WORLD'S BEST GF, DAIRY-FREE GERMAN PANCAKES
This is not the German potato pancakes. This is a one pan meal. Using Worlds Best German Pancakes #258828, I tweaked it for our dietary needs and it worked wonderfully! One more kid-friendly keeper.

Steps:
- Preheat oven to 400°F.
- In a 9x13 pan, melt oil in oven.
- In a medium bowl mix milk, flour, salt and eggs.
- When oven is at 400°F, take out pan and pour in mixture.
- Cook for 20-25 minutes or until fluffy.
- Serve with desired toppings. We like syrup.

- Place the eggs, sugar, flour and milk into the container of a blender. Process until smooth on low speed.
- Heat a large skillet or griddle over medium heat. Pour batter about 1/4 cup at a time (or more for larger pancakes). Tilt pan to achieve a round shape. Heat until golden, then flip and brown on the other side. Serve immediately with syrup, or fresh berries and whipped cream.

Steps:
- Combine milk and lemon juice in a bowl and set aside to sour, about 5 minutes. Add beaten egg and melted butter; stir to combine.
- Combine spelt flour, sugar, baking powder, baking soda, and salt in a large bowl. Stir gently into milk mixture until just combined; batter will be lumpy.
- Heat a lightly oiled griddle over medium-high heat. Drop batter by large spoonfuls onto the griddle and cook until bubbles form and the edges are dry, 3 to 4 minutes. Flip and cook until browned on the other side, 1 to 2 minutes. Repeat with remaining batter.
