DAD'S BANANA NUT BREAD
My dad made this bread for years to the delight to our family. Pair it with a dish of fruit and a cup of coffee for breakfast. Yum! The flax seed meal gives a great texture without altering the flavor.

Steps:
- Preheat an oven to 325 degrees F (165 degrees C). Grease a 9x5-inch loaf pan, or line a muffin pan with cupcake liners.
- In a mixing bowl, beat the butter and sugar with an electric mixer until light and fluffy.
- Beat in the eggs one at a time, followed by the bananas.
- Mix in the self-rising flour and flax seed meal until just incorporated; fold in the walnuts.
- Pour batter into the prepared pan.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 20 minutes for muffins, or 1 hour for a loaf. Cool in the pan for 10 minutes before removing to cool completely on a wire rack.

DAD'S BREAD PUDDING
The Best Bread Pudding. This is a good firm bread pudding. Not a soggy goopy mess, and not too dry either. Adapted from my own Father's recipe I consider this restaurant quality bread pudding. Can be made with raisins but most people seem to like it without. Keeps for days in the refrigerator and reheats very quickly in the microwave.

Steps:
- In a mixing bowl whisk the eggs.
- Add the salt, sugar, vanilla, cinnamon, milk, (and raisins if using) and mix well.
- Remove the crust from the bread and gently tear into small pieces (don't squish the bread!).
- Add the pieces of bread in to the mixing bowl and fold in until well incorporated and everything is wet.
- Pour everything into a greased 8x8 glass baking dish.
- Bake at 350 for 1 hour or until set.
- Let stand a few minutes and serve warm with caramel sauce or ice cream!

- In a large bowl, dissolve yeast in 1/2 cup of water. Add sugar, oil, salt, rye or whole wheat flour, 3 cups all-purpose flour and remaining water; beat until smooth. Add enough remaining all-purpose flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. , Punch dough down. Divide in half. On a greased baking sheet, flatten each half to 1-in. thickness. This is a really yummy banana bread that the whole family loves. It is the best when warm, and microwaving it works fine to make it warm later on. This was my dad's recipe and it is the best!

Steps:
- Heat oven to 350 degrees.
- Grease bottom only of 9 by 5 or 8 by 4 inch loaf pan.
- In large bowl, blend the first 6 ingredients; beat for 1 minute at medium speed.
- Stir in remaining ingredient just until the dry ingredients are moistened.
- Pour batter into prepared pan.
- At 350 degrees, bake for 50 to 60 minutes or until toothpick inserted in center comes out clean.
- Cool for 5 minutes; remove from pan.
- Cut into slices and enjoy! They are great with butter on top!
DAD'S BREAKFAST BREAD
This is my dad's version of scones. It is a dough like cinnamon roll dough and it is fried in hot oil. Very good Sunday treat. Served with honey, jam or sprinkled with powdered sugar.

- In a large bowl, stir together the scalded milk, sugar, margarine and salt. In a small bowl, stir together the yeast and warm water. Let stand 10 minutes, or until foamy.
- Stir the yeast mixture into the milk mixture. Blend in the eggs. Mix in the flour one cup at a time to make a soft dough. Cover bowl and let rise in a warm place until double.
- Heat one inch of oil in a deep heavy skillet to 370 degrees F (180 degrees C). Form large handfuls of dough into flat pancake shapes and fry them in the hot oil, turning once, until golden brown on both sides. Remove from oil to drain on paper towels.

DAD'S GARLIC & WINE BREAD
Everyone who tries this LOVES it. I'm addicted to it. My Dad was quite a character and a great intuitive cook who never used a recipe. Lucky for me this was easy to replicate (unlike his Sunday morning crepes).

Steps:
- Preheat the oven to 400.
- Slice the bread almost all the way through in 1" - 1-1/2" slices. (You want the loaf to stay intact while baking but easy to separate once baked).
- Place bread in a jelly roll pan on a large enough sheet of aluminum foil that you can fold the sides up to contain the wine/butter mixture (you WANT the bread to sit in the wine/butter mixture -- Oh yes).
- Place a sliver of garlic between each slice.
- Melt butter in glass cup measure in microwave.
- Stir in an equal amount of red wine to the cup.
- Drizzle the wine/butter mixture between each slice and pour remainder over the top. If you double the recipe, you'll want to mix it again mid-pour as the wine & butter tend to separate.
- Bake at 400 for about 20 minutes. Bread is done with the top and especially the bottom of the bread is crusty. We remove the garlic before eating so as not to offend others the next day.
- If you don't like this, you'll be the first one who didn't.

DAD'S FAMOUS BANANA BREAD
By far one of the best banana breads I have ever had! Simple but well worth it! My dad will always make at least once a month. I've made a few changes from my dad's recipe by adding chocolate chips and some chopped nuts. This makes the banana bread even better, still great without those two items though. With any banana bread, make sure your bananas are over ripe or really bruised...this makes for the best bread. So the next time your bananas go bad, make some banana bread or freeze them for later. =)
