CAULIFLOWER & TOFU CURRY



Cauliflower & Tofu Curry image

Cauliflower, garbanzo beans and tofu are subtle on their own, but together they make an awesome base for curry. We have this recipe weekly because one of us is always craving it. It's also a great dish if you're new to tofu. -Patrick McGilvray, Cincinnati, Ohio

Number Of Ingredients 15

1 tablespoon olive oil
2 medium carrots, sliced
1 medium onion, chopped
3 teaspoons curry powder
1/4 teaspoon salt
1/4 teaspoon pepper
1 small head cauliflower, broken into florets (about 3 cups)
1 can (14-1/2 ounces) fire-roasted crushed tomatoes
1 package (14 ounces) extra-firm tofu, drained and cut into 1/2-inch cubes
1 cup vegetable broth
1 can (15 ounces) garbanzo beans or chickpeas, rinsed and drained
1 can (13.66 ounces) coconut milk
1 cup frozen peas
Hot cooked rice
Chopped fresh cilantro

Steps:

  • In a 6-qt. stockpot, heat oil over medium-high heat. Add carrots and onion; cook and stir until onion is tender, 4-5 minutes. Stir in seasonings., Add cauliflower, tomatoes, tofu and broth; bring to a boil. Reduce heat; simmer, covered, 10 minutes. Stir in garbanzo beans, coconut milk and peas; return to a boil. Reduce heat to medium; cook, uncovered, stirring occasionally, until slightly thickened and cauliflower is tender, 5-7 minutes., Serve with rice. Sprinkle with cilantro.

BAKED CURRY TOFU

I didn't have much in the fridge for dinner one night, aside from tofu, ketchup and curry powder, and so I decided to put it all together. It ended up tasting great, and my daughter loves it!

1/4 cup ketchup
1 tablespoon unsalted butter, melted
1 tablespoon maple syrup
1/2 teaspoon curry powder
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1 block extra-firm tofu, well-drained and cut into 1-inch cubes
Kosher salt and freshly ground black pepper
Serving suggestions: cooked brown rice, steamed broccoli and cubed mango

Steps:

  • Preheat the oven to 425 degrees F and line a baking sheet with parchment paper.
  • In a large bowl, mix together the ketchup, butter, maple syrup, curry powder, garlic powder and onion powder. Add the tofu and gently toss to combine, taking care not to break up the pieces, and season with salt and pepper.
  • Arrange the tofu on the prepared baking sheet. Bake until the tofu is nicely browned and crispy and the sauce has caramelized, about 30 minutes. Serve over brown rice with steamed broccoli and fresh cubed mango.

TOFU CURRY

Make a quick and summery veggie curry with tofu and spinach for an easy midweek meal. Serve with lime wedges and wholemeal chapatis.

1tbsp rapeseed oil
tofu, cut into 2cm cubes
2 red onions, thinly sliced
1½ ginger and garlic paste
1½ ground turmeric
400ml light coconut milk
2 limes, 1 juiced, 1 cut into wedges to serve
160g baby spinach
10g coriander, most roughly chopped, reserve a few whole leaves to serve
4 wholemeal chapatis, to serve

Steps:

  • Heat 1/2 tbsp of the oil in a large, wide, non-stick frying pan over a medium-high heat. Fry the tofu with a pinch of salt for 5 mins, turning every couple of minutes until golden brown. Remove to a plate using a slotted spoon.
  • Add the remaining oil to the pan, then fry half the onions for 5 mins, stirring often until golden brown. Add the ginger and garlic paste, stir-frying for a minute, then add the turmeric and cook for another 30 seconds to release the flavour.
  • Stir in the coconut milk, then return the tofu to the pan along with the lime juice and 100ml water, and simmer for 5 mins. Stir in the spinach and the coriander, and cook for 1 min until wilted, then season.
  • Serve the curry in bowls topped with the coriander leaves and the remaining onion, the lime wedges for squeezing over, and the chapatis on the side.

This is like a chicken and broccoli casserole except it uses tofu. It's fast, easy, and delicious!

