WATERMELON-CUCUMBER COOLER

Nothing screams summer quite like a pretty pink watermelon cocktail.

Number Of Ingredients 7

5 cups cubed seedless watermelon (about 1 1/2 pounds)
1 large English cucumber, peeled and cut into chunks
1/4 cup fresh lime juice (from 2 limes)
2 tablespoons honey
2/3 cup vodka
Ice
Cucumber slices, for garnish

Steps:

  • Set a large fine-mesh sieve over a large bowl or pitcher. In a food processor or blender, puree watermelon. Pour watermelon puree through sieve, pressing on solids with a rubber spatula (you should have about 2 cups juice). Puree English cucumber and pour through sieve into watermelon juice.
  • In a small bowl or measuring cup, stir together lime juice and honey. Add to watermelon and cucumber juices, along with vodka. Adjust sweetness with more honey if desired. To serve, fill four glasses with ice and top each with cocktail. Garnish with cucumber slices.

1 cup sugar
1 cup water
1 cucumber, sliced
ice
2 oz gin
1 ½ oz watermelon, juiced
½ oz lime juice
1 oz cucumber simple syrup
club soda, to taste
1 slice cucumber, for garnish

Steps:

  • In a small pot over medium heat, combine the sugar and water. Bring to a boil, stirring to dissolve the sugar completely.
  • Remove the pot from the heat and stir in the cucumber. Let steep, covered, for at least 4 hours or up to overnight.
  • Strain the syrup through a fine-mesh sieve or cheesecloth, pushing to extract as much syrup as possible. Store in an airtight container in the refrigerator for up to 1 month.
  • In a cocktail shaker filled with ice, combine the gin, watermelon juice, lime juice, and simple syrup. Shake vigorously for 20 seconds.
  • Strain into a glass filled with ice and top with club soda.
  • Garnish with the cucumber slice.
  • Enjoy!

There's no alcohol in our recipe for a cucumber drink flavored with mashed mint leaves and lime, but this lightly sweet beverage is more refreshing than any cocktail.

3 cucumbers, peeled, seeded, and coarsely chopped (6 cups)
1/4 cup water
1/2 cup fresh mint leaves
1 lime, thinly sliced
24 ounces club soda
2 tablespoons agave nectar or honey

Steps:

  • In a blender, puree cucumbers and water. Pour through a fine-mesh sieve set over a large bowl, pressing on solids (you should have about 2 cups juice; refrigerate overnight, if desired). In a pitcher, mash fresh mint leaves with back of a wooden spoon until bruised. Add cucumber juice, lime, club soda, and agave nectar or honey; stir to combine. Fill 4 glasses with ice, top with drink, and serve with thinly sliced cucumber.

1 large honeydew melon
1 large cucumber, peeled
2 cups water
1/2 cup sugar
2 tablespoons fresh lemon juice
ice

Steps:

  • Remove rind from honeydew and cut into chunks.
  • Peel cucumber, cut 8 nice slices from the middle to use as garnish and cut the rest of the cucumber into chunks.
  • Using a blender and working in 2 batches, puree the melon, cucumber and water.
  • Strain mixture and discard solids.
  • Whisk sugar and lemon juice into the liquids remaining from melon/cucumber.
  • Taste it and add up to 2 cups more water if it is too concentrated for your liking.
  • Refrigerate until chilled and serve over ice with a floating slice of cucumber as a garnish.

1 750 milliliter bottle Sauvignon Blanc
1 hothouse cucumber, peeled, cut into 1/4" rounds
1 mango, pitted, peeled, finely diced
12 sprigs fresh mint, divided
1 cup ginger ale

Steps:

  • Stir sugar and 1 1/2 tablespoons hot water in a large pitcher until dissolved. Add wine, cucumber, and mango. Remove leaves from 6 sprigs of mint; stir into pitcher. Cover and chill for at least 3 hours and up to 6 hours.
  • Stir ginger ale into pitcher. Fill 6 large wineglasses with ice. Divide wine cooler among glasses. Garnish with remaining 6 mint sprigs.

SEKANJABIN (MINTY SUGAR SYRUP) - ENOUGH FOR 4 TO 5 DRINKS
1/4 cup water
1/2 cup granulated sugar
2 Tbsp white wine vinegar
1 to 2 sprig(s) fresh mint leaves (depending on how minty you want it)
FOR EACH COOLER:
2 Tbsp sekanjabin (minty sugar syrup)
1/2 cup cold water
1/4 cup ice cubes
3 Tbsp grated cucumber
1 or 2 lime slices
1 sprig fresh mint leaves

Steps:

  • 1. TO MAKE THE SUGAR SYRUP Add water and sugar to a medium saucepan over medium heat, and stir until thickened and just about ready to boil.
  • 2. Add the vinegar, and continue to stir until the sugar is fully dissolved and the syrup starts to boil again.
  • 3. Reduce heat to low. Add the mint and let mixture simmer for 10 minutes or until it thickens to a syrup and feels sticky. Let cool completely.
  • 4. FOR EACH MINT-CUCUMBER COOLER: Place 2 Tablespoons of the minty sugar syrup into a tall glass. Add 1/2 cup cold water and 1/4 cup ice cubes to the glass. Stir in 3 Tbsp grated cucumber until well blended. Garnish with a slice of lime and a sprig of fresh mint. Serve immediately, chilled.
