I can't make a crust... so this is perfect!! Made this quiche a couple of times and it always turned out perfect! This makes a delicious quiche! From Canadian Diabetes Cookbook.

10 ounces fresh spinach
2 teaspoons vegetable oil
1 teaspoon minced garlic
3/4 cup chopped onion
3/4 cup chopped mushroom
2/3 cup 5% fat ricotta cheese
2/3 cup 2% fat cottage cheese
1/3 cup grated cheddar cheese
2 tablespoons grated parmesan cheese
1 whole egg
1 egg white
3 tablespoons chopped fresh dill or 2 teaspoons dried dill
1/4 teaspoon ground black pepper

Steps:

  • Preheat oven to 350°F Spray an 9-inch springform pan with vegetable spray.
  • Wash spinash and shake off excess water. In the water clinging to the leaves, cook the spinach over high heat just until it wilts. Squeeze out excess moisture, chop and set aside.
  • In large nonstick skillet, heat oil over medium heat; add garlic, onions and mushrooms and cook for 5 minutes or until softened. Remove from heat and add chopped spinach, ricotta, cottage, Cheddar and Parmesan cheeses, whole egg, egg white, dill and pepper; mix well.
  • Pour into prepared pan and bake for 35 to 40 minutes or until knife inserted in center comes out clean.

I came up with this when I was among the many doing the Atkin's Low Carb dieting... This was something tasty without all the carbs. You may have to play with the measurements a bit as I never measured it, I just dumped it in a bowl all together and mixed it adding as I saw fit.

1 (10 ounce) package frozen spinach, thawed and drained
6 eggs
1/2 cup onion, chopped
1 cup cottage cheese
1 cup cheddar cheese, shredded
1 cup mozzarella cheese, shredded
1/2 cup milk
1/2 cup bacon, cooked and crumbled
1/2 teaspoon salt
1/2 teaspoon black pepper

Steps:

  • Cook bacon (as crispy as you like) and crumble. Drain on paper towels to absorb excess grease and set aside.
  • Saute onion just a bit so they won't be crunchy in your quiche. Place with bacon on yor paper towel.
  • In a bowl, beat eggs. Add cheeses, milk, salt and pepper. Mix well.
  • Mix in bacon and onions. Stir in spinach.
  • Put in sprayed 9 inch pie pan or 8x8 baking dish.
  • Bake at 350 for 40 minutes or until toothpick inserted into quiche comes out clean.

1/2 onion, diced
1 tablespoon olive oil
1 -2 tablespoon chicken broth or 1 -2 tablespoon water
1/2 cup flour
1 cup milk
1/8 teaspoon nutmeg
1/4 teaspoon black pepper
1/2 teaspoon salt
6 eggs
1 cup cottage cheese
1 cup shredded cheese
1/2 cup feta cheese

Steps:

  • Preheat the oven to 375.
  • Heat oil in a skillet, add onion, saute until soft.
  • Add fresh spinach and chicken broth (or water) and toss until wilted but not mushy.
  • whisk flour with milk until smooth.
  • Add nutmeg, salt and pepper.
  • Whisk in 6 eggs.
  • Stir in all cheeses with the spinach and onion mixture.
  • Pour everything into a greased 8x8 or 9x9 baking dish.

Slow-Cooker Ham, Cheese and Spinach Crustless Quiche image

Save some room in your oven, and make quiche in your slow cooker instead! We think the most important part of any slow cooker recipe is how you finish it, so we left the spinach out of the quiche and put it on top so it stays nice and green. You can also top your quiche with vinaigrette-tossed baby mixed greens or arugula.

Cooking spray
3 teaspoons olive oil
1 large shallot, thinly sliced
1/2 teaspoon lemon zest
Kosher salt
4 large eggs plus 4 large egg yolks
3 cups half-and-half
Freshly ground black pepper
1/4 pound sliced deli ham, torn into bite-size pieces
4 ounces shredded aged fontina (about 1 1/2 cups)
2 tablespoons cornstarch
5 ounces baby spinach (about 6 cups)
1/4 cup grated Parmesan

Steps:

