1/2 tsp Kosher Salt Divided

4 oz Goat Cheese Sliced
1/2 cup Half-and-half cream
1/2 cup Sour Cream
1/2 cup Milk
1 dash Hot Pepper Sauce
1 dash Worcestershire Sauce

Steps:

  • Preheat oven to 400F Grease 9 inch round glass baking dish with 1 tbsp spread, set aside Melt remaining spread over medium heat Cook green onions with half the salt and pepper Stir frequently, cook for about 2 minutes, set aside Whisk eggs in medium bowl Stir in goat cheese until fairly smooth Season with remaining salt and pepper. Whisk in remaining ingredients Pour egg mixture into prepared pan Sprinkle with the green onions Bake for 30 minutes or until golden brown Cool for 20 minutes Refrigerate any leftovers

2 tablespoons unsalted butter, at room temperature, plus more, for the pie plate
2 tablespoons finely grated Parmesan
2 cups half-and-half
2 large eggs
2 large egg yolks
Pinch cayenne
Kosher salt and freshly ground black pepper
2 1/2 cups small broccoli florets
2/3 cup crumbled fresh goat cheese
2 tablespoons chopped fresh parsley

Steps:

  • Preheat the oven to 350 degrees F. Brush a 9-inch pie plate with the butter and sprinkle the Parmesan evenly on top. Put on a rimmed baking sheet.
  • Whisk the half-and-half, eggs, egg yolks, cayenne, 1/2 teaspoon salt and a few grinds of pepper in large bowl. Spread the broccoli in the prepared pie plate and top with the goat cheese. Pour the egg mixture over top and sprinkle with parsley.
  • Bake until the quiche is just set in the center, 40 to 50 minutes. Transfer to a wire rack to cool and then cut into wedges.

1/2 tsp. ground white or black pepper
4 eggs
4 oz. goat cheese
1/2 c. half-and-half
1/2 c. sour cream
1/2 c. milk
1 dash Hot pepper sauce
1 dash Worcestershire sauce

Steps:

  • Preheat oven to 400 degrees F. Grease bottom and sides of 9-inch round glass baking dish with 1 tablespoon I Can't Believe It's Not Butter!® Spread; set aside.
  • Melt remaining 1 tablespoon Spread in 10-inch skillet over medium heat and cook green onions, 1/4 teaspoon salt, and 1/4 teaspoon pepper, stirring frequently, until green onions are crisp-tender, about 2 minutes. Turn onto baking sheet, then cool in refrigerator.
  • Whisk eggs in medium bowl. Stir in goat cheese, breaking up lumps. Season with remaining salt and pepper. When it is fairly smooth, whisk in remaining ingredients.
  • Pour egg mixture into prepared dish, then sprinkle with green onions. Bake 30 minutes or until golden brown. Cool 20 minutes. Garnish, if desired, with additional green onions. Each serving contains: Vitamin A 20%, Vitamin C 8%, Calcium 10%, Iron 6%.

2 unbaked pie shells
6 slices bacon
1 1/4 cups cheddar cheese, shredded
1 bunch scallion (6-10 stalks)
4 eggs
1 pint heavy cream
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon black pepper

Steps:

  • Preheat oven to 350.
  • In a skillet, saute the bacon until cooked through. Remove from heat and dab with a paper towel to remove excess grease. Chop into bacon bits and add to a medium bowl.
  • Slice scallions width-wise and add to bacon. Add your shredded cheddar cheese, onion powder, garlic powder, and a pinch of salt and pepper. Toss to combine and evenly distribute between the two pie shells.

It should be light enough to serve as a first course, or in larger portions for a simple main course. It should be something to sing about.

Short-crust dough (see recipe), rolled and chilled in a 9 1/2-inch tart pan
3 large eggs
1 and 1/4 cups half-and-half
1/2 teaspoon kosher salt
Black pepper, to taste
1/2 teaspoon grated lemon zest
1 teaspoon chopped fresh thyme
2 tablespoons chopped scallions
2 tablespoons chopped parsley
4 ounces fresh goat cheese, sliced into 1/4-inch rounds

Steps:

  • Bake prepared dough at 375 degrees for 15 to 20 minutes, until lightly browned. Patch any small holes with leftover dough. Cool.
  • Make the custard: in mixing bowl, beat eggs. Whisk in half-and-half, salt, pepper, lemon zest, thyme, scallions and parsley. Set aside.
