Quinoa-and-Apple Salad with Curry Dressing image

As a side dish for supper or a main course for lunch, this salad gets its fresh taste and pretty color from curry powder and mint.

1/4 cup raw whole almonds
1 cup white quinoa
1 teaspoon honey
1 tablespoon finely chopped shallot
1 teaspoon curry powder
1/4 teaspoon coarse salt
2 tablespoons fresh lemon juice
Freshly ground pepper
2 tablespoons extra-virgin olive oil
2 tablespoons dried currants
1 small McIntosh apple, cut into 1/8-inch-thick wedges
1/4 cup loosely packed fresh mint leaves, coarsely chopped, plus more for garnish

Steps:

  • Preheat oven to 375 degrees. Spread almonds on a rimmed baking sheet; toast in oven until lightly toasted and fragrant, about 7 minutes. Let cool; coarsely chop nuts.
  • Rinse quinoa thoroughly in a fine sieve; drain. Bring 2 cups water to a boil in a medium saucepan. Add quinoa; return to a boil. Stir quinoa; cover, and reduce heat. Simmer until quinoa is tender but still chewy, about 15 minutes. Fluff quinoa with a fork; let cool.
  • Whisk together honey, shallot, curry powder, salt, and lemon juice in a large bowl. Season with pepper. Whisking constantly, pour in oil in a slow, steady stream; whisk until dressing is emulsified. Add quinoa, currants, apple, mint, and nuts; toss well. Garnish with mint.

1 teaspoon olive oil
1 teaspoon salt
1 tablespoon turmeric powder
1 teaspoon curry powder
2 cups uncooked couscous
3 cups water
1 ½ cups uncooked quinoa
1 tablespoon salted butter
2 tablespoons slivered almonds, or to taste
5 stalks celery, finely chopped
1 ½ cups finely shredded carrots
1 cup drained garbanzo beans
1 cup chopped fresh parsley
½ cup raisins
3 green onions, finely sliced
1 tablespoon minced preserved lemon
⅔ cup extra-virgin olive oil
⅔ cup apple cider vinegar
6 tablespoons honey
2 tablespoons turmeric powder
2 tablespoons curry powder, or more to taste
1 tablespoon dry vegetable soup mix
1 teaspoon salt, or to taste
½ teaspoon freshly ground black pepper

Steps:

  • Combine vegetable stock with 1 teaspoon olive oil and 1 teaspoon salt in a medium saucepan. Bring to a boil; add 1 teaspoon turmeric and 1 teaspoon curry powder. Stir in couscous and remove pan from heat. Cover and let sit until water is absorbed completely, about 15 minutes.
  • Meanwhile, bring water to a boil in a pot and add quinoa. Bring to a simmer, stirring occasionally. Reduce heat to medium-low, cover, and simmer until water is absorbed, about 15 minutes. Cover and let stand for a few minutes if there is liquid left in the pot.
  • Fluff couscous with a fork and place in a very large bowl. Mix quinoa into the bowl; allow to cool.
  • Melt 1 tablespoon butter in a skillet over medium-high heat. Saute almonds until toasted and golden brown, about 3 minutes. Let cool and add to the couscous and quinoa. Add celery, carrots, garbanzo beans, parsley, raisins, green onions, and preserved lemon. Stir to combine.
  • Combine 2/3 cup olive oil, vinegar, honey, 2 tablespoons turmeric, 2 tablespoons curry powder, vegetable soup mix, 1 teaspoon salt, and pepper in a bowl. Whisk together. Toss dressing over the couscous mixture, a little at a time, stirring to combine. Cover with plastic wrap and refrigerate to let the flavors develop, 8 hours to overnight.

1 ½ cups water
1 cup couscous
1 (15 ounce) can chickpeas, rinsed and drained
2 cups chopped tomatoes
2 red bell peppers, chopped
3 stalks celery, chopped
1 cup dried cranberries
½ cup chopped pecans
2 shallots, chopped
¼ cup freshly chopped parsley
1 tablespoon chopped fresh cilantro, or to taste
3 lemons, juiced
¼ cup curry paste (such as Patak's®)
4 teaspoons soy sauce
2 teaspoons white sugar
2 teaspoons sesame oil

Steps:

  • Bring 2 cups water and quinoa to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until quinoa is tender, 15 to 20 minutes.
  • Bring 1 1/2 cups water to a boil in a saucepan; remove from heat and stir couscous into the water. Cover saucepan and let stand until water is absorbed completely, about 10 minutes. Fluff couscous with a fork.

