SOY-BUTTER SCALLOP WONTONS

Eating copious amounts of dumplings on Lunar New Year symbolizes wealth for the year ahead because the small parcels of dough filled with protein and vegetables resemble bags of money. You won't have a problem eating all of these scallop wontons tossed in a rich soy-butter sauce. The filling is a simple yet flavorful blend of scallops (which on their own symbolize wealth due their round shape and golden color when seared) and minced jalapeños for a gentle heat and aromatics. The sauce is not traditional, but the rich butter bloomed with chile flakes and salty soy sauce complements the natural sweetness and oceanic flavors of the scallop wontons. Remember, the more dumplings you eat, the richer you will be!

Number Of Ingredients 15

1 pound scallops, finely chopped
1 jalapeño, minced
4 garlic cloves, minced
4 green onions, whites and greens chopped, plus more for garnish
1 teaspoon sesame oil
1/2 teaspoon coarse kosher salt
1/4 teaspoon ground white pepper
2 tablespoons soy sauce
1 teaspoon sugar
3 tablespoons cornstarch
50 square wonton wrappers
All-purpose flour, for dusting
6 tablespoons unsalted butter
1 teaspoon chile flakes
1/3 cup soy sauce

Steps:

  • For the wontons: Mix the scallops, jalapeño, garlic, green onions, sesame oil, salt, white pepper, soy sauce, sugar and cornstarch in a medium bowl to combine.
  • To assemble the wontons, have a small cup of water on the side for sealing the edges of the wrappers. Place a wonton wrapper in your non-dominant hand so that it is oriented like a diamond. Add about 1 tablespoon of filling to the center of the wrapper. Dab a little water along the top edges of the wrapper. Fold the wrapper in half to form a triangle. Press the edges tightly. Dab the 2 ends of the triangle with water and fold them together so that they touch. Pinch tightly to seal. Place the wonton on a lightly floured tray or plate and repeat with the remaining wrappers and filling.
  • Bring a large pot of water to a boil. Boil the wontons in batches until floating and fully cooked, 4 to 5 minutes. Strain out the wontons and transfer to a larger serving bowl or platter.
  • For the soy-butter sauce: Combine the butter and chile flakes in a medium saucepan. Melt the butter over medium heat and bring to a simmer; continue to simmer for about 1 minute. Turn off the heat and add the soy sauce.
  • Pour the soy-butter sauce over the wontons, toss to evenly coat and garnish with chopped green onions.

24 wonton wrappers
vegetable or light olive oil

Steps:

  • Preheat oven to 375 degrees F.
  • Brush oil on both sides of each wonton wrapper or use an oil mister to mist each side of the wonton wrapper.
  • Carefully tuck the wrapper evenly into a well of a standard sized cupcake pan. (You'll need two pans for all 24 wonton cups.)
  • Bake 8 minutes or until cups are crispy and golden brown. Make sure to check that the bottom of each wonton cup is crispy. Allow to cool 5 minutes before removing from pan.
  • Cool and stuff each wonton cup with the fillings of your choice!

WONTON TACO CUPS

2 tablespoons salted butter, melted
12 wonton wrappers
One 15-ounce can black beans, drained and rinsed
One 4-ounce can diced green chiles, drained
2 teaspoons chili powder
Juice of 1/2 lime
1/2 cup grated Monterey Jack cheese
1/2 small avocado, diced
1/3 cup pico de gallo
1/4 cup sour cream
Hot sauce, if desired
1/4 cup fresh cilantro leaves

Steps:

  • For the wonton cups: Preheat the oven to 375 degrees F.
  • Brush 12 cups of a mini muffin pan with the butter. Fit 1 wonton wrapper into each cup, folding the sides as needed.
  • In a small bowl, toss together the beans, green chiles, chili powder and lime juice. Spoon some of the bean mixture into each cup, about a heaping tablespoon each. Bake until the filling is warmed through, about 12 minutes. Remove the pan and top each cup with a pinch of cheese. Return the pan to the oven and continue to bake until the cheese is melted and the wontons are golden, another 5 minutes.
  • For the toppings: Let the taco cups cool in the pan for a minute or two. Transfer the taco cups to a platter and top each with some avocado, pico de gallo, a small dollop of sour cream, hot sauce, if using, and cilantro.

Nice way to enjoy scallops. The use of flour with curry powder might sound unusual because of the natural thickening effect of the curry, but I find it gives a bit of bulk to the curry without making it too strong.

500 g scallops
1 tablespoon olive oil
1 tablespoon garlic, crushed
1 medium onion, finely diced
1 medium red capsicum, diced
1/4 teaspoon ground black pepper
2 teaspoons curry powder
1/4 cup thickened cream
1/4 cup milk
1 tablespoon white wine
1 tablespoon flour

Steps:

  • Heat oil in a wok over medium temperature and saute garlic, onion and capsicum a few minutes.
  • Add scallops, season with pepper and sprinkle curry powder over the top, mix well and cook around one minute stirring to cover scallops with the curry powder.
  • Reduce temperature a little, add cream, milk and wine and cook gently around 5 minutes.
  • Add flour and cook around 5 minutes more or until thickened.

1 1/2 pounds fresh sea scallops, cut into 1/4-inch pieces
3/4 cup mayonnaise
3 large egg yolks
3 green onions, chopped
1/3 cup chopped fresh cilantro
1 1/2 tablespoons dry mustard
1 1/2 tablespoons curry powder
3/4 teaspoon salt
1/2 teaspoon ground black pepper
3 1/2 cups panko (Japanese breadcrumbs)*
Vegetable oil

Steps:

  • Mix first 9 ingredients and 1 1/2 cups panko in large bowl to blend. Cover mixture and refrigerate 1 hour.
  • Place remaining 2 cups panko on large plate. Form scallop mixture into balls, using 1 heaping tablespoon for each. Coat in panko, flattening slightly.
  • Heat enough vegetable oil in heavy large skillet over medium-high heat to come 1/4 inch up sides of pan. Working in batches, sauté scallop cakes until golden and cooked through, about 1 1/2 minutes per side. Transfer scallop cakes to paper towels to drain. (Can be made 4 hours ahead. Cool, then cover and refrigerate. Reheat on baking sheet in 350°F oven 8 minutes.) Transfer scallop cakes to platter.
  • *Panko (Japanese breadcrumbs) can be found at Asian markets and in the Asian foods section of some supermarkets.

This is my favourite recipe for curried scallops. It is creamy and rich, with a nice tangy flavour to the sauce. This is the mixture I use for my curried scallop pies, or you can just serve it over rice.

500 g scallops
45 g butter
2 tablespoons flour
2 teaspoons curry powder
1 1/2 cups skim milk
1/2 cup low-fat mayonnaise
2 teaspoons lemon juice
1 egg
1 onion, finely chopped

Steps:

  • Melt butter, add onion and cook gently until softened.
  • Add flour and curry powder, mix well.
  • Gradually add milk and mayonnaise, stirring continuously.
  • Cook until sauce starts to thicken, then add scallops.
  • Leave on heat until scallops are just cooked - Don't over cook them!
  • Remove from heat, add egg and lemon juice.
  • Stir well, and serve hot over rice, or leave to cool and make into pies.
