Two 6 ounce cans white meat tuna packed in water, drained
3 tablespoons minced red onion, soaked in cold water for 5 minutes, drained
1 tablespoon finely chopped fresh coriander (cilantro)
1 tablespoon golden raisins, plumped in 2 tablespoons warm water for 10 minutes, drained
2 teaspoons vegetable oil, like soy, peanut, or corn
2 teaspoons Madras-style curry powder
6 tablespoons mayonnaise
Kosher salt and freshly ground black pepper
1/2 teaspoon freshly squeezed lime juice plus more to taste
Serving suggestions: 2 cups mixed lettuces or 3 to 4 pita breads

Steps:

  • In a mixing bowl break the tuna up with a fork. Toss with the onion, fresh coriander, and raisins.
  • In a small saute pan, heat the oil over medium heat, add the curry powder, and stir until fragrant, about 30 seconds. Remove pan from the heat and set oil aside to cool.
  • Add the curry oil to the mayonnaise, season with salt, and pepper to taste and add the lime juice. Gently mix the tuna with the seasoned mayonnaise. Serve on a bed of lettuce or in a sandwich.
  • Yield: 3 to 4 servings

2 cups uncooked rice
1/4 cup butter (or use oil drained from canned tuna)
1/4 large onion, minced
2 garlic cloves, minced
1/2 red bell peppers (optional) or 1/2 green bell pepper, diced (optional)
1/2 teaspoon salt
1 -3 teaspoon curry powder
1/4 cup flour
2 cups milk (or coconut milk)
1 (6 ounce) can tuna or 2 (6 ounce) cans tuna

Steps:

  • Start the rice cooking.
  • Over low to moderate heat, saute onion, garlic, and your vegetable of choice in butter. (If you use tuna packed in oil, you can drain the oil and use that to saute the onions.)
  • Season with salt and curry powder and continue to saute until veggies are tender.
  • Stir flour into vegetables until it coats them and combines with the butter/oil.
  • Over moderate heat, add enough of the milk to cover the vegetables, and stir to create a smooth sauce. As the milk begins to heat, the butter/flour mixture that was coating the vegetables will begin to blend with and thicken the milk. Once it becomes thick, add half of the remaining milk, and continue stirring until it again heats to the thickening point. Then add the rest of the milk, stir again, and allow to come to the thickening point for the last time. (This process is a bit difficult to describe, but not hard to do. Adding the milk at little at a time and stirring to keep it smooth as you go keeps the sauce from forming lumps and prevents scorching. You can also do this step over low heat, in which case you don't have to stand right over the pot stirring constantly, but it's still good to add the milk in stages, and stir regularly.).
  • Once the sauce is heated, add the tuna, and bring back to simmering. If the tuna is packed in oil, drain the oil (which you may have used in step one). If it's packed in water, you can just dump the whole can into the sauce, water and all.
  • Serve tuna curry over rice. A green veggies side is nice (steamed asparagus or broccoli, cucumbers in vinaigrette, green salad, or peas).

3 tbsp nonfat Greek yogurt
3 tbsp light mayonnaise
1 tbsp curry powder (more to taste)
1 tbsp mango chutney (more to taste)
1/2 tsp salt
1/4 tsp pepper
15 oz. canned tuna (drained)
1/3 cup red grapes, chopped
1/4 cup celery, diced
1/4 cup carrots, diced
2 tbsp green onions, chopped

Steps:

  • Mix together the mayonnaise, Greek yogurt, curry powder, mango chutney, salt, and pepper. Taste and add more curry powder as needed.
  • Stir in the tuna. Then fold in the grapes, celery, carrots, and green onions.
  • Refrigerate for one hour or more before serving if possible.

This is a Tuna Rice Salad that I like on a bed of shredded lettuce or lettuce leaves for a warm summer lunch or dinner. I have also used it for a side dish at cookouts. Great for the non-meat eaters. You can add additional chopped veggies in if you want. Hope you enjoy.

1 cup brown rice (cook according to package and cooled)
2 (5 ounce) cans tuna, drained
1 (14 ounce) can garbanzo beans, drained
1/2 cup olive, sliced (Salad style, drained)
1/2 cup carrot, grated
1 (1 ounce) package salad dressing mix, dry (good seasons or store brand works fine)
1/4 cup white vinegar
1/4 cup vegetable oil
3 tablespoons water

Steps:

  • Cook Brn. Rice according to package and cool. Add tuna, garbanzo beans, olives and carrots together. Add dressing and toss together.
  • Chill well and serve over shredded lettuce or lettuce leaves for main dish, or just as a side dish.

1 (16 ounce) can unpeeled apricot halves in juice, quartered
1 pint strawberry, washed, hulled, and thinly sliced
2 celery ribs, washed, trimmed, and finely diced
1/4 cup fat-free mayonnaise
1/2 cup plain nonfat yogurt
1/2 teaspoon curry powder
2 tablespoons lemon juice
1 head red-leaf lettuce, outer leaves removed, washed and dried

2 cups leftover cooked rice (cold)
1 (6 ounce) can tuna (I prefer water packed)
2 stalks celery (chopped)
3 green onions (chopped, be sure to include some of the greens)
1/2 cup mayonnaise (can be Lite) or 1/2 cup salad dressing (can be Lite)

Steps:

  • Mix all of the ingredients together using just enough mayonnaise to bind everything.
  • Add salt and pepper to taste.
  • Cover and place in refrigerator for an hour or more.
  • Place an ice cream scoop full on a lettuce leaf and garnish as desired.