1 (14 ounce) package tofu, frozen and thawed
2 (16 ounce) packages frozen chopped broccoli
1 tablespoon extra-virgin olive oil, or as needed
2 cloves garlic, diced
2 (10.5 ounce) cans condensed broccoli cheese soup
¾ cup milk
1 (12 ounce) package dry bread stuffing mix
1 cup shredded Cheddar cheese
1 dash chili powder, or to taste
ground black pepper to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Slice tofu into 1/4-inch cubes.
  • Place frozen broccoli in a microwave-safe bowl with a few tablespoons water. Cover and microwave on high power until tender, 3 to 4 minutes. Drain.
  • Heat oil in a skillet over medium heat. Add garlic and cook until fragrant. Add tofu and fry for 3 to 5 minutes. Remove from the heat.
  • Empty condensed soups into a bowl and stir in milk. Mix in dry stuffing mix. Add broccoli, fried tofu, Cheddar cheese, chili powder, and pepper; mix to combine. Dump into a 9x13-inch casserole dish.
  • Cook in the preheated oven for 20 to 25 minutes. Let cool for 5 to 10 minutes before serving.

COCONUT RED CURRY WITH TOFU



Coconut Red Curry With Tofu image

This simple weeknight red curry relies on jarred or canned red curry paste for flavor, which you can find at larger supermarkets and specialty markets. Transfer leftover canned curry paste to a jar, top it with a little oil and store in the refrigerator for up to a month. Or freeze for longer storage. Feel free to substitute other vegetables for the mushrooms and snow peas, though you might have to increase the cooking time slightly if using something dense like carrot or cubed winter squash.

14 ounces extra-firm tofu
1 tablespoon peanut or safflower oil
1-inch ginger root, peeled and minced
2 shallots or 1 small onion, minced
2 garlic cloves, minced
1 Thai chile or 2 serrano peppers, seeded and thinly sliced
2 tablespoons chopped cilantro stems
8 ounces cremini mushrooms, quartered
1/2 teaspoon sea salt, more to taste
3 tablespoons prepared red curry paste
1 cup unsweetened coconut milk
2 teaspoons Asian fish sauce
Zest and juice of 1 lime
1 cup snow peas
Basil and/or cilantro leaves, for garnish
Brown or white rice, for serving

Steps:

  • Cut tofu into 1-inch slabs and place on paper towel-lined baking sheet. Cover with another layer of paper towels and place another baking sheet on top. Let sit for 20 minutes. Cut into 1-inch cubes.
  • Heat oil in a large skillet over medium high heat. Add ginger, shallots, garlic, chile and cilantro stems, and sauté until tender, about 5 minutes. Add mushrooms and sauté until golden brown and tender, about 5 minutes. Season with salt. Stir in curry paste and cook 2 minutes. Pour in coconut milk, scraping up any curry paste with a wooden spoon. Add fish sauce, lime zest and juice. Add tofu cubes and snow peas. Simmer until the sauce thickens slightly and the snow peas are tender, 7 to 10 minutes, stirring frequently. Taste and add more salt and/or fish sauce if needed.
  • Serve warm with brown rice and a scattering of torn basil and/or cilantro leaves on top.

When I was little, I got to choose what we had for dinner on my birthday. This tofu casserole was it! It's simply a super yummy comfort food.

1 (16 ounce) package penne pasta
3 tablespoons vegetable oil
1 (16 ounce) package firm tofu, drained and cubed
1 (10.75 ounce) can condensed cream of mushroom soup
1 cup milk
3 tablespoons curry powder
salt and ground black pepper to taste
2 (6 ounce) packages Muenster cheese, sliced

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Bring a large pot of lightly salted water to a boil. Add pasta and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes. Drain.
  • Heat oil in a saucepan over medium heat. Add tofu. Cook, stirring occasionally, until all sides are browned, 5 to 7 minutes. Add cream of mushroom soup, milk, curry powder, salt, and pepper. Stir until combined. Pour into a casserole dish; mix in pasta. Cover with Muenster cheese slices.
