I first tasted this at a ladies' luncheon, and it was the most unusual, refreshing drink I'd had. I've served it numerous times since and always get requests for the recipe. -Renee Olson - Kendrick, Idaho

- With a zester or fork, score cucumbers lengthwise; cut widthwise into thin slices. In a large pitcher, combine water and lemonade concentrate; add cucumbers. Cover and refrigerate overnight., Just before serving, transfer cucumber mixture to a punch bowl; stir in ginger ale and grapefruit soda.

CUCUMBER LEMONADE GIN PUNCH

Steps:
- Juice the lemons and place the strained juice and the bodies into a large pot. Add the sugar to the pot and muddle with the lemon bodies and juice for 2 to 3 minutes. Remove the lemon bodies, add the water and stir until the sugar has dissolved.
- Strain the mixture into a 3-quart glass container and add the cucumbers. Steep for 1 hour. Add the gin and stir to combine. Serve over ice.

- Put the cucumber and half the mint in a large bowl or jug, and pour over the vodka. Cover and leave to steep for at least 24 hrs or for up to 1 week in the fridge, stirring every few days. Strain through a fine sieve.
- Pour the vodka, lime juice and sugar into a larger jug. Stir well.
- Using a melon baller, scoop out as many melon balls as you can. Add them to the jug and leave to steep for 30 mins-1 hr in the fridge. Top up with sparkling water and add the remaining mint leaves just before serving with extra lime wedges.

WATERMELON CUCUMBER PUNCH

- In a blender, purée watermelon until smooth. Strain and set aside 12 ounces juice.
- Add cucumbers to blender with 1 tablespoon water. Purée until smooth. Strain and set aside 1 ounce juice.
- In a cocktail shaker, combine watermelon juice, cucumber juice and all other ingredients. Shake well. Pour into ice-filled rocks glasses and serve, garnished with cucumber rounds.

I made this drink for a party I was having over the weekend and it was SO delish!! Everyone raved about it! It tastes like a really good batch of cucumber water! So refreshing! - Cut the melon in half and scoop out and discard the seeds. Using a melon baller cut the fruit into spheres and place in a large punch bowl. Add the lemon juice, Pimm's, orange liqueur and white wine then chill in the fridge for 1-2 hrs.
- To serve, add the cucumber pieces, mint sprigs and top with sparkling water and ice.
