DAD'S BARBECUE SAUCE

My father was the cook in the family. Any time we would go out to eat, he would come home and try to make a copy cat version. This is his barbecue sauce. I have never purchased any in the store because none of it comes close to this flavor. Don't let the long list of ingredients scare you. They are standard pantry items. It's easy to double the ingredients so you will have some always on tap!

2 teaspoons bacon fat or 2 teaspoons peanut oil
1 medium shallot, chopped fine
2 teaspoons soy sauce
4 teaspoons Worcestershire sauce
2 cups catsup
water
1/4 teaspoon black pepper
1 teaspoon lemon juice
1 teaspoon yellow mustard
3 -4 dashes garlic salt
3 -4 dashes lemon pepper
3 -4 dashes seasoning salt
3 -4 dashes paprika
2 teaspoons wine vinegar
10 dashes Tabasco sauce
2 teaspoons sweetened bread and butter pickle juice
2 teaspoons pickle juice

Steps:

  • In large pot, saute shallot in bacon fat till it turns glassy.
  • With heat on medium, add remaining ingredients.
  • Simmer til sauce bubbles. If necessary, add water to thin sauce to your desired consistency.
  • Pour up, refrigerate and enjoy!
  • This is excellent on chicken for the grill.

DAD'S BBQ SAUCE

This sauce was my departed FIL's. He was quite proud of his smoked pork. It was a day long process cooking the meat while this sauce simmered inside. He would shred the pork, place on a burger bun, drizzle with this sauce, plop on some coleslaw (Mayo base) put the lid on the bun, then wait for the compliments. They were never in short supply!

32 ounces white corn syrup
38 ounces barbecue sauce (any kind)
3 teaspoons cayenne pepper, heaping
1 teaspoon salt
1 teaspoon black pepper
2 1/2 cups brown sugar, packed
4 teaspoons cornstarch
2 cups water
1 cup red wine vinegar

Steps:

  • Dissolve cornstarch in water.
  • Place all ingredients in large pot and simmer at least 30 minutes.
  • Pureed fruit or fruit juice may be added.
  • This makes a large batch of sauce. Leftovers should be refrigerated. If I am having guests I'll send a small jar home with them if they like the sauce.

6 tablespoons tomato paste
1/4 cup Greek honey (Apipharm brand Thyme and Wild Flower)
1/4 cup steak sauce (A-1 brand only)
1/4 cup white vinegar
2 tablespoons buffalo wing sauce (Frank's brand)
2 tablespoons fresh lime juice
1 tablespoon pineapple juice
1 1/2 teaspoons mesquite liquid smoke flavoring
1 teaspoon fresh lemon juice
1 teaspoon fresh orange juice
1 teaspoon Worcestershire sauce (Lea & Perrin's brand only)
3/4 teaspoon fresh ground coarse black pepper
1/2 teaspoon garlic salt
1/2 teaspoon onion salt
1/2 teaspoon ground allspice
1/4 teaspoon ground cinnamon
1/4 teaspoon ground cumin
1/4 teaspoon ground ginger
1/4 teaspoon ground mustard

Steps:

  • WHISK all ingredients well in a medium saucepan: One 7 oz. jar Dynasty brand plum sauce, 6 tablespoons tomato paste, 1/4 cup Apipharm brand Thyme and Wild Flower honey, 1/4 cup A-1 steak sauce, 1/4 cup white vinegar, 2 tablespoons Frank's buffalo wing sauce, 2 tablespoons fresh lime juice, 1 tablespoon pineapple juice, 1 1/2 teaspoons mesquite liquid smoke flavoring, 1 teaspoon fresh lemon juice, 1 teaspoon fresh orange juice, 1 teaspoon Lea & Perrin's Worcestershire sauce, 1/2 teaspoon garlic salt, 1/2 teaspoon onion salt, 1/2 teaspoon ground allspice, 1/4 teaspoon ground cinnamon, 1/4 teaspoon ground cumin, 1/4 teaspoon ground ginger, 1/4 teaspoon ground mustard.
  • SIMMER sauce over low heat.
  • WHISK occasionally to refresh consistency.
  • REMOVE from heat after 30 minutes.
  • COOL barbecue sauce completely.

Whenever I prepare this great chicken, I fondly remember my father. He would make his "famous" chicken frequently for picnics and other functions.

2 cups white vinegar
1 cup canola oil
1 cup ketchup
1/2 cup tomato juice
2 to 3 tablespoons hot pepper sauce
1 tablespoon poultry seasoning
4-1/2 teaspoons salt
1-1/2 teaspoons pepper
3/4 teaspoon garlic powder
1 broiler/fryer chicken (3 to 4 pounds), cut up

Steps:

  • In a large bowl, combine the first nine ingredients. Reserve 1 cup for basting chicken; cover. Pour remaining marinade over chicken in a large roasting pan. Cover and refrigerate for 4 hours. , Drain; discard marinade. , Grill chicken, covered, over low heat, turning and brushing with reserved marinade several times, for 60-75 minutes or until juices run clear.

4 teaspoons brown sugar
1 tablespoon kosher salt
1 tablespoon chili powder
1 tablespoon rubbed sage
2 teaspoons black pepper
1 1/2 teaspoons garlic salt
1 1/2 teaspoons onion salt
1 1/2 teaspoons ground ginger
1 teaspoon ground celery salt
1 teaspoon ground mustard
1 teaspoon smoked paprika
1 teaspoon white pepper
1 teaspoon crushed rosemary
1 teaspoon ground leaf thyme
1 teaspoon hickory smoke salt
1/4 teaspoon ground allspice
1/4 teaspoon cayenne pepper
1/4 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1 pint barbecue sauce (Dad's Famous Barbecue Sauce)

Steps:

  • PREHEAT oven to 300°F.
  • COMBINE the RUB ingredients in a small bowl.
  • RUB mixture evenly over ribs (save any spare seasoning rub for another use).
  • POUR one inch of apple juice (or water) into a roasting pan; WRAP ribs with foil and place into pan, foil-seam up; PLACE foil-wrapped ribs into roasting pan; BAKE between 2 1/4 - 2 1/2 hours (replenish liquid in pan as needed).

  • BAKING METHOD: Preheat oven temp to 450°F Bake ribs unwrapped, top side down, for 8-10 minutes. SLIDE oven rack out carefully using oven mitts; TURN ribs over carefully with tongs; BASTE the top again with sauce; BAKE for a remainder of 8-10 minutes or until the sauce caramelizes and edges are lightly charred, without overcooking; ALLOW ribs to cool 10 minutes before serving.

1 1/2 tablespoons extra-virgin olive oil
1/2 Spanish onion, finely chopped
2 garlic cloves, minced
1 can (28-ounces) crushed tomatoes
1 canned chipotle chile, packed in adobo sauce, minced
1 1/2 tablespoons Worcestershire sauce
1 1/2 tablespoons cider vinegar
1/4 cup unsulfured molasses
Juice of 1/2 lemon
Coarse salt and freshly ground black pepper

Steps:

  • In a medium saucepan, heat oil over medium heat. Add onion and garlic. Cook, stirring, until onion is soft and translucent, about 5 minutes.
  • Stir in tomatoes, chile, Worcestershire, vinegar, molasses, and lemon juice. Simmer over medium-low heat until reduced by a fourth, stirring occasionally, about 45 minutes.
  • Working in batches, purée sauce in a blender. Season with salt and black pepper. Refrigerate in a jar up to 2 weeks.