This hardy, flavorful lentil stew is very nutritious and filling. Even my kids love it, which is surprising because they are picky. It is both vegan and gluten-free, so just about everyone can enjoy it. I like to spice mine up with garlic-chile sauce on the side. If you don't grow your own tomatoes, ripe ones can be hard to find. Ask your local produce grocer to set aside their damaged and overripe tomatoes for you when they restock and you can get them for a bargain.

3 ½ cups water
1 tablespoon salt
2 tablespoons coconut oil
1 small onion, chopped
6 cloves garlic, minced
5 large tomatoes, chopped

1 (14 ounce) can coconut milk

¼ cup coconut powder
1 (4 inch) cinnamon stick
3 tablespoons curry powder
2 tablespoons ground coriander
2 cups red lentils
salt and pepper to taste

Steps:

  • Soak the quinoa in a bowl filled with cold water for 5 minutes, then drain using a fine mesh strainer, and rinse with running water. Set the strainer aside so the quinoa can drain, then bring 3 1/2 cups of water and 1 tablespoon of salt to a boil in a saucepan. Stir in the quinoa, cover, and reduce the heat to medium-low. Simmer until the quinoa has absorbed the liquid and is tender, about 15 minutes. Set aside, and keep warm.
  • Melt the coconut oil in a large saucepan over medium heat. Add the onion and garlic; cook and stir until the onion has softened and turned translucent, about 5 minutes. Stir in the tomatoes, and cook for 5 minutes more. Pour in the water and coconut milk, and add the molasses, coconut powder, cinnamon, curry powder, and ground coriander. Bring to a simmer over medium-high heat, then stir in the lentils, and cook until just tender, 10 to 15 minutes. Stir frequently as the lentils cook to keep them from sticking. Be careful not to overcook them, as they will quickly loose shape and become a paste.
  • Once the lentils are done, season to taste with salt and pepper, and stir in the chopped cilantro. Serve the lentil stew over a bed of quinoa.

1/2 teaspoon salt
2 large mangoes
1 jalapeno chile, seeded and diced
3 scallions, including an inch of the greens, thinly sliced (chives also work well)
1/3 cup almonds, roasted
1 garlic clove
1/4 teaspoon salt
2 tablespoons mayonnaise or 2 tablespoons sour cream
2 teaspoons curry powder
1 1/2 tablespoons fresh lemon juice
5 tablespoons light olive oil (or sunflower seed oil)
2 tablespoons finely chopped cilantro

Steps:

  • Bring 3 cups of water to boil in a saucepan, then add the quinoa and salt. Lower the heat, cover, and simmer until the quinoa is tender (about 12-15 minutes). Drain.
  • Peel and dice the mangoes into 1/2" squares.
  • Toss the completely cooled quinoa with the mangoes, chile, scallions, and curry vinaigrette (directions follow).
  • Chop the almonds and add them last so they stay crisp.
  • For the Curry Vinaigrette: Pound or mince the garlic and salt in a mortar until smooth, or put the garlic through a press. Place these into a small bowl and add the yogurt and curry. Stir in the lemon juice, and then whisk in the oil until the texture is thick and creamy. Let stand 15 minutes, then stir in the cilantro. Taste for tartness and salt and adjust if needed.

1 cup fresh curry leaves
½ cup rolled oats
¼ cup split chana dal, (unskinned split chickpea lentil)
½ cup split urad da, (black unskinned lentil)
1 ½ cups water, for making the batter
1 ½ teaspoons kosher salt
¼ cup oil, or ghee to apply to the cooked dosa

Steps:

  • Rinse the quinoa, oats & lentils. Drain out the water and then soak with 3 cups of water for 4 hours.
  • Drain out all the water. Add to a blender and blend with fresh curry leaves and water. The dosa batter consistency will be like pancake batter. Add salt and mix well.
  • Allow the batter to rest for 20 minutes or an hour.
  • Preheat a nonstick griddle on low heat and pour about ⅓ cup of batter and spread it into a thin dosa using the back of the ladle or a measuring cup. Starting from the middle, spread the batter in a circular motion going outwards.
  • Once the bottom of the dosa starts to turn golden brown, evenly spread a little bit of oil or ghee on the dosa. Allow the dosa to crisp up further for another couple of minutes, then lower the heat slightly.
  • Using a flat spatula, start by removing the dosa from the outer edges, then gently fold the dosa.
  • Serve warm with coconut chutney and spicy tomato onion chutney.