  • Line a 6-quart slow cooker insert with a large piece of foil so it goes about 2 inches up the side. Spray generously with cooking spray.
  • Heat 1 teaspoon of the oil in a large skillet over medium-high heat. Add the shallots, and cook, stirring frequently, until they turn lightly golden, about 1 minute. Remove from the heat, and stir in the lemon zest and a pinch of salt.
  • Whisk together the eggs, egg yolks, half-and-half, 1 teaspoon salt and a few grinds of pepper in a large bowl.
  • Transfer the cooked shallots to a medium bowl. Add the ham, fontina and cornstarch, and toss. Scatter the mixture over the bottom of the lined insert. Pour in the egg mixture. Cover the slow cooker, and cook on high until the middle is set and no longer jiggles, about 3 1/2 hours. Remove the lid, dab the quiche with a paper towel to absorb any excess liquid and let rest for 20 minutes.
  • Meanwhile, wipe out the large skillet and heat the remaining 2 teaspoons oil over medium heat. Add a few handfuls of spinach, and cook, tossing and stirring, until wilted; repeat until all the spinach is wilted, about 8 minutes total. Season with 1/2 teaspoon salt a few grinds of pepper.
  • Use the foil to help remove the quiche from the insert. Use metal spatulas to lift it from the foil and onto a serving platter. Top with the wilted spinach, and scatter the Parmesan over the top. Serve warm or at room temperature.

1 onion, chopped
1 (10 ounce) package frozen chopped spinach, thawed and drained
5 eggs, beaten
1 cup swiss cheese, shredded
1 cup cheddar cheese, shredded
1 cup monterey jack cheese, shredded
1/4 teaspoon salt
1/8 teaspoon pepper
1/2 cup table cream

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9 inch pie pan.
  • Heat oil in a large skillet over medium-high heat.
  • Add onions and cook, stirring occasionally, until onions are soft.
  • Stir in spinach and continue cooking until excess moisture has evaporated.
  • In a large bowl, combine eggs, table cream, cheese, salt and pepper.
  • Add spinach mixture and stir to blend.
  • Bake in preheated oven until eggs have set, about 30 minutes.

12 slices OSCAR MAYER Turkey Bacon
2 tsp. oil
1 cup sliced fresh mushrooms
1 doz. eggs
1/3 cup BREAKSTONE'S Reduced Fat or KNUDSEN Light Sour Cream
1 pkg. (10 oz.) frozen spinach, thawed, drained
1 Tbsp. hot pepper sauce
1 pkg. (7 oz.) KRAFT 2% Milk Finely Shredded Mild Cheddar Cheese

Steps:

  • Heat oven to 325ºF.
  • Reserve 2 Tbsp. each onions and tomatoes. Cook bacon in large skillet until crisp. Remove bacon from skillet; drain on paper towels. Add oil and mushrooms to same skillet; cook and stir 2 min. on medium heat or until mushrooms are tender. Remove from heat. Cut bacon into bite-size pieces. Add to skillet with remaining onions and tomatoes; mix well.
  • Whisk eggs, sour cream, spinach and pepper sauce until blended; pour into 13x9-inch baking dish sprayed with cooking spray. Top with vegetable mixture and cheese.
  • Bake 30 min. or until center is set; top with reserved onions and tomatoes. Let stand 5 min. before cutting to serve.

This is my take on Paula Deen's recipe. It is more like a casserole without the crust but just as rich and yummy. Her recipe calls for cottage cheese which I do not like so I used creamed spinach instead of chopped, some milk and extra parmesan cheese to make up the difference.

1 (10 ounce) package frozen creamed spinach
4 eggs
1 cup sour cream
3/4 cup milk
1 cup parmesan cheese, grated
1/4 cup unbleached all-purpose flour
1 teaspoon salt

2 cups cheddar cheese, grated

Steps:

  • Preheat the oven to 325 degrees F. Spray an 8 by 8-inch baking dish with cooking spray.
  • Microwave the creamed spinach according to package directions, but only enough to thaw it so that it can be mixed with ingredients, if it is too hot it will cook the egg as it is mixed in . Set aside.
  • Combine the eggs, sour cream, milk, Parmesan, flour, salt, and pepper, in a medium bowl. Stir together, or blend in food processor until the mixture is smooth, about 1 minute. Add creamed spinach and the Cheddar and blend with a spoon until well mixed. Pour the spinach mixture into the baking dish and smooth out the top.
  • Bake until set, about 45 minutes. Remove the baking dish from the oven. It will be puffed up, but will fall slightly as it cools.

500 g frozen spinach (thawed and squeezed well, to remove liquid)
1 onion (finely chopped, sauteed to soften)
6 eggs
250 g ricotta cheese
400 g feta cheese (crumbled)
1 tablespoon parmesan cheese
1 teaspoon pepper
1/2 teaspoon dried dill

Steps:

  • Preheat oven to 180°C.
  • Thaw (or lightly steam) and squeeze spinach, set aside.
  • Chop and saute onion. Set aside to cool.
  • Beat eggs in bowl, add 3 cheeses, pepper and dill.
  • Add spinach and onion. Mix well.
  • Pour into greased medium sized baking dish, and bake for 30-35 mins or until puffed slightly and set to touch.
  • Leave to rest on bench for 5 mins before cutting.
