- Heat broiler, with rack set 4 inches from heat. In a small bowl, whisk together lime juice, vinegar, oils, red-pepper flakes, and garlic.
- Pierce steak all over with a fork; place in a shallow dish or resealable plastic bag. Pour soy sauce and half of lime-juice mixture over steak (reserve remaining half for dressing), and marinate at room temperature, 10 minutes (or up to overnight in the refrigerator).
- Spray a baking sheet with cooking spray. Lift steak from marinade (discard marinade), and place on baking sheet. Broil, without turning, until medium-rare, 8 to 10 minutes. Let rest 5 minutes. Slice thinly on the diagonal, across the grain.
- In a large bowl, toss cabbage and cucumber with reserved dressing; divide among four plates. Top salad with steak and peanuts.

I am still trying to find a recipe that comes close to the Shanghai Cucumber dish at PF Chang's. I just found this on another website and here is what the chef had to say: "I am experimenting with cucumbers since I ate this cucumber thing at PF Chang's. This one is better than the first one and as close as I have gotten to PF Chang's cucumber appetizer. When you have drained the sauce that they are marinating in, try to pour some of the sauce over brown rice. It is really good!"

- Slice the cucumbers in half lenghwise, and scoop out the seeds with a spoon. Slice the halves again into half, so you end up with quarters. Cut up the cucumber into chunks about 3/4 cm / 1/2 inch thick (no need to be too precise here; just chop away roughly). Peel, quarter and core the nashi pear. Slice fairly thinly. Combine the cucumber and pear in a large bowl and sprinkle with 1/2 teaspoon salt. Mix well and set aside. In a small bowl, combine the rest of the salt, soy sauce, vinegar, sugar and chili pepper flakes. Stir well but don't worry if the sugar and salt don't melt totally - they will melt once you mix this with the vegetables. - Simmer hoisin, chili garlic sauce, honey, vinegar, oil, and salt for the satay in a saucepan over medium-high. Cook marinade 5 minutes, then set it aside to cool.
- Prepare pork, cutting it first into thirds lengthwise, then in half crosswise to make 6 pieces. Finally, slice each piece in half lengthwise to make 12 strips, each 4- to 6-inches long. Toss pork strips in the marinade, then thread strips onto skewers.

- Cucumber Salad: Combine sugar, vinegar, salt, and pepper flakes for the dressing in a bowl; set aside.
- To prepare the cucumbers, cut each cucumber in half lengthwise, then scoop out the seeds with a spoon. Discard seeds. Slice cucumber halves into thin slices to make a yield of 2 to 2 1/2 cups.
- Toss cucumber and onion slices with dressing until well coated. Chill salad until ready to serve. Salad can be prepared up to 1 hour ahead.
