- 1. Yes, the amounts are vague because it just depends on how much you want to make. You will want to taste along the way until you find the exact "taste" your family will enjoy. This is how I do it.
- 2. Slice cucumbers and onion in a bowl. For 4 people, I would use 1-2 cucumbers and maybe 1/4 of a medium onion. For my family, I cut the onion rings into half.
- 3. Pour apple cider vinegar over the cucumbers and onions. I use about 1/3 cup to start.
- 4. Then I add a splash of water, about 1/6 of a cup, or half of the amount of vinegar.
- 5. This next step is totally CONTROVERSIAL in West Virginia, so I hesitate to start another Civil War and divide the state, but I sprinkle in a little sugar, maybe a Tablespoon.
- 6. Stir together and add salt & pepper, to taste. You can serve it immediately or cover the bowl and let it "set" in the refrigerator for a half hour or so. Mom always made it first, then fixed dinner while the cucumbers soaked up the deliciousness in the fridge. Serve with every summer dinner and make more wonderful food memories with your family. =^..^=

- 2. Whisk together sugar, vinegar, oil, water, salt, and pepper. Whisk until the sugar is dissolved.

SIMPLE CUCUMBERS AND ONIONS
My mom always had a bowl of this in the fridge during the summer, and now I do too! My mom sliced her cucumbers and onions in cold salt water for a few hours first, but I usually do not. I do not notice difference when they are not soaked. Instead of peeling the cucumbers completely, I leave a few stripes of green to add color to the salad. Note: Cooking time includes time to chill salad before serving.

- Combine oil, vinegar, and sugar in a medium to large bowl (big enough to hold all completed salad). Stir until sugar is dissolved (Note: You can heat the dressing to help keep it from separating. It is not necessary, but I do if I have time. If you heat the dressing, be sure to cool it before adding to cucumbers).
- Add cucumbers and onions to dressing. Toss to coat veggies.
- Cover and chill at least 2 hours before serving. The longer it chills, the better it gets!

- 1. Mix mayo, sour cream, vinegar, sugar, garlic, onion, & dill weed in a medium bowl.
- 2. Peel and slice cucumbers and onions and put in a strainer. Pour salt over the cucumbers and mix until well coated. Allow to sit for 1/2 an hour or so. Rinse salt off and pat cucumbers dry with a paper towel. This process brings the moisture out of the cucumbers so the recipe stays creamy instead of liquidy.
- 3. Stir cucumbers into mayo mixture and refrigerate for at least 2 hours. It will even taste better the next day just as the old fashioned cucumbers and onions would!

- Peel and slice the cucumber very thin.
- Chop the green onions (including the tops). Mix with the cucumber.
- Sprinkle the salt and sugar over all and toss lightly with a fork to distribute sugar and salt evenly over the cucumber slices.
- Let stand 15 to 20 minutes.
- Drain thoroughly, pressing cucumber to extract as much moisture as possible. Stir the vinegar into the sour cream.
- Add a dash of white pepper.
- Pour over cucumber and onion.
- Refrigerate until ready to serve. NOTE: I usually double this recipe as it is better the longer it sits in the refrigerator.
- I also like more onion so I usually use 3 to 4 if they are small.

- One tip to score the cucumber's skin is to run the tines of a fork from end to the other, working your eay around the entire cucmber.

- Preheat oven to 450F. Make pork rub: 1. In a small bowl with a fork, stir together all pork rub ingredients until well combined. 2. Pat pork dry and press rub into meat (expect uneven clumping) 3. - Peel cucumbers and slice in thin circles. Halve the onions and slice thin. Layer both the cucumbers and onions in a shallow dish, sprinkling each layer with salt. Let stand covered, in refrigerator overnight to draw out the moisture. In the morning, drain the cucumbers and onions and rinse. Let dry on plain white paper towels. - 1. Shell and devein shrimp. Sprinkle with salt and pepper then add cornstarch and toss to coat. 2. Peel cucumbers. Cut lengthwise in half and seed then cut crosswise in 1/4-inch slices.
