This cuatro leches cake recipe creates a soft, moist, and sweet cake that's soaked in four different milk flavors (caramel sauce included).

1 butter golden or yellow box cake mix (prepared in a greased 9x13 pan according to directions)
16 ounces caramel
1 can sweetened condensed milk (14 ounces)
12 ounces evaporated milk
1 cup heavy cream
16 ounces whipped topping

Steps:

  • After the cake has been prepared according to package directions, poke holes all in the top of it.
  • In a medium bowl, stir together the condensed milk, evaporated milk, and heavy cream. Pour over the warm cake.
  • Allow cake to cool slightly and milk mixture to be absorbed.
  • Spread caramel over cooled cake. Cover with a lid or plastic wrap and refrigerate overnight.
  • Ice the cake with the whipped cream topping and serve immediately or cover and return to the refrigerator until ready to serve.

1-1/4 cups water
4 large eggs, room temperature
1 can (14 ounces) sweetened condensed milk
1 cup coconut milk
1 can (5 ounces) evaporated milk

WHIPPED CREAM:
3 cups heavy whipping cream
1/3 cup confectioners' sugar
Assorted fresh berries

Steps:

  • Preheat oven to 350°. Line 48 muffin cups with paper liners., In a large bowl, combine cake mix, water and eggs; beat on low speed 30 seconds. Beat on medium 2 minutes., Fill prepared cups halfway, allowing room in liners for milk mixture. Bake 11-13 minutes or until a toothpick inserted in center comes out clean. Cool 5 minutes before removing from pans to wire racks; cool slightly., Place cupcakes in 15x10x1-in. pans. Poke holes in cupcakes with a skewer. In a small bowl, mix milks and salt; spoon scant 1 tablespoon mixture over each cupcake. Refrigerate, covered, overnight., In a large bowl, beat cream until it begins to thicken. Add confectioners' sugar; beat until soft peaks form. Spread over cupcakes; top with berries. Store in the refrigerator.

1 1/2 cups granulated sugar
4 large egg whites
1 whole large egg
1 1/2 sticks unsalted butter, cut into tablespoons, at cool room temperature
2 3/4 cups all-purpose flour
1 cup whole milk
1/4 cup sour cream
4 teaspoons baking powder
2 teaspoons vanilla extract
1/4 cup coconut milk
1/4 cup sweetened condensed milk
1/4 cup evaporated milk
1/4 cup heavy cream
2 1/2 cups heavy cream
3 tablespoons powdered sugar
1 1/2 teaspoons vanilla extract

Steps:

  • Preheat the oven to 325 degrees F. Line two standard muffin pans with 20 cupcake liners.
  • For the cupcakes: Put 1/2 cup of the granulated sugar, the egg whites and whole egg in the bowl of a stand mixer fitted with a paddle attachment and beat on medium-high speed for about 2 minutes. Pour into another bowl and set aside. Clean the mixing bowl. Put the remaining 1 cup sugar and the butter in the clean mixing bowl and beat on medium-high for about 30 seconds. Add the flour, milk, sour cream, baking powder and vanilla. Beat on medium until combined and fairly smooth. Return the egg mixture to the mixing bowl and stir just until incorporated. Using a 1/4-cup ice cream scoop, fill each cupcake liner with batter.
  • Bake the cupcakes until a cake tester inserted in the center comes out clean and the tops are light golden brown, 17 to 20 minutes. Transfer the pans to cooling racks and cool for about 10 minutes, and then transfer the cupcakes to the racks and allow to cool completely before filling and frosting.
  • For the quatro leches mixture: Whisk the coconut milk, sweetened condensed milk, evaporated milk and heavy cream in a mixing bowl to combine. Transfer to a squeeze bottle and refrigerate.
  • When the cupcakes are cool, make the frosting: Combine the cream, powdered sugar and vanilla in a chilled mixing bowl. Whip until medium-stiff peaks form. Be careful not to over whip. Chill briefly if not using right away.
  • To assemble: Use a chopstick or fat skewer to poke 4 or 5 holes halfway through each cupcake. Squeeze some of the quatro leches mixture into each hole; you can let it sink in a bit and then squeeze in some more to fill. Frost generously with the whipped cream frosting.

1/4 cup nonfat milk powder
1 cup sugar
1/2 teaspoon kosher salt
1 1/2 cups whole milk
1/3 cup safflower oil
5 large egg yolks plus 6 large egg whites
1 vanilla bean, split and seeds scraped
1/4 teaspoon cream of tartar
1 can (14 ounces) sweetened condensed milk
1 can (12 ounces) evaporated milk
2 cups cold heavy cream
1/4 cup sugar
Fresh peaches, berries, or citrus (optional)

Steps:

  • Cake:Preheat oven to 325 degrees. Lightly butter a 13-by-9-inch baking dish. In a medium bowl, whisk together flour, milk powder, 1/2 cup sugar, baking powder, and salt. In a separate bowl, whisk together 1/2 cup whole milk, oil, egg yolks, and vanilla seeds. Whisk egg-yolk mixture into flour mixture.
  • In the bowl of a mixer fitted with the whisk attachment, beat egg whites on high speed until frothy. Add cream of tartar and beat until soft peaks form. Gradually add remaining 1/2 cup sugar, beating until stiff, glossy peaks form, about 5 minutes. Using a rubber spatula, fold one-third of egg-white mixture into batter. Gently but thoroughly fold in remaining egg-white mixture. Transfer to prepared dish. Bake until top springs back when lightly touched, about 40 minutes.
  • In a medium bowl, whisk together condensed milk, evaporated milk, and remaining 1 cup whole milk. Poke warm cake all over with a wooden skewer or toothpick, then pour milk mixture over top. Let cool to room temperature, about 1 hour.
  • Topping:Whisk cream and sugar to medium peaks. Spread whipped cream over cake and serve with fruit, if desired.
