1 English cucumber, diced
2 cups chilled* cooked quinoa (see this tutorial for how to cook quinoa)
1/2 cup diced red onion
1/2 cup crumbled feta cheese
1/3 cup julienned or roughly-chopped fresh basil leaves
1 batch Lemony Italian vinaigrette (see below)
1/4 cup olive oil
2 tablespoons apple cider vinegar or red wine vinegar
1 tablespoon fresh lemon juice
1/2 teaspoon Italian seasoning, homemade or store-bought
pinch of salt and black pepper

Steps:

  • Toss all ingredients together until combined. Serve immediately.
  • Whisk all ingredients together in a small bowl until combined.

2 tablespoons blue cheese, crumbled
8 slices multigrain bread
1/4 cup apricot fruit spread
1 cucumber, sliced (16 slices)
4 slices swiss cheese
cooking spray

Steps:

  • Mix cream cheese and blue cheese; spread on 4 slices of bread.
  • Spread 1 tablespoon of apricot fruit spread over cheese.
  • Top each with 4 cucumber slices, a slice of Swiss cheese and remaining bread slices.
  • Spray a large skillet with cooking spray. Cook sandwiches over medium heat until golden on bottoms, about 5 minutes.
  • Spray tops of sandwiches with cooking spray and brown on the other side.

You know, growing up, I had all sorts of funny combos of food I liked. This one seems to be the one I am still eating when I want a snack and nothing else in the house sounds good. I love it with Chicken Noodle Soup.

2 slices white bread
2 slices American cheese (Kraft is my favorite!)
9 dill pickle slices (I usually use the thin hamburger dills)
butter, for frying

Steps:

  • Preheat a skillet and toss in enough butter to fry your sandwich. I tend to use more than necessary, usually, because I like mine more wet than toasty.
  • Place the pickle slices on top of the cheese and top with the other cheese slice and bread.
  • Fry the sandwich until it gets browned like you like it, but long enough on either side to melt the cheese until gooey.
  • Eat it while it's hot!
