TOMATO, CUCUMBER AND GUACAMOLE SANDWICHES

Number Of Ingredients 9

1/2 large avocado, peeled
1 tablespoon fresh lime juice
1 garlic clove, pressed
1 teaspoon minced jalape&;ntilde;o chili
8 slices good-quality whole wheat bread (each about 4x4 inches and 1/2 inch thick)
20 thin tomato slices
16 thin peeled cucumber slices
8 thin red onion slices
1 cup lightly packed fresh cilantro sprigs

Steps:

  • Using fork, mash avocado, lime juice, garlic and jalapeño in small bowl until almost smooth. Season guacamole with salt and pepper.
  • Divide guacamole among all bread slices, spreading evenly (guacamole will be thinly spread). Place 5 tomato slices atop guacamole on each of 4 bread slices. Top each with 4 cucumber slices, then 2 onion slices, then cilantro. Top with remaining 4 bread slices, guacamole side down, pressing lightly. Cut sandwiches in half. (Can be prepared 3 hours ahead. Wrap in plastic; chill.)

4 cucumbers
½ cup guacamole
4 slices turkey
8 slices bacon

Steps:

  • Use a vegetable peeler to peel the cucumbers.
  • On a cutting board, cut off the ends and cut the cucumbers in half. Scoop out the seeds and discard.
  • Spread guacamole on both sides of the prepared cucumber.
  • Layer the turkey on one half of the cucumber and bacon on the other half, and close the sandwich.

Kosher salt
10 ounces frozen peas
2 large ripe Haas avocados, halved, seeded, and peeled
Zest and juice of 1 lime, plus more to taste
½ cup packed fresh cilantro, plus more for garnish
1 scallion, green parts only, chopped
1 small jalapeno, seeded and minced
2 seedless cucumbers, peeled and cut into thin slices at an angle, for serving

Steps:

  • Bring a large saucepan of salted water to a boil. Add the peas and cook for 1 minute. Drain and immediately rinse under cold water until room temperature. Drain well, then transfer to a food processor. Pulse until almost smooth. Add the avocado, lime zest and juice, and cilantro. Pulse until almost smooth. Add the scallion and jalapeno and pulse until well incorporated. Season to taste with salt. Transfer to a serving bowl and garnish with cilantro. Serve with the cucumber slices.

1 1/4 cups peeled and small-dice English cucumber
1/2 cup finely chopped red onion
2 medium jalapeño peppers or serrano chiles, stemmed and minced
2 tablespoons freshly squeezed lime juice (from about 2 medium limes), plus more as needed
1 1/2 teaspoons kosher salt, plus more as needed
1 1/4 pounds ripe avocados (about 3 medium)
1 1/2 cups small-dice fresh pineapple
1/2 cup coarsely chopped fresh cilantro

Steps:

  • Combine the cucumber, onion, chiles, measured lime juice, and measured salt in a large bowl. Halve and pit the avocados. Using a paring knife, score the flesh of the avocado halves in a 1/2-inch-wide cross-hatch pattern (be careful not to cut through the skin). Using a spoon, scoop the avocado pieces into the cucumber mixture. Add the pineapple and cilantro and stir to combine. Taste and season with additional lime juice and salt as needed. Serve immediately.

CUCUMBER GUACAMOLE

A refreshing dip that is a perfect accompaniment for a fiery Mexican meal or just a simple dip to enjoy with some toasted pitta bread in front of the TV.

Number Of Ingredients 6

1 Ripe Avocado
Half a Cucumber
Juice of half a lemon or lime
Salt to taste
Olive oil
1 finely chopped red chilli (optional)

Steps:

  • Peel and remove the stone from the avocado. Place in a bowl and mash with a fork to lumpy consistency.
  • Peel the cucumber and grate on to a plate, you can leave a few bits of the skin on as this will add colour. The excess water now needs to be squeezed out of the grated cucumber, do this by placing it between sheets of kitchen paper which will absorb the liquid and squeezing! do this a few times until most of the moisture is removed. Put in the bowl with the mashed avocado.
  • Add the lemon or lime juice and chilli (if using) and perfunctorally mix together. Add olive oil (if needed) to loosen the mixture and season to taste with salt.
  • Serve as a snack with toasted pitta bread/tortilla chips or as a side to a Mexican meal.
