CARNE FRIA AL ESTILO DE CUBA - (COLD MEATLOAF CUBAN STYLE)
This is another recipe that my friend Vicky Gomez gave me - it is for a type of meatloaf. She makes it by poaching it(wrapped in foil)and then serves it cold and sliced very thin on crackers or toasted pita or cocktail breads. I used most of her ingredients but instead of poaching it - I made it in the oven. We use this as an appetizer or canapés as well. Didn't allow for chilling or cooling times, which is approximately 10-12 hours.

Steps:
- Preheat oven to 300ºF.
- Mix all ingredients well by hand except for breading ingredients.
- Divide into 3-4 portions and roll each into a cylinder or log about 1-1/2"-2" in circumference.
- Place in plastic wrap; shape into logs and refrigerate for about 2 hours, until the meat is firm to the touch.
- First, roll the logs in beaten egg and then in Italian seasoned breadcrumbs or cracker meal or dry bread crumbs.
- Roll each log separately and wrap in foil making sure the seams are well sealed.
- Place on an ungreased baking sheet.
- Bake for an hour.
- Remove from oven DO NOT open foil.
- Allow to cool until it reaches room temperature.
- Refrigerate for 8 hours or overnight.
- Cut into thin slices and serve cold with toasted pita chips, Carr's water biscuits, or Parmesan rosemary crisps.
- As a nice topping, you can use a slice of hard boiled egg and a strip of red pimento on top.

SUPER MEATLOAF SURPRISE
I've been making this recipe for years. My wife and kids just love it. It's even better the next day for sandwiches. It's siple to make and you can modify it to your liking. Super low in carbs also.

Steps:
- Preheat oven to 350 degrees F.
- Mix everything in a large bowl (except the bacon).
- On a piece of wax paper spread out the mixture to form a rectangle about 10" wide. Layer the bacon across the top of the mixture. Starting on one end roll the mixture up like a burrito. Place the rolled up meatloaf seam down in a baking dish.
- Bake at 350 degrees for 1 hour and 15 minutes or untill a meat thermometer reaches 165 degrees. Drain the fat and let the meatloaf rest for 10 minutes before cutting.
- Serve with a fresh salad or smash potatoes and green beans.

MEATLOAF SURPRISE
I'm usually not big on meatloaf but I do like this one - another special from my Italian sister-in-law. Served with a tossed salad, it makes a perfect weeknight family meal.

Steps:
- Prepare meat mixture: Melt butter in pot over medium heat; saute onion, pepper& garlic until onion is translucent- about 4 minutes.
- Put meat into a large bowl& mash it with a wooden spoon until it becomes a sticky paste.
- Add the fried vegetables, bread crumbs, cayenne, lemon juice, lemon rind& parsley.
- Season with salt& pepper, combine well and set aside.
- Prepare cheese sauce: Melt butter in a pot; stir in flour& cook for 1 minute.
- Gradually pour in milk, stirring constsntly.
- Stir in cream and season with nutmeg, salt& pepper.
- Simmer for 5 minutes to thicken& reduce sauce.
- Lower heat, stir in cheeses and stir until melted.
- Meanwhile, cook pasta in boiling, salted water until el dente.
- Drain well& stir into cheese sauce.
- Lightly grease a 2 lb loaf tin.
- Spoon in half the meat mixture& level the surface.
- Cover with the pasta mixture.
- Spoon in the rest of the meat mixture.
- Cover with tin foil and bake in preheated 350F oven for 45 minutes.
- Remove foil and continue cooking for another 15 minutes.
