6 cups cold water
6 thin slices English cucumbers
5 thin slices oranges

Steps:

  • Combine all ingredients in a large pitcher. Cover and chill in the refrigerator for at least 30 minutes. Serve.

My mentor, Laura Spenser Whitacre, gave her recipe for a grat lemonaide. I decided to make one without the sugar. Here it is, fresh, fragrant, good for you iced drink that kids and adults will like. It is so refreshing and pretty! You can add mint or what ever else is your favorite fresh herb.

one sliced cucumber of any length, very fresh
one orange, not peeled, sliced, fresh and juicy
one meyers, or other sweet lemon, fresh and juicy
1 1/2 qt freshly drawn water
ice enough to make two quarts with water

  • 1. Slice cuke and fruit into 1/4 or so inches.
  • 2. Put into fresh water, fill with ice. Add sprg of fresh mint if you wish.

2-3 liters water
2 large oranges, sliced
1 lemon, sliced
1/2 large cucumber, sliced
1 handful of fresh mint

Steps:

  • Put oranges, lemon and cucumber in the water pitcher. Using a long spoon, gently mash fruits/veggies; this will release more flavor. Take the mint, and gently mash it to release the natural oils; add to the pitcher. Add water to the pitcher, and stir to begin the infusion process. Drink/serve immediately, or store in the refrigerator for up to 2 days.

Feggous is the Moroccan name for the Armenian cucumber, also known as snake cucumber, snake melon, yard-long cucumber, fakkous and uri. These long, thin cucumbers are mild, crispy, and don't need to be peeled or seeded - perfect for using in this refreshing Moroccan salad with orange flower water. The salad is especially good chilled. In addition to this salad, Moroccans eat feggous plain, sliced, salted, sweetened, or add them to chopped salads. Feggous is available in Morocco during summer months. Serves 4 as a starter, side or follow-up to a main dish.

1 lb. (about 1/2 kg) feggous (Armenian cucumber)
2 1/2 tablespoons sugar
2 1/2 tablespoons lemon juice
1 tablespoon orange flower water
pinch of salt

Steps:

  • Cut the ends off the feggous, and grate them into fine strands. Mix in the sugar, lemon juice, orange flower water and salt.
  • Leave the salad to stand at least 10 minutes to macerate, or cover and chill.
  • The salad should be served in individual bowls with the juices.
