Broccoli Toasts With Melty Provolone image

A beautifully assembled toast can make a lovely light dinner. In this version, blanched broccoli is cooked in olive oil that's been infused with garlic and anchovies (always optional) until it's very tender, then it's piled onto toasted bread. Grated extra-sharp provolone, which is a nice complement to the mildly sweet broccoli, is sprinkled on top, then the toasts are broiled until the cheese is melted and golden brown. You can use cauliflower, broccoli rabe or thickly sliced sweet peppers in place of the broccoli, but be sure to cook your vegetables until they are velvety soft - it provides a nice contrast to the crunchy bread. While these toasts work well on their own, they make an equally good accompaniment to roast chicken or grilled fish.

1 head of broccoli, about 1 pound, trimmed and cut into small florets
3 tablespoons extra-virgin olive oil
4 anchovy fillets, roughly chopped (optional)
2 garlic cloves, finely chopped
1/2 teaspoon red-pepper flakes
1/2 teaspoon lemon zest
Black pepper
6 (3/4-inch thick) slices of a 10-inch round peasant loaf
3 ounces grated provolone, preferably extra-sharp

Steps:

  • Bring a large pot of salted water to a boil and blanch the broccoli for 2 to 3 minutes. Drain broccoli and pat dry.
  • Heat the olive oil in a 12-inch tall-sided skillet over medium heat. Add the anchovies, if using, the garlic and red-pepper flakes and cook until the anchovies have dissolved and the garlic is fragrant, 1 to 2 minutes. Add the broccoli and cook, stirring occasionally until the broccoli is cooked down and very tender, about 8 to 10 minutes. Add a tablespoon or two of water, if needed, to help it along. Stir in lemon zest. Taste and season with salt and pepper, if needed.
  • While the broccoli cooks, heat the broiler. Lay the bread on a large sheet pan and toast until golden, about 1 to 3 minutes a side depending on your oven. (Check often to make sure they don't burn.) Remove from oven and divide the broccoli mixture between the toasts. Scatter each toast with the grated provolone, return to oven and broil until the cheese melts and turns golden in spots, 1 to 3 minutes more. (Again, check often to make sure they don't burn.) Remove from oven and serve slices whole or cut in half.

This is a traditional Danish Smorgasbord dish. It is very versatile I sometimes put a layer of steamed spinach in a casserole, leave out the toast,put boiled eggs onto the spinach, pour in the sauce and broil for 5-10 minutes

8 eggs (poached or hard boiled)
8 pieces of toasted bread
1 carrot, scraped & grated
1 cup onion, finely minced
2 tablespoons butter or 2 tablespoons margarine
4 tablespoons flour
1 1/2 teaspoons curry powder (or a bit less)
1 teaspoon Dijon mustard
1/2 teaspoon fresh lemon juice
1 cup chicken broth (consomme) or 1 cup vegetable broth (consomme)
1 1/4 cups milk
salt & pepper

Steps:

  • Saute the carrot and onion in the butter for 15 minutes.
  • Use low heat you do not want to brown the veggies.
  • Add flour and curry.
  • Stir and heat to a smooth paste.
  • Gradually add all the remaining ingredients starting with the consomme, stirring all the while to prevent any lumps.
  • Simmer approx 8 minutes. Keep hot while you are poaching the eggs.
  • Poach the eggs (or use hard boiled eggs cut in half lengthwise).
  • Place eggs on toast and pour over the sauce.
  • Garnish with fresh parsley and dust with paprika (optional).

This is my husband's favorite use of leftover hard boiled Easter eggs. Great comfort food!

12 hard-cooked eggs, peeled
¼ cup butter
½ cup all-purpose flour
3 cups milk
1 tablespoon chicken bouillon granules
6 slices white bread, lightly toasted
salt and white pepper to taste

Steps:

  • Separate the egg whites from the egg yolks. Place the egg yolks into a bowl and mash with a fork. Chop the egg whites into small pieces and set aside.
  • Melt the butter in a saucepan set over medium heat. Stir in flour until smooth. Gradually mix in the milk and chicken bouillon so that no lumps form and stir constantly until the mixture comes to a boil. Add the egg yolks and mix until dissolved. Stir in egg whites. Serve over toast and season with salt and white pepper.

1 tablespoon unsalted butter
1 tablespoon olive oil
1/8 cup whole wheat pastry flour
1 cup nonfat milk
4 hard-boiled eggs, peeled and chopped
3/4 teaspoon curry powder (McCormick)
3/8 teaspoon salt
1/8 teaspoon fresh ground pepper
4 slices whole wheat bread

Steps:

  • In a saucepan, over low-medium heat, melt/combine unsalted butter and olive oil; then whisk in whole wheat pastry flour.
  • Slowly add nonfat milk, whisking constantly to avoid lumps--and continue to cook and whisk until sauce is smooth and thickened.
  • Stir in chopped hard-boiled eggs, curry powder, salt, and freshly ground black pepper, and cook until thoroughly warmed; then remove from heat and cover.
  • Toast whole wheat bread, top with curried egg mixture, and serve.
