4 ounces thinly sliced prosciutto-style country ham
4 ounces asparagus, cut into 1-inch pieces
4 ounces strawberries, pitted and sliced thin
1/2 cup arugula
1/4 cup crumbled feta cheese
Balsamic glaze, to taste

Steps:

  • Bring water to a boil in a large pot. Add asparagus and cook until bright green but still crisp, about 1 minute. Drain and pat dry.
  • Arrange country ham, asparagus, and strawberries onto a medium-sized serving platter. Garnish with arugula and feta. Drizzle with the balsamic glaze, to taste.

1 English cucumber
1 (8 ounce) package cream cheese, softened
2 tablespoons prepared mustard
1 teaspoon dill weed
8 slices rectangular deli ham

Steps:

  • Peel the cucumber; cut in half lengthwise. Scoop out the seeds with a spoon, (a grapefruit spoon works great). Cut each half lengthwise into four strips; set aside. In a small mixing bowl, combine the cream cheese, mustard and the dill. Spread about 2 tablespoons over each ham slice. Place a cucumber strip on the wide; roll up TIGHTLY jelly-roll style. Cut off any cucumber that extends beyound the ham slice. Wrap tightly in plastic wrap and refrigerate for at least 2 hours. Cut into 3/4-in. slices.