I love Indian flavors, but all the cream based sauces make it tough for me to eat it as often as I would like! I had a craving for some Indian curry, a fridge full of good vegetables to use and some ideas to cut a lot of the fat. It came out pretty well, though I think I will increase a sharp spice next time, I think ginger would be a good call. I did the sauce at the same time as the vegetables which lessened the total time.

1 small eggplant, cubed
1 small acorn squash or 1 small butternut squash, cubed
1/2 one jalapenos or 1/2 other hot pepper, sliced
1 small sweet potato, cubed
1/2 cup string bean
1/2 cup yellow onion, diced
1 teaspoon cumin seed
3 teaspoons butter or 3 teaspoons ghee
1 (5 ounce) can fat-free evaporated milk
1 cup quinoa
2 cups water
1 (8 ounce) can garbanzo beans, rinsed and drained
1/2 cup raisins
1 teaspoon coconut extract
2/3 teaspoon hot Madras curry powder
1/3 teaspoon curry powder
1/3 teaspoon garam masala
1 pinch saffron thread (optional)

Steps:

  • Measure 2 cups warm water and add saffron threads. Let soak for now.
  • Meanwhile, cut up all the vegetables.
  • Put the quinoa, garbanzo beans, raisins, coconut extract, and saffron water into the bottom of your pressure cooker and then place a vegetable steaming rack above this (the kind that open up like a flower).
  • Put the vegetables in the steaming rack, starting with the squash and sweet potato, then the pepper, eggplant and beans.
  • Oil the gasket, close and lock the pressure cooker, and set heat to medium-high. When high pressure has been reached, cook for 5 to 6 minutes. Depressurize with a quick-release method.
  • Meanwhile, in a medium saucepan, melt your buttery substance, and saute cumin seeds until fragrant, 2 or 3 minutes.
  • Add onions and saute until soft but not browned.
  • Add evaporated milk and remaining spices and simmer until slightly thickened, ten minutes or so.
  • Move the vegetables from the rack to a large serving bowl and pour the curry sauce over them, tossing to coat.
  • Remove the rack from the pressure cooker and fluff quinoa. If it is too watery, resume heating until desired consistency.
  • Serve curry spooned over quinoa in bowls and enjoy with naan or pitas.

1½ Tbsp. Vegetable Oil
½ Onion Diced (about 4 or 5 oz.)
1 Tsp. Grated Fresh Ginger Root
½ Fresh Green Chile
(Finely Chopped)
1 Heaping Tsp. Turmeric
1 Heaping Tsp. Coriander
¼ Tsp. Ground Cinnamon
1¾ Cups Water
½ Cup Fresh or Frozen Peas
Salt to Taste

Steps:

  • Rinse quinoa with cold water. Use a fine mesh filter or coffee filter. If you're a klutz like me use the fine mesh filter or a lot of quinoa is going to wind up in the sink! Quinoa is coated with a natural substance called saponin that protects the grain by repelling insects and birds. Rinsing the quinoa is important to avoid a raw or bitter taste. You can tell if there is saponin by the production of a soapy looking "suds" when the seeds are swished in water. Good news! If you are using Ancient Harvest Quinoa you can skip this step. It's already rinsed! Place oil and diced onions in a heavy saucepan. Saute the onions on medium high heat for four to five minutes. Add the ginger root, chile, and quinoa. Cook for one minute stirring constantly. A fine, white spiral appears around the grain as it cooks. Stir in the turmeric, coriander, cinnamon, and salt. Cook for one minute stirring constantly. Add the water and bring it to a boil. Cover, reduce heat, and simmer for 15 minutes. Stir in peas. Cover and cook for four or five minutes or until peas are tender and all the water has been absorbed. Fluff with a fork before serving.

2 large mangoes
1 jalapeno chile, seeded and diced
3 scallions, including an inch of the greens, thinly sliced

Steps:

  • For Curry Vinaigrette: 1. Pound or mince the garlic and 1/4-teaspoon salt in a mortar until smooth, or put the garlic through a press. 2. Combine the garlic and salt with the yogurt and curry in a small bowl. Stir in the lemon juice, then whisk in the oil. Let stand for 15 minutes, then stir in the cilantro. Taste for tartness and salt and adjust if needed.
