CHICKEN TIKKA CHAPATI BURRITOS

Chicken Tikka Chapati Burritos - the made-from-scratch marinade is so tasty and easy too! Makes a great alternative to sandwiches for the lunchbox!

2 chicken breasts (chopped into bite-size chunks)
120 ml Greek yogurt or thick natural yogurt (full fat)
2 cloves garlic (peeled and minced)
1 thumb-sized piece of ginger (peeled and minced)
Juice of half a lemon
1 tsp ground coriander
1/2 tsp turmeric
1/2 tsp cumin
1 tsp paprika
½ tsp mild chilli powder or hot if you like it spicy
1 pinch of cinnamon
½ tsp salt
1/2 tsp black pepper
2 tbsp vegetable oil
4 chapatis
4 large leaves from a romaine lettuce (sliced into strips)
170 g cooked basmati rice
4 tbsp Greek or natural yogurt
4 tbsp mango chutney
1 jalapeno chilli (thinly sliced)
1/2 red bell pepper (de-seeded and chopped finely)

Steps:

  • Place the chicken breast pieces into a bowl or freezer bag with the yogurt, garlic, ginger, lemon juice, coriander, turmeric, cumin, paprika, chilli powder, cinnamon, salt and pepper. Mix together so that everything is combined, then cover and place in the fridge to marinate for 2-3 hours.
  • Remove from the fridge and thread the chicken pieces onto four long metal skewers (you can use wooden skewers if you prefer, but soak them in water for at least an hour beforehand to prevent them from burning).
  • Brush the chicken skewers all over with the oil, then grill for 8-10 minutes, turning once or twice until fully cooked and a little charred on the outside. Make sure the chicken is cooked by slicing into a large piece and ensuring it's no longer pink in the middle.
  • Place the chapatis onto four plates. Add the sliced lettuce and the cooked rice, then remove the chicken from the skewers and place on the chapatis. Top with yogurt and mango chutney, then sprinkle on the jalapeno slices and chopped red pepper. Roll the chapatis up and wrap in foil - burrito style - and serve immediately.

2 tablespoons unsalted butter
3/4 cup basmati rice
1 3/4 teaspoons Madras curry powder
Kosher salt and freshly ground pepper
1 small red onion, finely chopped
2 cloves garlic, minced
1 15.5-ounce can chickpeas, drained and rinsed
3 small tomatoes
3 Persian cucumbers
2 tablespoons fresh lemon juice
4 burrito-size whole-wheat tortillas
1 1/2 cups plain whole-milk yogurt

Steps:

  • Heat 1 tablespoon butter in a small saucepan over medium heat. Stir in the rice and 1/4 teaspoon curry powder. Add 1 1/4 cups water, 1/2 teaspoon salt and a few grinds of pepper. Bring to a boil, then reduce the heat to low; cover and cook until the liquid is absorbed, 15 minutes. Let stand off the heat, covered, 5 minutes.
  • Meanwhile, heat the remaining 1 tablespoon butter in another small saucepan over medium-high heat. Add half of the red onion; cook, stirring, until browned, 3 to 4 minutes. Stir in the garlic and remaining 1 1/2 teaspoons curry powder, then add the chickpeas, 1 cup water, a pinch of salt and a few grinds of pepper. Bring to a boil, then reduce to a simmer. Mash some of the chickpeas against the side of the pan with the back of a spoon. Simmer until thickened, 13 to 15 minutes. Season with salt and pepper.
  • Meanwhile, dice the tomatoes and cucumbers and combine in a bowl with the remaining red onion; season with salt. Let sit 5 minutes, then drain off any liquid. Add the lemon juice and more salt, if needed.
  • Warm the tortillas as the label directs. Top with the rice, forming a log in the center, then top with the chickpeas. Add 2 tablespoons yogurt and 2 tablespoons of the tomato-cucumber salsa to each tortilla. Fold in the sides of the tortillas and roll up. Serve with the remaining yogurt and salsa.

