PAKISTANI OXTAIL CURRY

1/4 cup oil
2 medium to large onions, sliced
10 cloves garlic
2-inch piece ginger, peeled
2 tablespoons ground cumin
2 tablespoons ground coriander
1 tablespoon red pepper
1 tablespoon paprika
1 teaspoon aniseed
1 teaspoon ground clove
1 teaspoon fennel
1 teaspoon nigella
6 green cardamom pods
5 pounds oxtail
Kosher salt and freshly ground black pepper
Basmati rice and naan, for serving
Fresh cilantro and lemon wedges, for serving

Steps:

  • Preheat the oven to 325 degrees F.
  • Heat the oil in large pot over medium-high heat. Add the onions and caramelize until dark golden, about 15 minutes.
  • Puree the garlic and ginger in a food processor to make a paste. Add the paste to the pot with the onions. Add the cumin, coriander, red pepper, paprika, anise, clove, fennel, nigella and cardamom pods. Stir and deglaze with 2 cups water, then let reduce until almost dry. Add the oxtail and brown, about 20 minutes. Cover with water and add salt and pepper to taste. Bring to a boil, reduce to a simmer.
  • Transfer to the oven and cook until the meat is very tender, about 4 hours. Serve with basmati rice, naan, cilantro and lemon wedges

Like many basic vegetable curries this recipe has it all. Only difference is I add lemon & garam masala powder at the end to give it a more aromatic flavor. You can also add meat in it after frying the onions & cook the meat along with tomatoes & spices till it gets done. Then add courgettes & follow the rest of the recipe.

2 courgettes (peeled & chopped)
1 medium onion (sliced)
1/4 cup oil
1 small tomatoes (chopped)
1 teaspoon ginger-garlic paste
1 teaspoon salt
1/2 teaspoon red chili powder
1/2 teaspoon coriander powder
1/4 teaspoon turmeric powder
1/4 teaspoon ground cumin
1/2 teaspoon garam masala powder
1 green chili (cut the tail)
3 drops lemon juice

Steps:

  • Fry the onions in the oil till they turn dark brown.
  • Then add tomato, ginger garlic paste, salt, red chili powder, coriander powder & turmeric powder. Saute the onion & tomato till the tomatoes become tender & the oil starts showing in the curry.
  • Add courgettes, mix & let them tenderize for 20 minutes on low medium heat.
  • Now add garam masala powder & cumin seeds. Cover & let it cook for another 5 minutes.
  • In the end add the green chili & lemon juice. Let it simmer for additional 2 minutes.
  • Serve warm with naan, roti or chapati.

A savory curry sauce over pasta of your choice. A microwave may be used to make preparation quicker. However, I used this recipe for camping, since the only thing that needed refrigeration was the frozen pasta, and if you choose to use dried pasta, it would be even more camping friendly. This dish is vegetarian friendly because you do not need to use pasta stuffed with meat. You may wish to double the sauce recipe and eat it with crusty bread to dip. Yummy! 1 (14 ounce) can chicken broth or 1 (14 ounce) can beef broth
1/2 cup butter, divided in half (1 stick)
2 tablespoons curry powder (or more)
1 (14 ounce) package pasta (I used frozen ravioli)
1 (14 ounce) can unsweetened coconut cream (milk)
crusty bread, to dip (maybe french bread?) (optional)

Steps:

  • Start sauce first, as it needs to simmer to thicken.
  • Pour the can of broth into a medium sized pot and start simmering it.
  • Carefully add 1/2 stick of butter, cut into chunks. Stir until melted.
  • Add the curry powder, whisking to make sure there are no lumps.
  • Sample the sauce to see if the flavor suits you or if you need to add more curry powder.
  • In a separate pot, start making the pasta according to the package directions. Drain when done and add the remaining butter, stirring to coat.
  • When the sauce has simmered for 5 or 10 minutes, carefully add the coconut cream.
  • Sample the sauce again to be sure the flavor is right for you. Notice how the coconut cream enhances the curry flavor without diluting it-mmmm!
  • Continue simmering the sauce, whisking occasionally, until it reaches the thickness you desire, or until you cannot stand waiting any longer.
  • Serve the sauce over the pasta with a side of crusty bread to dip.

1 small onion, diced
1 pound ground beef
2 medium tomatoes, chopped
1 tablespoon curry powder

1 (8.5 ounce) can peas, including liquid

Steps:
