Do you have a little bit of leftover ham or mushrooms? It doesn't take much of any of them and you can have a real feast with this Italian pie. I like it best using pepperoni, mushrooms and onions.

1 lb ricotta cheese
1 cup grated mozzarella cheese
3 eggs, slightly beaten
1 (10 ounce) package frozen spinach, thawed and squeezed to remove water
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon dried dill
1/2 teaspoon garlic powder
1/3 cup pepperoni or 1/3 cup ham
1/4 cup onions or 1/4 cup zucchini, in any combination that you prefer
olive oil

Steps:

  • Combine ricotta, mozzarella and eggs, mixing well.
  • Blend in spinach.
  • Add remaining ingredients mixing well.
  • Pour into a buttered 10" springform pan.
  • Drizzle the top with a small amount of olive oil for a golden color.
  • Bake in a preheated 350 degree oven for 40 minutes.
  • Serve warm or room temperature.

This is an easy recipe for spanikopita without the filo dough.

2 pounds spinach, rinsed and chopped
8 ounces feta cheese, crumbled
1 (8 ounce) container cottage cheese
½ cup chopped onion
¾ teaspoon poultry seasoning
2 teaspoons chopped fresh dill
¼ teaspoon ground black pepper
salt to taste
2 cups bread crumbs
4 tablespoons butter, melted

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease one 9x13 inch casserole dish.
  • In a large bowl, combine the spinach, feta cheese, cottage cheese, onion, poultry seasoning, dill, pepper and salt. Mix well and pour into prepared dish.
  • Mix together the breadcrumbs and butter. Sprinkle over spinach mixture and bake at 350 degrees F (175 degrees C) for 30 minutes.

20 ounces frozen chopped spinach, thawed, drained & squeezed dry
3 large eggs, lightly beaten
2 teaspoons dill weed
8 scallions, sliced
1/3 cup parmesan cheese, grated
1/3 cup plain nonfat yogurt or 1/3 cup low-fat sour cream
1 tablespoon olive oil
4 ounces feta cheese, crumbled
2 tablespoons fresh lemon juice
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Stir together ingredients and bake in a greased glass pie pan for 45-50 minutes at 375°F or until firm and lightly browned.
  • Cool 5-10 minutes before slicing and serving.

1 teaspoon olive oil
4 ounces presliced fresh button mushrooms
1/2 cup chopped onion
1/2 teaspoon bottled minced garlic or 1 medium garlic clove, minced
1 1/2 cups fat-free milk
1 10-ounce package frozen chopped spinach, thawed, drained well, and squeezed dry
1 cup uncooked instant brown rice
1/2 cup egg substitute
3 slices (3/4 ounce each) low-fat Jarlsberg cheese, cut into 1-inch strips
1/4 cup shredded or grated Parmesan cheese
1/4 teaspoon ground nutmeg
1/4 teaspoon red hot-pepper sauce, plus more for sprinkling if desired

Steps:

  • Preheat the oven to 350°F. Lightly spray a deep 9-inch pie pan with cooking spray.
  • In a large nonstick skillet, heat the oil over medium-high heat, swirling to coat the bottom. Cook the mushrooms and onion for 3 minutes, or until tender, stirring frequently.
  • Stir in the garlic. Cook for 30 seconds, stirring frequently.
  • Pour in the milk. Heat for 1 1/2 to 2 minutes, or until hot but not boiling. Remove from the heat.
  • Stir in the spinach, rice, egg substitute, Jarlsberg, Parmesan, nutmeg, and 1/4 teaspoon hot-pepper sauce, breaking up any large clumps of spinach. Carefully pour into the pie pan.
  • Bake for 30 to 35 minutes, or until a knife inserted into the center of the pie comes out clean. Sprinkle with additional hot sauce.

If you can't find it, you can substitute low-fat Swiss, but the total fat, saturated fat, and sodium of the Swiss will be higher.

2-3 box (10 oz) chopped frozen spinach, thawed and drained well
1 large onion, chopped or minced
1/4 c butter or margarine
salt and pepper, to taste
1 clove garlic, minced
1 1/2 c shredded cheddar cheese
1 well-beaten egg
1/2 lb danish sansoe or havarti cheese, cut into strips

Steps:

  • 1. Preheat oven to 375 degrees F. Saute onion in butter until soft. Add spinach, garlic, salt and pepper. Cook until mixture is somewhat dry.
  • 2. Spoon half of the spinach mixture into a greased pie pan. Spread the cheddar on top. Cover with the rest of the spinach mixture.
  • 3. Spoon beaten egg over top. Add the strips of cheese. Bake for 25 minutes.

  • USE FRESH SPINACH and wilt over low heat in pan. CHOP ONION and mince garlic. COMBINE ALL INGREDIENTS in medium bowl. SPRAY PIE DISH with non-stick spray. Pour mixture into pan. BAKE AT 350 °F (175 °C) for 45-50 minutes.