SLOW-COOKER CURRY CHICKEN AND RICE BURRITO FILLING

This makes such a great chicken burrito filling but is also good eaten on its own! The recipe originally came from the taste of home website but I have changed it so much that it is unrecognizable in comparison to the original! This is pretty spicy so if you want it to be milder reduce the amount of cayenne pepper. If I am serving this plain instead of in burritos I will cube the chicken instead of shredding it.

3 boneless skinless chicken breasts, frozen (or use 6 frozen boneless skinless chicken breast halves)
1 (10 3/4 ounce) can cream of shrimp soup (or cream of chicken soup)
3 ounces whole milk
2 teaspoons curry powder
1 teaspoon cayenne pepper
1/2 teaspoon ground turmeric
1 (15 ounce) can black beans, undrained
3 cups water
3 cups instant rice
2 tablespoons lime juice

Steps:

  • Put the frozen chicken breasts in a large slow cooker.
  • Mix together the soup, milk and spices and pour over the chicken.
  • Cook on low for 6 hours or until chicken is tender.
  • Shred chicken and add it back to the sauce in the slow cooker. Add the black beans with their liquid and stir to combine.
  • Cook on low for another hour to heat the beans.
  • In the meantime, bring the water to a boil in a medium saucepot. Add the rice and turn off the heat but leave the pot on the burner. Put a tight fitting lid on the pan and let it sit for 10 minutes or until the rice has absorbed all the liquid.
  • Add the cooked rice and the lime juice to the slow cooker and mix well.
  • Cook on high for 30 minutes to allow the rice to absorb all the excess liquid in the slow cooker.
  • Serve in warmed tortillas as a burrito filling or eat plain!

4 flour tortillas, recipe follows, or use store-bought
1 cup good quality canned refried beans, warmed
2 cups shredded roasted chicken (see attached recipe for chicken tacos and prepare chicken in the same way) or leftover
2 tablespoons Crema, recipe follows, creme fraiche, or sour cream
1 avocado, peeled and sliced
2 large tomatoes, sliced
2 small bunches watercress, trimmed, washed and dried
2 tablespoons freshly squeezed lime juice
2 tablespoons olive oil
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
2 1/2 cups all-purpose flour
Scant 1/2 cup vegetable shortening (3 1/2 ounces)
1 teaspoon salt
1 cup warm water
2 cups heavy cream
1/4 cup buttermilk

Steps:

  • Spread the tortillas on a counter. Spread each with a strip of warm refried beans down the center. Top with the chicken (warmed), Crema, avocado and tomatoes. Lightly toss the watercress with the lime juice, olive oil, salt, and pepper and place over each burrito. Fold the bottom quarter of each tortilla up and then roll from the side into a cylinder.
  • In the bowl of a heavy-duty mixer, place the flour, shortening and salt. Beat with the paddle until crumbly, about 3 to 5 minutes. With the mixer running, gradually add the warm water and continue mixing until the dough is smooth, about 3 minutes. Divide the dough into 3 pieces. Roll each into a ball and place on a baking tray or board. Cover with a towel and let rest at room temperature at least 15 minutes or up to one hour. Cut out eight 12 inch squares of waxed or parchment paper for stacking the tortillas. On a lightly floured board, roll each ball into a 10-inch circle, and transfer to a paper square. Stack on a baking tray or platter and refrigerate until cooking time. Uncooked tortillas can be kept in the refrigerator, well wrapped with paper squares between the layers, up to 2 days. To cook, heat a dry griddle or 12-inch skillet over medium heat. Carefully peel off the paper and cook the tortillas, one at a time, until puffy and slightly brown, about 30 to 45 seconds per side. Set aside to cool slightly on a towel lined platter. Bring to the table wrapped in a towel for warmth, or wrap well and refrigerate or freeze for quesadilla or other dishes.
  • In large bowl whisk together cream and buttermilk. Cover and set in a warm place (a gas oven with just the heat from the pilot light for example) for 8 hours. Place in refrigerator. Can be kept for up to a week.
