Vanilla Bean Honeybell Orange Tart with Chocolate-Spiced Citrus Meringue image

4 egg yolks
12 ounces sweetened condensed milk
4 ounces freshly squeezed honeybell oranges
1 vanilla bean, seeds removed
1(9-inch) pre-baked pie shell or 4 (3-inch) pie shells
1/2 cup egg whites
7 ounces granulated sugar
1 ounce cocoa powder
1/4 teaspoon Chinese five-spice
Pinch hot chile flakes

Steps:

  • Preheat oven to 325 degrees F.
  • Whip the egg yolks until thick. Add the condensed milk and slowly add the juice and vanilla bean and mix well until blended. Pour the mixture into the pre-baked shell and bake for 8 to 10 minutes. Once the pie is ready let cool and set aside in refrigerator.
  • To make the meringue, dissolve the egg whites and sugar together over a double boiler. Whip on high speed until volume increases and meringue has medium peaks. Add the cocoa and the spices and fold until all ingredients are well incorporated.
  • To serve, top the pie with the meringue and torch the meringue or place in broiler to slightly brown the top.

1/3 cup currants
1 cup boiling water
2 cups all-purpose flour
3 Tablespoons sugar
5 teaspoons baking powder
1/3 teaspoon salt
1/3 cup butter
1 cup milk
1/3 cup butter
2 Tablespoons creamed honey
1 teaspoon grated orange rind

Steps:

  • Soak the currants in boiling water for 4 minutes. Combine flour, sugar, baking powder, and salt. Cut in butter until it is in small pieces. Drain and dry currants and add to above mixture. Pour milk into dry ingredients. Gently mix dough. Knead on lightly floured board; gently pat dough to a thickness of 3/4 inch. Cut with a circular cutter into individual biscuits. Dust biscuits lightly with flour. Bake in a preheated 425 degree-oven for 15 to 18 minutes.
  • Serve warm biscuits with orange butter.

2 cups flour, white
2 1/2 tablespoons sugar, white, fine
1 teaspoon fine sea salt
3 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon cream of tartar
1 tablespoon orange rind
2 tablespoons candied orange peel, finely chopped (optional)
1/2 cup unsalted butter, cold
1/2 cup buttermilk, cold
1/2 cup fresh orange juice
2 tablespoons milk
10 sugar cubes, white (optional)
1 tablespoon orange juice (optional)

Steps:

  • In large bowl combine flour, sugar, salt, baking powder, baking soda, cream of tarter, orange rind and orange peel, stirring well.
  • Cut in butter until crumbly.
  • Mix buttermilk and orange juice together, stir to mix well and pour over flour mixture, combing quickly, dough will be soft.
  • Turn out onto a lightly floured surface, knead gently 10 times and pat into 1/2" or 3/4 " thickness.
  • Cut the dough with a 3" cookie round.
  • Brush biscuits with milk.
  • Dip sugar cube in orange juice and press into top of biscuit.
  • Bake on greased cookie sheet at 450 degrees.
  • for 13 - 15 minutes.
