12 Grain Bread (Bread Machine) image

Using 12 grain flour from Bulk Barn and a recipe that is a variation of the one they provide. (Bulk Barn is a Canadian food retailer specializing in bulk foods.) The list of grains, in the order on the label, is hard whole wheat flour, whole spelt flour, kamul flour, granola oats, ground brown flax seeds, quinoa seed, amaranth seed, barley flour, whole rye flour, dark buckwheat flour, hulled sunflower seeds and millet seeds. If you have a 1½ lb loaf bread machine, reduce the yield below from 2.0 lbs to 1.5 lbs to get the right quantities for your machine. I use a Black & Decker bread machine with a 1½ lb loaf pan. If you want a "lighter" bread, reduce the 12-grain flour by ½ cup and increase the white flour by ½ cup. If you want a "sweeter" tasting bread, replace the brown sugar with honey. (Note: I had to use whole wheat flour in the ingredients to get approximate nutrition values. Note to those who live in the U.S.A.: replace the white flour with bread flour.)

Crunchy coconut and peanuts add appeal to this bright colored (yellow-red) bread seasoned with curry. Serve with a fresh fruit salad or use it to make turkey sandwiches. This is an easy recipe but please remember it will take as long as your bread machine is programmed to take. Not a quick recipe! Recipe was given to me by a friend.

This is a very reliable standard bread machine recipe for a 1 lb loaf. Too many people I know have bread machines but don't use them because they don't know how to do anything but use a mix! This will make a nice soft loaf as is, and it's also a great jumping off point for experimentation. Try varying the types of flour, fat, and sugar. Or try adding things like spices, nuts, mustards, or cheeses. My goal with this recipe is to get people comfortable enough with baking in their bread machines that they'll experiment. (If your machine only makes a 2 lb loaf, simply double all the ingredients.)

2/3 cup lukewarm water
1 teaspoon salt
1 tablespoon butter or 1 tablespoon oil
1 tablespoon sugar or 1 tablespoon honey
2 cups flour
2 tablespoons nonfat dry milk powder (optional)
1 teaspoon yeast

Steps:

  • Add the ingredients to your bread pan in the order listed.
  • Set your machine to 1 lb / white bread.
  • Alternatively, set your machine for the dough cycle. When it's finished, take the dough out, shape it into a round loaf, cover, and let rise until doubled. Bake in a preheated 375 degree oven for 30-40 minutes.
  • In both cases, cool on a wire rack before slicing.

Easy Farmhouse Multi-Grain Bread (For Bread Machine) image

I LOVE whole grain breads but hate paying three and a half bucks for a loaf. I cobbled this together to have as a quick and easy recipe using a minimum of things one would have to run to the store for. I have pretty much every ingredient on this list on hand most of the time. The only "special" item is the rolled whole grain hot cereal. I can find Bob's Red Mill quite easily and inexpensively, and a bag of it will make several loaves of bread. You can use seven-grain or ten-grain or 100-grain cereal if you want, of course. This makes a really nice, soft, delicious loaf- perfect for sandwiches, with the nubby texture of the whole grains that I Iove so much. UPDATE: I also thought this bread just need a little "something" and now add 1/2 cup apple sauce. Put the apple sauce in your liquid measure first, then add the milk until they both together measure just under one cup.

1 cup milk, warmed but not boiled (a little less than a cup is perfect)
1 egg
2 tablespoons butter, softened or cut into pieces
1/4 cup honey
1 lb bread flour (about 3 and a quarter cups)
1 cup multi-grain hot cereal, uncooked
2 teaspoons salt
2 teaspoons bread machine yeast (heaping)

Steps:

  • Place all in bread machine pan in order given unless instructed otherwise by your machine's manufacturer. Bake on regular setting, medium or light color.
  • Either use a scant cup of milk or add a couple or three tablespoons of flour to this to get the doughball the right texture. Keep your flour out and handy just in case, and watch the doughball after it's kneaded for a few minutes.
  • Tip: If you have a kitchen scale, measuring flour by weight instead of by volume is not only much more accurate, it's faster and easier too.
  • Tip: Never just throw the ingredients into a bread machine and leave it, if you can help it. Let the doughball form, then let the machine work it about five minutes more, then see what it looks like. If the paddle smushes through the bottom of the dough with every turn your dough is too wet. If your dough just spins around on top of the paddle or doesn't form at all, your dough is too dry. The ideal texture is soft enough to smush some of the time but firm enough to spin sometimes, then go off-center and smack the sides of the bread pan a lot.

A quick 58 minute white bread that is super yummy. Perfect for people who just do not have 3 1/2 hours to wait for their bread to cook. Low in sugar and sodium. I make a loaf of this each and every day. Makes enough for a family of 6 each day. Mmmmmm. If your not needing to cut back on sodium or sugar, you can add 1/2 tsp of salt and 1 tbsp of sugar.
