MANGO CHUTNEY CAMPFIRE CHEESE TOASTIES

Gather round a campfire and make these moreish mango chutney and cheese toasties for a simple family supper. Serve with more chutney for dunking

100g grated mozzarella
100g medium or mild cheddar, grated
2 spring onions, thinly sliced (optional)
8 slices white bread
4 tbsp mango chutney, plus extra to serve
small knob of butter, for frying (optional)

Steps:

  • Combine both cheeses and the spring onions, if using, in a bowl. Pile the cheese mix over four of the bread slices, then spread 1 tbsp chutney over each of the remaining slices. Sandwich the slices together to make four toasties.
  • If you're cooking over a barbecue, put the sandwiches on a griddle for 2 mins, flip and cook for 2 mins more. Transfer to sheets of foil using tongs and tightly wrap. Return to the griddle and cook for 3-4 mins more, or until the cheese is melted. Alternatively, melt a little butter in a pan. Fry the sandwiches for 2-3 mins on each side, weighing them down with a second pan or other heavy heatproof object. Cut the toasties into fingers and serve with more chutney for dunking.

4 ounces cream cheese, softened
8 ounces sour cream
1 1/2 tablespoons curry
1/2 teaspoon cayenne
1/2 cup mango chutney

Steps:

  • In medium bowl combine cream cheese and sour cream. Add curry, cayenne and chutney. Stir well to combine and chill. Serve in bowl with potato chips or vegetables.

Make a classic mango chutney to serve alongside curries, with cheese or in sandwiches. It makes a great gift for family and friends, and you can freeze it too

Number Of Ingredients 13

6 firm but ripe mangoes (about 1.5kg)
500ml white wine vinegar
450g granulated sugar
1 tbsp cumin seeds
2 tsp coriander seeds
10 cardamom pods
2 tsp nigella seeds
½ tsp cayenne pepper
½ tsp turmeric
3 garlic cloves , crushed
8 whole cloves
thumb-sized piece of ginger , grated
1 fat red chilli , seeds removed and finely chopped

Steps:

  • Peel the mangoes and chop the flesh into blueberry-sized pieces. Pour the vinegar and sugar into a large pan and simmer gently, stirring until the sugar has dissolved. Increase the heat and bubble for 8-10 mins until reduced a little. Meanwhile, toast the cumin, coriander and cardamom in a dry pan until aromatic.
  • Tip the spices into a pestle and mortar and gently crush them, leaving the seeds with some texture. Remove the cardamom pods, leaving the seeds in the spice mix, and add to the vinegar mix along with the mangoes, the other ingredients and 2 tsp salt. Bubble over a medium heat for 1 hr 15 mins - 1 hr 35 mins, until thick and syrupy. Leave to sit for 10 mins.
  • Transfer the chutney into 2-3 sterilised jars while still hot. Seal the jars and leave to cool, then add labels. Store in a cool place for up to 2 years - the chutney will be best eaten after a few months, when the flavours have melded and mellowed.

50g mature cheddar , grated
50g hard mozzarella , grated
3 spring onions , thinly sliced
1 small green chilli , finely chopped
½ tsp cumin seeds
1 tbsp coriander , roughly chopped
1 large round garlic naan bread (we used a fresh one from ocado.com)
1 tbsp mango chutney , plus extra to serve
10g butter

Steps:

  • In a bowl, mix the cheeses, spring onion, chilli, cumin seeds and coriander.
  • Cut the naan in half down the centre. Spread one half with the chutney, top with the cheese mixture, then cover with the other half. Melt the butter in a frying pan over a medium heat until just beginning to foam. Add the naan sandwich and use something heavy like a saucepan to press it down. Fry on one side for 4-5 mins or until golden brown, then turn over and repeat. Both sides should be crisp, with the cheese gooey. Cut in half and serve with extra chutney.

1 onion, chopped
3 cloves crushed garlic
1 tablespoon olive oil
1 ½ teaspoons curry powder
1 teaspoon ground cumin
1 teaspoon ground turmeric
8 cups vegetable stock
¼ cup dry lentils
1 (28 ounce) can diced tomatoes with juice
¼ cup uncooked white rice
1 cup frozen corn
¼ cup elbow macaroni
1 small spaghetti squash

Steps:

  • Place cut side of the squash down in a lightly oiled baking pan. Bake at 350 degrees F (175 degrees C) for 30 minutes, or until a sharp knife can be inserted with only a little resistance. Remove squash from oven, and set aside to cool enough to be easily handled. Shred squash with a fork.
  • In a large soup pot, saute onions and garlic in olive oil. Add curry powder, cumin, and turmeric. When onions are transparent, add stock and lentils and bring to a boil. Reduce to simmer and add chopped tomatoes and juice.
  • If using brown rice, add the rice 10 minutes after adding the lentils, if using white rice, add rice after 25 minutes along with the can of corn. (Add the can of corn at the same time you add rice, white or brown).
  • After 35 minutes, add the macaroni and spaghetti squash. Simmer until rice and pasta are cooked.
