My wife and daughter have been yelling at me to write down my delectable creations. This BBQ sauce turned out so well it is worth putting up for sale. :) I cannot bring my self to do that.... :) When I went to post it on face book my daughter had it titled "Daddy's BBQ Sauce". So I went with it. :) TBO = Taste Bud Orgasm :)

2 quarts Heinz ketchup, and
1 cup Heinz ketchup
3 (6 ounce) cans heinz tomato paste
1 tablespoon Tabasco sauce
3 tablespoons lime juice
4 1/2 teaspoons liquid smoke
1/4 cup mustard
1 teaspoon Worcestershire sauce
1/4 cup jalapeno juice
3/4 cup molasses
1 tablespoon chicken base
1 tablespoon cumin
1/3 cup garlic, minced
2 tablespoons granulated garlic
1 tablespoon oregano
3 teaspoons celery seeds
1/8 teaspoon black pepper
1/2 teaspoon sage
4 bay leaves
1/4 cup folgers coffee
2 pinches crushed red pepper flakes
4 tablespoons granulated onion

Steps:

  • METHOD combine ingredients.
  • cook on low heat (in a nonstick pan), COVERED, for a couple of hours.
  • Stir occasionally.
  • This part of the recipe has a lot of flavor and just a little bit of heat. It is fine for those of you that cannot handle the heat.
  • Add more Crushed Red Pepper for more heat.
  • For more of a honey flavor add 1/2 CP honey.
  • You can add these ingredients after the sauce has been cooked. I would cook up the sauce as is then adjust for heat and or honey flavor.
  • On a side note If you want this to be truly vegetarian, replace the chicken base with Worcestershire sauce. Use an 1/8 of a cup total.
  • chill, use as needed. :).

Found this on line. This is South Carolina style barbecue sauce, meaning that it is vinegar and mustard based, as opposed to the ketchup and molasses based sauces of the mid- and southwest. It combination of sweet and tangy flavors bring out the absolute best in grilled pork or chicken.

1 cup prepared yellow mustard
1/2 cup sugar
1/4 cup light brown sugar
3/4 cup cider vinegar
1/4 cup water
2 tablespoons chili powder
1 -2 teaspoon black pepper
1/4 teaspoon cayenne
1/2 teaspoon soy sauce
2 tablespoons butter (a healthier choice use 2 tablespoons organic free range grass fed butter)
1 tablespoon liquid smoke (hickory flavoring)

Steps:

  • Mix all except soy, butter and smoke. Simmer 30 minutes. Stir in remaining ingredients and simmer for 10 more minutes. Vinegar taste may be very strong until completely cooled. Refrigerating overnight is best and allows flavors to blend.
  • Add a few drops of Louisiana Hot Sauce at the end if additional heat is desired.

BEST CAROLINA BBQ MEAT SAUCE

I can't take all the credit for this stuff. I have had to search, and snoop and experiment to get it right. (Thanks Big Daddy's!) But I've had barbeque in some of the best little places in the Carolina's, and this stuff rules there! Fantastic on pork! Or try brushing some on chicken as it finishes off the grill! Use fresh ground peppers for the best flavor. This will keep in fridge for a couple of weeks.

1 ½ cups prepared yellow mustard
½ cup packed brown sugar
¾ cup cider vinegar
¾ cup beer
1 tablespoon chili powder
1 teaspoon freshly ground black pepper
1 teaspoon freshly ground white pepper
½ teaspoon cayenne pepper
1 ½ teaspoons Worcestershire sauce
2 tablespoons butter, room temperature
1 ½ teaspoons liquid smoke flavoring
1 teaspoon Louisiana-style hot sauce, or to taste

Steps:

  • In a heavy non-reactive saucepan, stir together the mustard, brown sugar, vinegar, and beer. Season with chili powder and black, white, and cayenne peppers. Bring to a simmer over medium-low heat, and cook for about 20 minutes. DO NOT BOIL, or you will scorch the sugar and peppers.
  • Mix in the Worcestershire sauce, butter, and liquid smoke. Simmer for another 15 to 20 minutes. Taste, and season with hot sauce to your liking. Pour into an airtight jar, and refrigerate for overnight to allow flavors to blend. The vinegar taste may be a little strong until the sauce completely cools.
