A scrumptious olive and cheese mixture melted on English muffins.

1 cup black olives, chopped
⅓ cup green onions, chopped
1 ½ cups shredded Cheddar cheese
½ teaspoon curry powder
½ cup mayonnaise
½ teaspoon salt
8 English muffins, split in half

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • In a medium-size mixing bowl, combine olives, green onions, Cheddar cheese, curry powder, mayonnaise, and salt. Mix well.
  • Spread mixture on English muffins. Cut the English muffins into fourths. Note: If you want to freeze these, now is the time! Arrange the muffin pieces on a cookie sheet.
  • Bake at 400 degrees F (200 degrees C) for 10 minutes.

Sweet fruits pair well the spicy curry powder in a savory cheese ball coated with crunchy peanuts.

1 package (8 oz) cream cheese, softened
1/2 cup shredded Cheddar cheese (2 oz)
1/4 cup sweetened dried cranberries
1/4 cup golden raisins
1/4 cup finely chopped red onion
2 tablespoons apple juice
1 tablespoon curry powder
1/2 cup chopped cocktail peanuts
3 apples, cut into 12 slices each
3 pears, cut into 12 slices each

Steps:

  • In large bowl, beat all ingredients except peanuts, apples and pears with electric mixer on medium speed 2 to 3 minutes until well mixed and fluffy.
  • Spoon cheese mixture onto plastic wrap; shape into a ball. Coat cheese ball with peanuts. Cover and refrigerate until serving. Serve with apple and pear slices.

1/3 cup walnuts
2 tablespoons vegetable oil
1 Granny Smith apple
1/3 cup pitted dates
2 cups grated extra-sharp Cheddar (about 8 ounces)
1/4 cup mayonnaise
2 tablespoons chopped fresh flat-leafed parsley leaves
2 tablespoons fresh lemon juice
1 tablespoon apricot preserves
3/4 teaspoon curry powder
three 5-inch pita loaves

Steps:

  • Chop walnuts and in a small skillet cook in oil over moderate heat, stirring, until lightly toasted. Cool nuts slightly.
  • Preheat broiler.
  • Coarsely grate apple and finely chop dates. In a bowl stir together all ingredients except pitas until combined well.
  • Horizontally split pitas and arrange, cut sides down, on a large baking sheet. Broil pitas about 4 inches from heat until golden and crisp, 1 1/2 to 2 minutes. Remove baking sheet from oven and turn pitas over. Divide Cheddar mixture among pitas, spreading evenly. Broil pitas until cheese mixture begins to bubble, about 2 minutes. Cut each pita into 6 wedges.
