CURRY TURKEY BURGERS
Looking for something a bit different from your ordinary beef burger? Give lean ground turkey burgers a pop of flavor by adding curry powder and mango chutney. We enjoy ours on a sesame seed bun with leaf lettuce, Sriracha mayo, and occasionally, a slice of onion.

Steps:
- Combine ground turkey, mango chutney, bread crumbs, dried onion, curry powder, ginger, garlic powder, and salt in a bowl; mix well. Quarter the mixture, and shape into patties about 1/2-inch thick.
- Move patties to the freezer for 20 minutes to help them hold their shape better on the grill and not fall apart.
- Prepare an outdoor grill for medium-high heat, and lightly oil the grate.
- Cook turkey burgers on the preheated grill over direct heat until no longer pink in the center and the juices run clear, 4 to 5 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Serve immediately.

- In a large bowl, mix together the turkey mince, onion, garlic, curry powder, coriander and egg yolk with a little salt and pepper. Combine well with your hands, then shape into 4 flat burger patties.
- Heat the oil in a frying pan over a high heat, then cook the burgers for 5 mins each side or until cooked through. Toast the cut sides of the burger buns. Place the salad on the bottom halves of the warm buns, then top with the burgers and chutney or lime pickle.

TURKEY BURGERS
Turkey burgers are much leaner than hamburgers, but they can be dry and dull. Moisten them by adding ketchup and a bit of grated onion to the ground turkey - or mayonnaise and a bit of mustard. The idea is to emphasize condiments, and keep the turkey moist.

- Grate the onion on the fine holes of a grater. You should have about two tablespoons of grated onion (and a lot of juice, which you can discard). Place in a bowl with the ground turkey, Worcestershire sauce, ketchup, salt and pepper. Using a fork, mix together well. Shape into four patties - the mixture will be quite moist - and press the patties into ½-inch thick rounds.
- Heat the canola oil in a nonstick griddle or large nonstick frying pan over medium-high heat. (Alternately, spray the griddle or pan with pan spray.) When you can feel the heat while holding your hand just above griddle or pan, cook the patties for five minutes on each side. Serve on buns, with the condiments of your choice.
CURRIED TURKEY BURGERS
Steps:
- Shake mustard seeds in medium skillet over low heat until seeds begin to pop, about 2 minutes. Transfer seeds to bowl. Mix in applesauce, 1 tablespoon yogurt, 2 tablespoons chutney, 2 teaspoons curry powder, salt and cayenne. Mix in turkey, 4 tablespoons onion tops and 4 tablespoons mint. Shape into four 3/4-inch-thick patties.
- Mix apple, 3/4 cup yogurt, 3 tablespoons chutney, 3/4 teaspoon curry powder, 3 tablespoons onion tops and 3 tablespoons mint in small bowl.
- Prepare barbecue (medium heat). Spray burgers with nonstick spray; grill until cooked through, about 5 minutes per side. Cut 1 end off each pita; fill with 1 burger, some lettuce and 1/4 of yogurt mixture.

My brother gave me this recipe years ago after attending a cooking course. It is simple and delicious.

TURKEY CURRY BURGERS
Due to my dietary requirements I am always on the lookout for healthy and low fat twists on the fatty meals I used to enjoy. We like burgers and we like curries and so that was the inspiration for this healthier turkey curry burger. I serve them on buns with a bit of crisp lettuce and an extra teaspoon of the chutney spread over the each burger.

Steps:
- Mix all the ingredients together in a bowl with your hands until well combined.
- Put into the fridge for about 10 minutes to allow the mixture to firm up a bit.
- Take out of the fridge and form into four equal sized patties.
- Fry the burgers as you would any other burger for about 5 minutes each side or until cooked through. (I do mine on my Foreman Grill brushed very lightly with some canola oil to save me having to fry them and add extra fats).
- Put on buns and top with your choice of toppings (I go simply with crisp lettuce and a bit of extra mango chutney) and serve.
