6 celery stalks, thinly sliced crosswise
1 English cucumber, peeled, seeded, and thinly sliced crosswise
1/3 cup coarsely chopped fresh flat-leaf parsley
1/4 cup coarsely chopped fresh mint
3 tablespoons extra-virgin olive oil
Coarse salt and freshly ground black pepper

Steps:

  • Toss together celery, cucumber, parsley, mint, and oil in a bowl. Season with salt and pepper.

3 tablespoons pickle relish
2 tablespoons cider or red wine vinegar
3 tablespoons extra-virgin olive oil, eyeball it
1 seedless cucumber, quartered lengthwise and sliced 1/2 inch thick (you can use a regular cuke, but seed it and if the skin is waxy, peel it)
5 to 6 ribs celery from the heart, sliced 1/2-inch thick
1/4 cup chopped hot or roasted red peppers or 1/2 small fresh bell pepper, whichever you have on hand
1 small jar marinated mushrooms or artichoke hearts or 1 cup pickled vegetable salad, "giardiniera", chopped
Salt and pepper

Steps:

  • Place relish in the bottom of a bowl. Whisk in vinegar then extra-virgin olive oil. Add cucumber, celery, peppers and marinated vegetable of choice to the bowl. Toss salad and adjust salt and pepper, to taste.

FENNEL SALAD WITH CELERY, CUCUMBER, LEMON, AND POMEGRANATE



Fennel Salad with Celery, Cucumber, Lemon, and Pomegranate image

1 large fennel bulb, fronds intact
2 stalks celery, cut into 1/2-inch pieces
1 cucumber, sliced into rounds
1/4 cup diced red onion
Juice of 1 lemon
4 tablespoons extra-virgin olive oil
Salt and freshly ground pepper to taste
2 tablespoons pomegranate seeds

Steps:

  • Cut the fennel bulb in quarters, then lengthwise into 1/2-inch-thick slices. Snip 2 tablespoons of the fronds, and set aside. Toss the fennel, 1 tablespoon of the fronds, the celery, the cucumber, and the onion together in a medium-sized salad bowl.
  • Squeeze the lemon over the vegetables, and drizzle on the olive oil. Season with salt and pepper to taste, and toss to coat. Serve, sprinkled with the remaining tablespoon of fennel fronds, and the pomegranate seeds.

We developed this mid-summer salad to use an overabundance of fresh cucumbers, tomatoes, and celery. This recipe makes more dressing than you need for the salad, but it will keep almost forever in the refrigerator.

⅓ cup water
1 tablespoon dill seed
1 tablespoon honey
⅓ cup buttermilk salad dressing and seasoning mix
2 cups mayonnaise
1 cup buttermilk
1 ⅓ cups milk
1 cup white vinegar
2 large cucumbers, quartered and thinly sliced
3 tomatoes, cubed
2 stalks celery, chopped
½ onion, sliced and quartered
2 cloves garlic, minced
1 teaspoon salt

Steps:

  • Place water and dill seed in a small saucepan and bring to a simmer over medium-high heat. Reduce heat to medium-low and simmer 10 minutes. Whisk in honey and salad dressing mix, then pour mixture into a large bowl. Whisk in mayonnaise, buttermilk, milk, and vinegar until smooth.
  • Place cucumbers, tomatoes, celery, onion, garlic, and salt into a separate bowl, and pour half of the dressing onto the vegetables; toss well. Cover, and refrigerate salad for at least 1 hour. Cover and refrigerate remaining dressing for future use.

5 mini seedless or Persian cucumbers or 1 small English hothouse cucumber (about 12 oz.)
Kosher salt
1 (3x1") strip lemon zest, very thinly sliced
2 Tbsp. fresh lemon juice
2 Tbsp. extra-virgin olive oil
1/4 tsp. celery salt, plus more for serving

Steps:

  • Gently smash cucumbers with a rolling pin or the back of a heavy knife just to break open. Tear into irregular 2" pieces and place in a medium bowl; season lightly with salt. Let sit at least 5 minutes and up to 1 hour.
  • Meanwhile, whisk lemon zest, lemon juice, oil, and 1/4 tsp. celery salt in a medium bowl to combine; season dressing with salt.

Coarse salt and ground pepper
1 whole chicken (3 1/2 pounds), cut into 10 pieces and skin removed, plus 1 bone-in, skin-on chicken breast (3/4 pound)
2 tablespoons plus 2 teaspoons extra-virgin olive oil
1 English cucumber, halved and thinly sliced
1 shallot, halved and thinly sliced
2 celery stalks, thinly sliced, plus 1/4 cup celery leaves
2 teaspoons red-wine vinegar
Scallion Cornbread Muffins

Steps:

  • In a bowl, mix buttermilk, 2 teaspoons salt, and 1/4 teaspoon pepper. Add 10 pieces from whole chicken; stir to coat. Marinate 30 minutes (or up to 8 hours).
  • Preheat oven to 450 degrees. In a food processor, pulse bread until fine crumbs form, 30 seconds. Transfer to a rimmed baking sheet; bake until golden brown, 7 minutes. Transfer breadcrumbs to a bowl and toss with 2 tablespoons oil.
  • Set a wire rack in baking sheet. Remove chicken from marinade, shaking off as much liquid as possible, and coat with breadcrumbs. Place on rack, along with nonbreaded chicken breast, and season all with salt and pepper. Bake until chicken is cooked through and golden brown, 45 to 50 minutes, rotating sheet halfway through (tent chicken with foil if overbrowning). Refrigerate extra breast for later use.
  • Meanwhile, in a bowl, combine cucumber, shallot, celery and leaves, vinegar, and 2 teaspoons oil; season with salt and pepper. Serve salad with buttermilk chicken and muffins.
