It's a super easy crab dip, perfect as a last-minute appetizer served with your favorite crackers! My favorite are baked garlic and chive pita crackers.

5 tablespoons Japanese mayonnaise

  • Mix all of the ingredients with the exception of the crab in a double boiler until smooth. Add crab meat and mix well. Do not let the crab meat boil.

2 teaspoons canola oil
4 medium carrots, sliced
1/3 cup water
1/4 teaspoon salt

2 cups whole milk yogurt
1 tablespoon vegetable oil, like soy, peanut, or corn
1 large clove garlic, minced
1 tablespoon Madras curry powder
1/2 cup prepared mayonnaise
2 tablespoons sweet mango chutney, finely chopped
1 scallion (white and green), thinly sliced
2 dashes hot sauce, or to taste
1 teaspoon freshly squeezed lime juice
1 tablespoon finely chopped fresh coriander (cilantro)
Kosher salt and freshly ground pepper

Steps:

  • Drain the yogurt in a coffee filter or cheese cloth-lined sieve, set over a bowl, until thickened to about 1 cup, about 2 hours.
  • Heat the oil in a small skillet over medium heat. Add the garlic and cook, stirring, until fragrant, about 2 minutes. Add the curry and cook, stirring, until fragrant about 30 seconds more. Set aside to cool.
  • In a bowl, combine the drained yogurt, curry mixture, mayonnaise, chutney, scallion, hot sauce, lime juice, and coriander.
  • Season with salt and pepper, to taste. Serve with vegetables, crackers, or chips.

CALIFORNIA CURRY CHEESE LAYERED DIP

This is a very unusual layered dip. I was unable to get the "secret" recipe from the hostess at a party I attended. She called it California 7 layered dip. This is my version.

1 cup shredded cheddar cheese
1 teaspoon curry powder
1/2 cup peach jam
1/2 cup mango chutney or 1/2 cup fresh diced mango
1 cup raisins
1 cup shredded sweetened coconut
1 cup shredded Baby Spinach
3 -4 slices cooked bacon, crumbled
1/2 cup salted peanuts, chopped
2 green onions, chopped (optional)

Steps:

  • Blend cream cheese, cheddar cheese and 1 teaspoons curry powder. Layer on bottom of a dish(Pie plate or similar size).
  • Mix peach jam and mango chutney. Spread this over cheese layer.
  • Sprinkle raisins over chutney.
  • Sprinkle coconut over raisins.
  • Sprinkle spinach over coconut.
  • Sprinkle bacon over spinach.
  • Sprinkle peanuts on top.
  • Option: Sprinkle with green onions (8 Layers).
  • Note: You could add 2 Tbs. Sour Cream or 2 Tbs. Plain yogurt to the cream cheese layer to make it softer.

MANGO CURRY DIP

2 (8 ounce) packages cream cheese, softened
3 green onions, chopped. Include some of the green part
1 teaspoon curry powder
1 (6 ounce) jar mango chutney
1 (2 ounce) package slivered almonds
plain water crackers

Steps:

  • Put the softened cream cheese in a wide bowl and add the green onions and curry powder. Mix well. Add more curry if you like, to suit your taste. Form the cheese mixture into a ball and wrap in plastic wrap. Place in refrigerator for at least two hours or over-night.
  • When ready to serve, unwrap the cheese ball and place in the middle of a large serving platter. Push down on the ball lightly to flatten the bottom and have it adhere to the plate. Spoon the mango chutney over the top of the cheese ball and sprinkle the slivered almonds over the chutney.
  • Arrange the water crackers around the cheese ball. Let set at room temperature for at least one hour before serving.
