CURRIED PORK WITH RICE



Curried Pork with Rice image

Healthy and easy to make ahead when you don't know what to make for dinner...just pull it out of the freezer and heat

Number Of Ingredients 10

12 ounces boneless pork sirloin
1 large apple
1/4 cup chopped onion
1 1/2 teaspoons curry powder
1/2 teaspoon salt
1/8 teaspoon ground ginger
1 tablespoon cornstarch
2 cups skim milk
3/4 cup quick-cooking white rice
1/4 cup raisins

Steps:

  • Trim fat from pork and thinly slice meat into bite-size strips.
  • Peel, core, and chop apple.
  • Coat a COLD large skillet with cooking spray.
  • Preheat the skillet.
  • Cook pork strips about 3 minutes or till no longer pink; remove from skillet.
  • Set aside.
  • Add apple, onion, curry powder, salt, and ginger to the drippings in the skillet.
  • Cook and stir till apple and onion are tender.
  • Stir together cornstarch and 1/4 CUP of the milk; add to apple mixture in the skillet with remaining milk.
  • Cook and stir till mixture is thickened and bubbly.
  • Then cook and stir for 2 minutes more.
  • Stir in pork, UNCOOKED rice, and raisins.
  • Divide pork mixture among 4 individual baking dishes.
  • Cover with foil; seal, label, and freeze.
  • CONVENTIONAL OVEN: Bake frozen casseroles, covered, in a 375F.
  • oven for 55 to 60 minutes or until heated through.
  • Stir before serving.
  • MICROWAVE OVEN: Remove the foil from frozen casserole (use a microwave-safe baking dish); cover casserole with vented mirowave-safe plastic wrap or waxed paper.
  • Micro-cook 1 serving medium-high for 5 to 7 minutes or till casserole is heated through, turning dish once and stirring once during cooking.

1 cup uncooked wild rice
3 cups water
2 ½ pounds butternut squash - peeled, seeded, and cubed
2 ½ cups chicken broth
½ cup orange juice
2 tablespoons butter
1 medium onion, chopped
1 clove garlic, finely chopped
1 ½ teaspoons curry powder
1 ¼ teaspoons salt
½ teaspoon ground black pepper

Steps:

  • In a pot, bring the wild rice and water to a boil. Reduce heat to low, cover, and simmer 45 minutes.
  • Place the squash in a medium pot with enough water to cover, and bring to a boil. Cook 15 minutes, or until tender. Drain, return to the pot, and mash. Mix in the chicken broth and orange juice.
  • Melt the butter in a skillet over medium heat, and saute the onion and garlic until tender. Season with the curry powder. Reduce heat to low, and continue cooking about 12 minutes, stirring occasionally.
  • In a blender or food processor, blend the squash and broth with the onion and garlic mixture until smooth. Return to the medium pot, mix in the cooked wild rice, and cook until heated through. Season with salt and pepper to serve.

1-1/2 teaspoons hot or regular curry powder
1 teaspoon ground cumin
1 teaspoon dried oregano
3/4 teaspoon onion powder
3/4 teaspoon garlic powder
1/2 teaspoon pepper
1/4 teaspoon cayenne pepper
1/4 teaspoon paprika
1/4 teaspoon ground chipotle pepper
1-1/2 pounds potatoes, cut into 1/2-inch pieces
4 medium carrots, thinly sliced
3 cups cubed peeled butternut squash (about 1 pound)
1 can (14-1/2 ounces) reduced-sodium chicken broth
1 boneless pork loin roast (3 to 4 pounds)

Steps:

  • In a small bowl, mix seasonings. In a 6-qt. slow cooker, combine vegetables, broth and 2 teaspoons seasoning mixture. Rub remaining seasoning mixture over roast; place over vegetables. Cook, covered, on low 3-1/2 to 4-1/2 hours or until meat and vegetables are tender (a thermometer inserted in roast should read at least 145°)., Remove roast from slow cooker; tent with foil. 1/8 teaspoon black pepper
1 dash salt
1 tablespoon vegetable oil, divided
1/2 teaspoon grated lime rind
1 tablespoon fresh lime juice
1 1/2 teaspoons grated peeled fresh ginger
1/2 cup chopped onion
1/2 teaspoon red curry paste
1 cup reduced-sodium fat-free chicken broth
2 tablespoons chopped dried apricots
1 teaspoon honey
1 garlic clove, minced
1 1/2 cups hot cooked basmati rice
2 tablespoons thinly sliced green onions

Steps:

  • Sprinkle pork with pepper and salt. Heat 2 teaspoons oil in a medium nonstick skillet over medium-high heat. Add pork; cook 2 1/2 minutes on each side or until browned.
  • Remove pork from pan. Combine rind, juice, and ginger in a shallow dish; add pork, turning to coat.

A rice cooker invention, I love using it for one pot meals. I tried this and it was tasty, I upped the curry powder because it could use a little more spice. Experiment with this if you want, it should be diabetic safe also.

1 tablespoon peanut oil
7/8 lb boneless sirloin pork chop, diced
1 1/2 tablespoons curry powder (can use a little more if desired)
2 carrots, sliced
1/2 onion, chopped
1 teaspoon fresh minced garlic (optional)
0.5 (13 ounce) can low-fat coconut milk
0.5 (14 ounce) can chicken broth, undiluted
1/4 cup water
0.5 (19 ounce) can chickpeas, drained and rinsed
3/4 cup uncooked brown rice
1 cup raw acorn squash, diced

Steps:

  • Brown meat in hot oil on steam setting (must close the over for meat to brown) and then add vegetables and cook for 5 minutes.
  • Add in rest of ingredients, turn to brown rice setting.
