutes.
  • Once cooled, transfer the coconut milk mixture to a high-speed blender and add the spinach and mint extract. Blend on high speed for 30-60 seconds, until the spinach is completely broken down and the mixture has a minty green hue.
  • Add the coconut cream to a chilled metal bowl. Using an electric hand mixer, beat the coconut cream on high speed for 3 minutes, until soft peaks form. Add the melted coconut oil and briefly whip to combine.

1 (7 g) envelope unflavored gelatin
1/4 cup cold water
1 cup milk
1 cup sugar
1 teaspoon vanilla
1/4 teaspoon salt
1 1/2 cups heavy cream

Steps:

  • Sprinkle the gelatin over water and let stand 5 minutes.
  • Meanwhile, heat the milk to almost a simmer over medium-low heat.
  • Remove from heat.
  • Stir in the sugar, vanilla, and sugar with a wire whisk until the sugar is completely dissolved, at least 2 minutes.
  • Stir into the gelatin mixture and let cool.
  • Stir in the cream. Cover and refrigerate for 6 hours.
  • Transfer to an ice cream maker and process according to the manufacturer's directions for about 20 minutes or until creamy.
