This is a French-style spinach salad that should satisfy even the meat-lovers at the table. Features bacon lardons, which are simply crouton-size pieces of slab bacon, fried until crisp on the outside and chewy on the inside.

¼ pound slab bacon
1 tablespoon curry powder
3 tablespoons red wine vinegar
1 tablespoon prepared Dijon-style mustard
9 tablespoons vegetable oil
salt and pepper to taste
12 cups flat leaf spinach - rinsed, dried and stems removed
12 fresh mushrooms, sliced

Steps:

  • Trim the rind from the bacon and cut into 1 inch cubes. Place bacon in a large, deep skillet. Cook over medium high heat until brown and crispy. Cover and reduce heat to lowest setting to keep bacon warm.
  • In a small, dry skillet, toast curry powder over medium heat, stirring often, until fragrant, about 30 seconds. Remove from heat.
  • In a medium bowl, whisk together the vinegar and mustard. Add oil in a thin stream, whisking constantly, until the oil is completely incorporated. Add curry powder and whisk until smooth. Season to taste with salt and pepper.
  • In a large bowl, toss together the bacon, spinach, mushrooms and vinaigrette until evenly coated. Adjust salt and pepper to taste and serve immediately.

1 1/2 pound large carrots, trimmed and peeled (about 8 carrots)
2 firm pears (recommended: D'Anjou)
2 tablespoons chopped fresh parsley leaves
2 tablespoons white wine vinegar
1 tablespoon curry powder
2 teaspoons honey
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/4 cup extra-virgin olive oil

Steps:

  • Using a vegetable peeler cut the carrots lengthwise into thin ribbons or slices. Quarter, core, and stem the pears. Using a knife, slice into very thin strips. Place the carrot and pear slices in a large bowl with the chopped parsley.
  • In a blender combine the white wine, curry powder, honey, salt, and pepper and blend to combine. With the machine running add the olive oil. Pour the dressing over the carrots and pears. Toss to combine and serve immediately.

1 cup chicken broth, homemade or low-sodium canned
1 teaspoon curry powder
10 shallots, peeled and minced
2 tablespoons white peppercorns, cracked
6 teaspoons white-wine vinegar
2 tablespoons olive oil
42 thin slices prosciutto, chilled
42 large shrimp, peeled and deveined, tail intact
2 tablespoons all-purpose flour
1 tablespoon freshly ground white pepper

Steps:

  • Combine the chicken broth, curry powder, shallots and peppercorns in a small saucepan. Simmer over medium-high heat until reduced by half, about 10 minutes. Strain into a medium-size glass or ceramic bowl. For the vinaigrette, whisk in the vinegar and 4 teaspoons of the olive oil. Set aside.
  • Preheat the oven to 350 degrees. Wrap 1 slice of prosciutto tightly around each shrimp. Trim. Combine the flour and white pepper. Dust the shrimp with the pepper mixture. Heat the remaining olive oil in a large saute pan over high heat. Working in batches, add the shrimp and cook until golden, about 2 minutes on each side. Transfer cooked shrimp to a baking sheet.
  • Bake shrimp until opaque, about 3 minutes. Brush with vinaigrette. Serve.

1 pound medium red beets, washed and dried
1 pound medium Chiogga beets, washed and dried
1 pound medium yellow beets, washed and dried
1/2 cup olive oil
1/2 cup white-wine vinegar
2 tablespoons coarse salt
1 tablespoon sugar
Freshly ground pepper
6 sprigs fresh thyme
Curry Vinaigrette
1 Granny Smith apple

Steps:

  • Preheat oven to 425 degrees.
  • Place beets in a large bowl; add olive oil, vinegar, salt, and sugar. Season with pepper and toss to combine. Wrap each beet individually in parchment paper-lined aluminum foil, with some of the olive oil mixture and a sprig of thyme. Transfer to oven and roast until tender, about 2 1/2 hours.
  • Remove foil and let cool slightly before peeling. Using an apple corer, cut each beet into as many cylinder shapes as possible. Alternatively, cut beets into quarters. Place each variety of beet in individual bowls and toss each with some of the vinaigrette.
  • Using the julienne blade on a mandoline, carefully julienne apple.
  • Divide beets evenly between 4 serving plates. If beets are cylindrical, stand beets up on plate. Garnish with apple slices and drizzle with remaining vinaigrette. Serve immediately.

Two 10-to-12-ounce bone-in pork chops
Kosher salt and freshly ground black pepper
Zest of 1 lime
1 tablespoon coriander seeds, crushed
1 teaspoon crushed red pepper
1 1/2 tablespoons green curry paste
2 tablespoons rice wine vinegar
8 Persian cucumbers
1 to 2 fresh jalapenos or Fresno chiles, stemmed, seeded and thinly sliced
1 shallot, thinly sliced
1 cup cilantro leaves

Steps:

