These are truly world famous. I have made them for guests from England and the Netherlands as well as from Nova Scotia. I remember the first time I ever made them. I was a fairly newly wed when my husband asked me for pancakes. I very sweetly replied, " I can't make pancakes, I don't have any pancake mix." To which my husband answered, "Don't you have a cook book?" Thus begun my obsession of cooking things from scratch. ( I was 14 when I learned you could make a cake from scratch).

Number Of Ingredients 6

2 eggs
1 cup milk (I prefer buttermilk)
1 cup flour
1 tablespoon baking powder
1 teaspoon sugar
1/2 teaspoon salt

Steps:

  • Preheat griddle.
  • Beat eggs and milk together.
  • Add dry ingredients and beat well.
  • Pour on griddle.
  • Cook until bubbles appear and flip over.

This secret family pancake recipe was passed down from my grandfather. He fed a family of 7 (including 4 growing boys!) on these pancakes, and refused to give anyone the recipe until he finally relinquished it to my mother (his daughter-in-law) before he passed away. It is a long-standing family favorite!

1 cup all-purpose flour
¼ cup white sugar
1 tablespoon baking powder
¼ teaspoon salt
1 cup milk, at room temperature
1 egg, at room temperature
1 tablespoon oil
2 teaspoons oil, or as needed

Steps:

  • Combine flour, sugar, baking powder, and salt in a bowl; make a 'well' in the center of the flour mixture. Pour milk, eggs, and 1 tablespoon oil into the well. Mix until well moistened.
  • Place a griddle over medium-high heat; sprinkle a few drops of water onto the griddle. If the droplets bounce, the griddle is ready; add 2 teaspoons oil.
  • Spoon batter onto the griddle; cook until bubbles form and the edges are dry, 3 to 5 minutes. Flip and cook until browned on the other side, 3 to 5 more minutes. Repeat with remaining batter.

1 cup all-purpose flour
3 tablespoons cornmeal
3 tablespoons quick-cooking oats
3 tablespoons sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
Dash ground nutmeg
1 large egg
1-1/2 cups buttermilk
2 tablespoons canola oil
1 teaspoon vanilla extract
1 cup fresh or frozen blueberries

Steps:

  • In a large bowl, whisk the first 8 ingredients. In another bowl, whisk egg, buttermilk, oil and vanilla until blended. Add to flour mixture; stir just until moistened (batter will be lumpy). Let stand 15 minutes., Lightly grease a griddle or large nonstick skillet; heat over medium heat. Stir blueberries into batter. Pour batter by 1/4 cupfuls onto griddle or skillet. Cook until bubbles on top begin to pop and bottoms are golden brown. Turn; cook until second side is brown.

1 cup all-purpose flour
1 ⅓ cups dry milk powder
1 teaspoon baking powder
1 ½ teaspoons baking soda
1 teaspoon salt
2 cups whole wheat flour
¾ cup white sugar
4 eggs, lightly beaten
3 cups water
¼ cup butter, melted
3 tablespoons vinegar

Steps:

  • In a large bowl, sift all-purpose flour, milk powder, baking powder, baking soda and salt. Stir in whole wheat flour. In a small bowl, combine sugar, eggs, water, butter and vinegar. Make a well in the flour mixture, and pour in the egg mixture. Mix until smooth.
  • Heat a lightly oiled griddle or frying pan over medium heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Cook until pancakes are golden brown on both sides; serve hot.

1 1/2 tsp baking powder
3/4 cup milk
1 1/2 tbsp sugar
3/4 cup sour cream
dash salt
1 1/4 cup flour
3/4 cup butter, melted

Steps:

  • Combine yolks, milk, and sour cream. Stir well. Combine dry ingredients and gradually add to sour cream mixture, stirring until smooth. Stir in melted butter. Beat eggwhites until stiff peaks form. Gently fold into four mixture. 1/4 c batter = 1 pancake Yeilds 16 pancakes
