2 tablespoons lemon juice
1 tablespoon lime juice
2 teaspoons minced fresh cilantro or parsley
1/4 teaspoon ground cumin
1/4 teaspoon salt
1/8 teaspoon pepper
1 medium cucumber, diced
1 medium mango, peeled and diced
1 medium tomato, chopped
1/4 cup finely chopped red onion
CHICKEN:
4 boneless skinless chicken breast halves (6 ounces each)
1 tablespoon olive oil
1 teaspoon chili powder
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • For dressing, in a small bowl, mix the first six ingredients. Place cucumber, mango, tomato and onion in a large bowl; toss with dressing., Brush chicken with oil; sprinkle with seasonings. Grill chicken, covered, over medium heat or broil 4 in. from heat 4-5 minutes on each side or until a thermometer reads 165°. Serve with salsa.

2 x skinless cod fillets
1 lime , zested and juiced
1 small mango , peeled, stoned and chopped (or 2 peaches, stoned and chopped)
1 small avocado , stoned, peeled and sliced
¼ cucumber , chopped
160g cherry tomatoes , quartered
1 red chilli , deseeded and chopped
2 spring onions , sliced
handful chopped coriander

Steps:

  • Heat oven to 200C/180C fan/gas 6. Put the fish in a shallow ovenproof dish and pour over half the lime juice, with a little of the zest, then grind over some black pepper. Bake for 8 mins or until the fish flakes easily but is still moist.
  • Meanwhile, put the rest of the ingredients, plus the remaining lime juice and zest, in a bowl and combine well. Spoon onto plates and top with the cod, spooning over any juices in the dish.

I found this recipe in a circular a long time ago and have adapted it over time. Can't remember which part of it is part of the original and what parts are my additions. This is a quick and easy side that perks up a basic grilled chicken breast or as a companion to tortilla chips. Sometimes I will top a bed of greens with leftover grilled chicken and this salsa for an easy and flavorful lunch.

1 large cucumber, peeled, seeded and diced into 1/4 cubes
1 mango, peeled and diced into 1/4 cubes
4 tablespoons red onions, finely diced
1 lime, juice of, only
1/2 teaspoon rice wine vinegar or 1/2 teaspoon white vinegar
1/2 jalapeno, very finely minced
2 -3 slices sweet red peppers, diced into 1/4 inch pieces (optional)

Steps:

  • Mix all ingredients together and let sit in fridge for an 30 minutes or more. This will keep one or two days if it lasts that long.
  • I like to add the red pepper -- mostly for color. It just looks so lovely with the bright orange of the mango.

2 medium mangoes, peeled and coarsley chopped
1/2 medium red onion, finely chopped
4 oz can, diced chillies, thoroughly drained
1/2 c fresh cilantro, chopped
1 large clove of garlic, pressed
1 medium cucumber, peeled, seeded and diced (set in colander, salt heavily and allow to throw its water)
1 large avocado, seeded, peeled and diced
1/4 c olive oil, extra virgin
1 tsp salt or to taste
1/2 tsp crushed red pepper flakes, or to taste
1 medium lime, juiced

Steps:

  • 1. Rinse and dry the diced and salted cucumber. Mix the cucumber with the rest of the first seven ingredients.
  • 2. Season with salt and red pepper flakes to taste.
  • 3. Stir in olive oil and lime juice. Serve at room temperature. (If refrigerated, remember to allow salsa to come to room temperature before serving).

6 tablespoons fresh lime juice
2 tablespoons honey
4 cups diced mangoes
3 cups diced cucumbers
1 1/3 cups minced red onions
2 tablespoons minced jalapeno peppers

1 pinch cayenne pepper
32 ounces fresh salmon fillets (skinless, boneless)

Steps:

  • To make salsa, first whisk lime juice and honey in medium sized bowl. Add mango, cucumber, onion, and jalapeno, and stir until well blended. Seal container and refrigerate for at least 1 hour before serving, to allow the flavors to mix. Season with salt to taste.
  • To prepare salmon, mix cumin, 1/2 tsp salt, and pinch of cayenne pepper in a small bowl.
  • Lightly coat both sides of the salmon in olive oil (spray or with brush).
  • Sprinkle spice mixture on both sides of Salmon.
  • Heat a small non-stick skillet over medium-high heat. Cook the salmon fillets until the outsides are lightly browned (1-2 minutes per side, depending on thickness). Then lower heat and cook until the fillets are pale-pink throughout (2-3 minutes per side).
  • Season with salt, pepper, cayenne, to taste. Transfer fillets to a plate, and top each with 2 Tbsp of salsa mixture.

1 lb chicken cutlets - trimmed and pounded to equal thickness
*Available in most groceries. May grind Ancho chilis in coffee grinder if unable to find prepared spice.

Steps:

  • Combine first 10 ingredients to make salsa (may be prepared one day in advance). 1-2 hours prior to grilling combine spices and evenly coat chicken pieces - cover and place in refrigerator. When ready to eat prepare grill for high heat. After chicken has marinated in dry rub, grill on each side for approximately 4-5 minutes or until cooked through. Serve chicken by spooning salsa on top of or aside chicken. Garnish with fresh cilantro leaves. Enjoy!

2 mangoes, cut into 1/2 inch pieces

1 T grated ginger
2 t fresh lime juice

1 1/2 lbs large sea scallops

Steps:

  • Cook the rice according to package directions. Meanwhile, in a medium bowl, combine the mangoes, cucumbers, ginger, lime juice, 1 T oil, cilantro, 1/2 t salt, and 1/8 t pepper; set aside. Rinse the scallops and pat them dry with paper towels. Season with 1/4 t salt and 1/8 t pepper. Heat the remaining oil in a large skillet over medium-high heat. Add the scallops and cook until golden brown and the same color throughout, about 2 minutes per side. Divide among individual plates and serve atop the rice with the salsa.

1 small garlic clove, minced
Juice of 1 lime
1/8 tsp. ground cumin
1 cup chopped green onions, green portion only
1/2 cup diced red bell pepper
1/4 tsp. cayenne pepper
1 Tbs. chopped fresh cilantro
2 Tbs. extra-virgin olive oil, plus more for grilling

4 salmon fillets, each 6 oz.

Steps:

  • In a large nonreactive bowl, stir together the mango, cucumber, garlic, lime juice, cumin, green onions, bell pepper, cayenne pepper, cilantro, the 2 Tbs. olive oil, salt and black pepper. Taste and adjust the seasonings. Set aside, stirring occasionally, until ready to use. Prepare a hot fire in a grill. Season the salmon fillets with salt and black pepper and brush both sides with olive oil. Arrange the salmon, skin side down, on the grill and cook until the skin is crisp and lightly browned, 3 to 4 minutes. Using tongs, carefully turn the salmon over and continue cooking until it is opaque throughout and lightly browned, 3 to 5 minutes more, or until done to your liking. Transfer the salmon to a warmed platter. Serve immediately and pass the salsa alongside.