  • Preheat a grill or cast-iron grill pan to medium-high heat and oil the grates.
  • Brush the pork chops with oil, then sprinkle them all over with salt, pepper, the lime zest, coriander and red pepper.
  • Grill the pork chops, flipping, until lightly charred and an instant-read thermometer inserted near the bone registers 135 degrees F, about 10 minutes; transfer to a plate and tent with foil.
  • Meanwhile, whisk the curry paste with the vinegar and oil in a serving bowl; season the dressing with salt and pepper.
  • Cut the cucumbers crosswise into manageable pieces. Lightly smash the pieces with the side of your knife or the palm of your hand, then tear them into bite-size chunks; transfer to the serving bowl. 1/4 cup plus 1 tablespoon extra-virgin olive oil
1/2 white onion, very thinly sliced
1 garlic clove, minced
1 tablespoon Thai green curry paste*
1 stalk fresh lemongrass, root ends trimmed, 1 or 2 tough outer leaves discarded from stalk, and roughly chopped
1 (13.5 ounce) can unsweetened coconut milk
1 cup white wine, preferably Sauvignon Blanc
1/4 cup heavy cream
2 tablespoons freshly squeezed lime juice (from 1 medium lime)
1/2 teaspoon sea salt
Fried ginger
1 cup vegetable oil
2 (2-inch) pieces fresh ginger (about 1 ounce total), peeled and very thinly sliced
1/4 teaspoon sea salt
Scant 1/8 teaspoon freshly ground black pepper
Hamachi
8 ounces fresh sushi-grade hamachi** from a reputable fishmonger, well-chilled and very thinly sliced
*Thai green curry paste is available at Asian markets and in the Asian foods section of some supermarkets.
**Ask your fishmonger for a hamachi filet that can be easily divided into 8 portions. Or, ask him to slice it for you. If hamachi is unavailable, sushi-grade ahi tuna makes a good substitute.

Steps:

  • Make coconut curry vinaigrette:
  • In large skillet over low heat, heat 1 tablespoon olive oil until hot but not smoking. Add onion and sauté until translucent and softened, about 8 minutes. Add garlic, curry paste, and lemongrass and continue cooking, uncovered, until aromatic, about 5 minutes. Add coconut milk and wine, increase heat to moderately high, and bring to boil. Reduce heat to moderate and simmer, stirring occasionally, until reduced by half, about 20 minutes. Stir in heavy cream, remove from heat, and let cool about 10 minutes. Using slotted spoon, remove lemongrass and discard. Transfer mixture to blender, add lime juice, and pulse until smooth, about 30 seconds (use caution when blending hot liquids). With motor on low, add remaining 1/4 cup olive oil in slow, steady stream and process until fully incorporated. Stir in salt and set aside.
  • Fry ginger:
  • In heavy medium saucepan over moderately high heat, heat vegetable oil to 300°F. Fry ginger, stirring occasionally, until light golden brown, about 5 minutes. Using slotted spoon, transfer ginger to paper towels to drain. Sprinkle with salt and pepper.
  • To serve:
  • Divide hamachi evenly among 8 chilled plates. Drizzle 1/4 cup vinaigrette over and around fish, sprinkle with fried ginger, and serve.

Pinch of saffron threads, crumbled
Salt
2 Granny Smith apples-peeled, cored and sliced 1/4 inch thick
4-6 tablespoons vegetable oil
1 teaspoon curry powder
3 tablespoons white balsamic vinegar
1 tablespoon toasted pine nuts
2 tablespoons golden raisins
2 tablespoons flat-leaf parsley (optional)

Steps:

  • Preheat the oven to 350°. Put the beets in a small roasting pan, cover with foil and bake for about 1 hour, or until tender. Peel the beets, then slice them 1/4 inch thick. Meanwhile, in a large saucepan, combine the apple juice and wine with the sugar, saffron and a pinch of salt. Bring to a boil. Strain in a fine strainer and return to the saucepan. Bring back to a boil and add the apples. Simmer over moderate heat for 3 minutes, or until the apples are crisp-tender. Drain the apples and discard the liquid. In a small skillet, heat 3 tablespoons of the vegetable oil. Add the curry powder, remove the skillet from the heat and let stand for 10 minutes. Stir in the remaining 1-3 tablespoons of vegetable oil, along with the vinegar, pine nuts and raisins; season the dressing with salt. In a medium bowl, toss the apples with half of the dressing and arrange on a serving platter. Put the beets in the bowl and toss with the remaining dressing. Arrange the beets on the platter, garnish with the parsley and serve. Make Ahead The whole roasted beets can be refrigerated for up to 2 days.

1 lb med red beets, washed and dried
1 lb med Chiogga beets, washed and dried
1 lb med yellow beets, washed and dried
1/2 c Olive oil
1/2 c white wine vinegar
2 T coarse salt
1 T sugar
Pepper
6 sprigs fresh thyme
1 Granny Smith apple
Curry Vinaigrette
6 T grape seed oil
1 t Madras curry
3 T white balsamic vinegar
Coarse Salt
2 T golden raisins, chopped
1 T toasted pine nuts

Steps:

  • Beets: Preheat over 425. Toss beets with olive oil, vinegar, salt and sugar. Season with pepper. Wrap each beet in parchment lined foil and roast until tender, 2 1/2 hours. Peel beets and cut into pieces. Toss each variety with vinaigrette. Julienne the apple. Divide between 4 plates. Garnish with applied slices and drizzle with vinaigrette. Vinaigrette in a saucepan, heat 3 T of grape seed oil with curry over med-low heat. Remove from heat and let stand for 20 min. Stain into a small bowl and add remaining 3 T of oil, vinegar, season with salt and whisk to combine. Stir in raisins and pine nuts.
