32 ounces processed cheese food (such as Velveeta®), cut into 1/2-inch cubes
1 cup Irish stout beer (such as Guinness®)
½ cup salsa
2 tablespoons Worcestershire sauce
1 teaspoon chili powder
½ teaspoon onion powder
¼ teaspoon cayenne pepper

Steps:

  • Heat cheese in slow cooker on High until melted, about 20 minutes.
  • Stir beer, salsa, Worcestershire sauce, chili powder, onion powder, and cayenne pepper into cheese until smooth and heated through, stirring frequently, about 10 minutes.

I haven't made this for years and to be honest don't remember how I came up with it, but I do remember that it was really good. I love dips!!1

Number Of Ingredients 9

8 oz cream cheese, room temp
2 1/2 c sharp irish cheddar cheese, grated
1 tsp dijon mustard
2 Tbsp half and half
1 pinch salt
1/4 c guinness
2 scallions, chopped
2 Tbsp fresh parsley, chopped (make a little extra for garnish)
1 dash(es) tobasco (or to taste)

Steps:

  • 1. I use my blender on low, combine cream cheese, grated cheddar and half and half. Add salt, combine. Pour in the Guinness and blend until smooth. Add scallions.Pulse briefly. Add tobasco, to taste. Some like it hot!!!
  • 2. Chill for at least an hour. When you're ready to eat, bring it to room temperature, it might need a quick stir. Garnish with some chopped parsley and serve with crackers or bread sticks.
