4 tablespoons (1/2 stick) unsalted butter
1 large yellow onion, cut into 1/8-inch dice
1 tablespoon minced garlic
3 tablespoons all-purpose flour
4 cups whole milk
1 teaspoon mild paprika
1/2 teaspoon ground nutmeg
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
3/4 cup grated extra-sharp Cheddar
3/4 cup grated Wisconsin asiago
3/4 grated dry Jack cheese
1 pound elbow macaroni, cooked and drained
2 plum tomatoes, sliced
1/2 cup Seasoned Bread Crumbs, recipe follows
1 tablespoon chopped fresh parsley leaves
1 tablespoon chopped fresh thyme leaves
1 tablespoon chopped fresh chives
6 slices crusty bread, cut into 1-inch cubes (about 2 cups)
4 tablespoons (1/2 stick) unsalted butter
4 garlic cloves, minced
3 tablespoons minced fresh herbs, such as basil, parsley, thyme, or oregano
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper

Steps:

  • Preheat the oven to 400 degrees F.
  • Melt the butter in a large pot over medium heat. Add the onions and garlic and cook until they are softened, about 2 minutes. Whisk in the flour and cook, stirring constantly, until the mixture turns light brown, about 3 minutes. Gradually whisk in the milk. Add the paprika, nutmeg, salt, and pepper. Reduce the heat to low and cook, stirring, until the sauce is thickened, about 5 minutes. Add the cheeses and stir until they are melted. Add the macaroni and stir until the noodles are thoroughly coated. Remove from heat. Butter two 6-inch cast iron skillets or one 12-inch skillet. Transfer the macaroni mixture into the skillets. Top with the sliced tomatoes. Sprinkle the bread crumbs on top. Bake until the cheese is bubbling and golden brown, about 30 minutes. Garnish with chopped herbs.
  • Preheat the oven to 300 degrees F. Spread the cubes of bread on a baking sheet and toast them in the oven until golden brown, about 15 minutes.
  • Place the butter, garlic, and herbs in a small saucepan and heat over low heat until the butter is melted. Toss the toasted bread with the butter mixture in a large bowl and sprinkle with salt and pepper. Process the bread in 2 batches in a food processor until you have fine crumbs. Sift the crumbs through a mesh strainer and process the larger crumbs again until all are fine. (If you do not have a food processor, crush the bread on the baking sheet with a rolling pin.)

3-1/2 cups uncooked elbow macaroni (about 12 ounces)
1/4 cup butter, cubed
1/4 cup all-purpose flour
1 teaspoon salt
3/4 teaspoon ground mustard
1/2 teaspoon pepper
Few dashes hot pepper sauce
3-1/2 cups whole milk
5 cups shredded cheddar cheese, divided

Steps:

  • Cook macaroni in boiling water until almost tender; drain. Meanwhile, in a Dutch oven, melt butter. Stir in the flour, salt, mustard, pepper and pepper sauce until smooth. Cook for 1 minute or until bubbly. Stir in the macaroni, milk and 4 cups cheese. , Transfer to an ungreased 13x9-in. baking dish. Cover and bake at 350° for 45-50 minutes or until bubbly. Uncover; sprinkle with the remaining cheese. Let stand for 5 minutes before serving.

I grew up on this recipe - it was a family favourite and I now make it for my husband and children and they all love it, too. We like things spicy, so I've added cayenne powder to my version.

2 -3 cups macaroni noodles, uncooked
1/4 cup hard butter or 1/4 cup margarine
1/4 cup flour
3 cups milk
2 cups grated cheddar cheese, divided
3/4 teaspoon salt
3/4 teaspoon black pepper
3/4 teaspoon cayenne powder
1/2 teaspoon dry mustard
3/4 cup dry breadcrumbs or 3/4 cup crushed unsalted cracker

Steps:

  • Cook and drain macaroni; rinse with cold water.
  • Meanwhile, melt butter or margarine either in a pot on the stove or in a microwavable container in the microwave.
  • Stir in flour.
  • Add milk and cook, stirring frequently (5 - 6 minutes in the microwave, stirring every minute) until thickened.
  • Add seasonings and continue cooking on stove or in microwave for 1 - 2 minutes longer.
  • Add 1 1/2 cups cheese and stir until melted (may need to be cooked for 1 more minute to melt the cheese).
  • Grease a large casserole dish and pour in macaroni noodles and cheese sauce, stirring to mix. My dad always layered the noodles and sauce, so that's an option, too.
  • Sprinkle the breadcrumbs on top, followed by the remaining 1/2 cup cheese.
  • Bake at 375 for 25 - 30 minutes, or until mixture is heated through and the cheese on top is completely melted.

My Grandmother's delightful and VERY TASTY recipe for macaroni in cheese, which is FAR better than the kind right out of the box. Our whole family enjoys this recipe, especially the kids. She often has to make twice the recipe to satisfy just my grandpa and uncles!

2 cups macaroni (uncooked)
1 1/4 cups cheddar cheese (shredded)
2 eggs
2 1/2 cups milk
1/4 teaspoon pepper
1 teaspoon salt
paprika

Steps:

  • Cook macaroni until soft.
  • Use a large roast-pan or bowl which you would cook casseroles in the oven, and put a thin layer of macaroni upon the bottom, and then spread cheese over that layer, and repeat this layering process until the cheese and macaroni are gone (makes about 3-4 layers each).
  • Mix salt, pepper, eggs and milk together.
  • Pour into layered macaroni & cheese, until filled at the top (or until it is gone).
  • Sprinkle w/ paprika on top.
  • Place in oven, Bake at 350 degrees for about 45 minutes (covered).

Mom's Macaroni and Cheese image

Tender pasta is smothered in a creamy, cheesy sauce for a down-home casserole that always satisfies.

1 1/2 cups uncooked elbow macaroni (5 oz)
2 tablespoons butter or margarine
1 small onion, chopped (1/4 cup)
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 cup Gold Medal™ all-purpose flour
1 3/4 cups milk
6 oz American cheese loaf, cut into 1/2-inch cubes

Steps:

  • Heat oven to 375°F. Cook and drain macaroni as directed on package using minimum cook time.
  • Meanwhile, in 2-quart saucepan, melt butter over medium heat. Cook onion, salt and pepper in butter, stirring occasionally, until onion is crisp-tender.
  • In small bowl, mix flour and milk until smooth; stir into onion mixture. Heat to boiling, stirring constantly. Boil and stir 1 minute; remove from heat. Stir in cheese until melted. Stir in macaroni. Into ungreased 1 1/2-quart casserole, spoon macaroni mixture.
  • Bake about 30 minutes or until bubbly and light brown.
